LOADED BAKED POTATO ROUNDS

Totally an appetizer… I made for dinner. (Do you ever do that?)
When I was younger I remember my half-sister always taking me to get these potato skins from a sports grill- I have no idea why these darn potato skins were so memorable….. but they were! Must be the combo of grease + bacon + melty cheese + starchy potato goodness.
These yummy rounds sent me back to childhood. Oh, so good! And of course, quick & easy, too!
Loaded Baked Potato Rounds

6 medium sized red potatoes, washed and sliced into thin rounds
olive oil
salt & pepper
6 strips of bacon, cooked until crisp, crumbled
shredded cheese (I used Colby-Jack)
dollop of sour cream
Preheat oven to 375. Line a baking pan with aluminum foil and coat foil with non-stick spray.
Put the sliced potatoes in a pot filled with water and bring to a boil. Cook for 3-5 minutes until tender. Drain potatoes and line them on the baking pan. Brush with olive oil, salt, and pepper (and other spices as desired). Add bacon crumbles and cheese. Bake for 10 minutes until melty. Add a dollop of sour cream (if desired). Enjoy!!
