I found this gem of a recipe on the Land O Lakes website and oh wow, it’s amazing! These little bars just melt in your mouth and I love how easy they are to make. They’re being added to the family cookbook for sure!
Butterscotch Peanut Bars
- 1/2 cup butterscotch-flavored baking chips
- 1/2 cup peanut butter
- 1/4 cup butter
- 1/2 cup salted Spanish peanuts or salted peanuts
- 1 1/2 cups miniature marshmallows
- 1/4 cup chocolate chips {for melting and drizzling on top}
Melt butterscotch chips, peanut butter and butter over low heat in a small saucepan, stirring constantly, 3-5 minutes or until smooth. Remove from heat and cool 5 minutes.
Stir in peanuts. Stir in marshmallows. Pour into an 8-inch square pan covered in parchment paper. Cover; refrigerate 30 minutes or until set.
Melt chocolate chips in 1-quart saucepan over low heat, stirring occasionally, until melted. I used Chocoley’s Bada Bing Bada Boom Dark Melting Chocolate because I love how it tastes and how easy it melts. I put 1/4 cup in a small baggie and microwaved it for 30 seconds. Done! Drizzle over bars. Cover; refrigerate until chocolate is set .
Cut into bars. Store covered in refrigerator.
