Island Jerk Pork + Slow Cooker Giveaway

There are big things happening in this post – from an awesome recipe for Island Jerk Pork to a brand new cookbook aimed at helping end hunger in America to a giveaway for a Hamilton Beach slow cooker!

This summer, I’ve gotten really good at keeping secrets. I’ve been working on a few really exciting projects, including a whole new look for Healthy Delicious. I can’t wait to share it all with you! For now though, I can at least share one of the projects I’ve been working on for the past few months – 30 food blogger, including myself, wrote a book! An honest to goodness book with a ISBN number and everything (<– did I ever mention that my first job was working in a library? ISBN numbers excite me.)

It’s called Where Slow Food and Whole Food Meet and it’s full of cheap, easy, and nourishing slow cooker meals. I haven’t gotten my hands on a hard copy yet, but I have seen the electronic version and it’s BEAUTIFUL. And full of amazing looking recipes that I can’t wait to try. My slow cooker is going to get a workout this Fall, that’s for sure!

I contributed a recipe for strawberry-habanero pulled chicken that has the perfect balance of smokey and sweet flavors. It looks a little something like this:

I give away recipes for free right here every week, but if you wan’t this one you’ll have to buy the book. You see, we didn’t just write this book for the fun of it. We did it because we wanted to make a difference. Did you know that, every year, 46 million people in the United States deal with hunger issues? We chose to launch the book in September for Hunger Action Month because we’re giving 100% of the proceeds to the Second Harvest Food Bank of Central Florida. In addition, Feeding America food banks from across the country are giving the ebook version as a free gift to their donors!
There are also several sponsors, including San Miguel Produce, Grimmway Farms, and Old Oak Farms by RPE Produce, who are contributing to their local food banks as well as donating $5 for every book sold. We’re hoping that together, we can make a big difference!

Slow Cooker Island Jerk Pork + Slow Cooker Giveaway

Serves: 8-10

Ingredients

  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2 teaspoons grated fresh ginger
  • 1½ teaspoons ground cloves
  • 1½ teaspoons ground allspice
  • 1½ teaspoons thyme
  • 1½ teaspoons dry mustard
  • 1½ teaspoons coarse salt
  • 1 teaspoon sweet or hot paprika
  • ½ teaspoon cumin
  • ½ teaspoon sugar
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • 3 pound boneless pork butt
  • 1 cup apple cider or apple juice
  • 1 bay leaf

Preparation

  1. In a small bowl combine onion powder, garlic powder, ginger, cloves, allspice, thyme, dry mustard, salt, paprika, cumin, sugar, black pepper and cayenne. Use fingers to rub spices together to ensure that ginger is dispersed throughout. Rub spice mixture all over pork.
  2. Put the pork in the slow cooker fat side up. Pour apple cider over pork and add bay leaf. Cook on low for 8 hours.
  3. Remove pork from slow cooker. Use two forks to shred meat. Skim fat off liquid in slow cooker. Drizzle a few tablespoons of the remaining liquid over the meat and mix to combine.
