Chocolate cake is even better when paired with peanut butter and caramel. With just a few simple ingredients, you can have a Chocolate Caramel Peanut Butter Poke Cake that tastes incredible, and requires very little work!

WHAT IS CHOCOLATE CARAMEL PEANUT BUTTER POKE CAKE?

Poke cakes are cakes that are baked and then (literally) poked, usually by the end of a wooden spoon. After that, they are covered with a wet liquid (in this case a peanut butter caramel sauce) and then topped with whipped cream and placed in the fridge to chill. This recipe uses a box cake that is topped with a homemade peanut butter caramel sauce, whipped topping, and chopped Reese’s peanut butter cups to create a delicious flavor-packed cake.

Ingredients in Chocolate Caramel Peanut Butter Poke Cake

Chocolate cake mix: Find your favorite boxed chocolate cake from the store, just make sure it’s 15.25 ounces as some boxes will be closer to 18 ounces in size and that might throw off the ingredient proportions. If the cake mix is a different size, just make sure to use the egg, oil and water amounts that are listed on the back of the box.

Water: You’ll need 1 1/4 cups of water to help bring the boxed cake mix to life.

Oil: Use vegetable oil, canola oil or even coconut oil if you prefer. I’ve even used melted butter before and it works great!

Eggs: We need 3 large eggs to work as the binder for this recipe and to hold the cake together.

Whipped topping: Cool Whip works the best for the whipped topping on the cake. Make sure it is completely thawed before spreading on the top of the cake.

Reese’s Peanut Butter Cups: You’ll need about 4-6 regular sized peanut butter cups, chopped. You can always add more if you want more!

Caramel Peanut Butter Sauce:

Brown sugar: Make sure the brown sugar is fresh, not dried out. I prefer to use light brown sugar in this recipe.

Milk: I use 1% because that’s what I keep in the refrigerator, but you can use 2%, skim, whole….any variety of milk should work fine.

Corn syrup: I use light corn syrup in this recipe. This ingredient is a must to create the caramel sauce.

Butter: Salted butter works the best in the sauce.

Peanut butter: Creamy peanut butter works best. I usually use a regular peanut butter as opposed to a more natural peanut butter because it is easier to work with in recipes. If you do use a natural peanut butter, make sure the oil is well mixed in before adding to the sauce.

How to make Chocolate Caramel Peanut Butter Poke Cake

Preheat oven to 350°.

In a large bowl, mix together the cake mix, eggs, oil and water.

Bake cake in a 9X13 according to package directions. While cake is baking, make the sauce.

In a saucepan, combine the brown sugar, milk, corn syrup and butter. Cook and stir over medium heat until sugar is dissolved and mixture is smooth. Remove from heat and stir in the peanut butter until melted and smooth. Set aside and allow the sauce to cool.

Cool the cake for approximately 30 minutes after removing from oven. Using the end of a wooden spoon, poke holes in cake about 1-2” apart. Pour peanut butter sauce evenly over the cake and cool completely.

Spread Cool Whip over the top. Refrigerate overnight. Sprinkle with chopped Reeses PB Cups right before serving.

CAN YOU REPLACE THE COOL WHIP?

Cool Whip is the best “whipped topping” to use in this recipe. However, if you can’t find Cool Whip where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!

To make stabilized whipped cream, you will need the following ingredients:

  • 4 ounces of cream cheese (softened to room temperature)
  • 1/3 cup powdered sugar
  • 1 tsp vanilla
  • 1 cup heavy whipping cream
  1. Beat the whipping cream just until soft peaks form.
  2. Add in the cream cheese, powdered sugar and vanilla. Whip on high until mixture is smooth.
  3. Store in the refrigerator until ready to use, up to 3 days.

A little tip for making whipped cream faster: use a metal bowl and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!

Apple Pie is just one of those desserts that never gets old. Especially in the fall. And this Caramel Apple Pie is one of my all-time favorite versions of this classic dessert.

The bottom crust of the pie is a traditional pie crust but instead of a regular pie crust on top, there is a crunchy topping made with butter, brown sugar, oats and pecans. I absolutely love the flavor and the crunch just adds so much texture and dimension to the apple pie. Drizzle some caramel on top and this pie is absolute perfection. And it’s so easy to make too!

What apples are best in apple pie?

Granny Smith apples are the best apples for apple pies. They are tart and crisp and tend to have less moisture than many other apples which is important because you don’t want a soggy pie!

Ingredients in Crunchy Caramel Apple Pie

Filling:

1/2 cup sugar

3 Tbsp. flour

1 tsp. ground cinnamon

6-8 cups apples, thinly sliced and peeled (Granny Smiths are the best for pies!)

1 unbaked pie crust

Butter, oat and brown sugar topping for apple pie

Topping:

1 cup brown sugar

1/2 cup flour

1/2 cup quick oats

1/2 cup butter, cold

1/2 cup chopped pecans

1/4 cup caramel ice cream topping

How to make a Crunchy Caramel Apple Pie

Preheat the oven to 375°. Place the unbaked pie crust in a pie plate and lightly press the crust on the bottom and up the sides of the dish.

To make the filling: In a large mixing bowl, mix the sugar, flour and cinnamon. Stir in the apple slices and toss until they are evenly coated. Place the apple mixture into prepared pastry lined pie plate.

For the topping: Combine the brown sugar, flour and rolled oats in a mixing bowl. Use a knife and fork or a pastry blender to cut in the butter until the mixture resembles coarse crumbs. Sprinkle over the apple filling. Bake for about 60 minutes or until the top is a golden brown. Remove from the oven, sprinkle the pecans on top and drizzle with caramel topping. Serve warm with vanilla ice cream for best results!

My pie is soggy? How to avoid a soggy apple pie!

Apple Pie isn’t too difficult to make, but one of the most common issues with apple pie is sogginess. Just knowing a few little tricks will help you to avoid this problem.

-Make sure to use a low moisture variety of apple. Granny Smith apples are the best apples to use in pies.

-You can sprinkle a little bit of flour over the crust before you add the filling and that will help to keep the crust from getting soggy because the flour will help to absorb any extra moisture from the apples.

-Use a cold crust. Once you place the crust in the pie plate, keep it in the refrigerator until just before adding the filling and then place immediately in the oven.

Caramel Banana Pie AKA Easy Banoffee Pie by Gordon Ramsay

This Caramel Banana Pie is my southern version of a Banoffee Pie. There is just one ingredient different but the decadence and texture are very much the same. 

What’s the difference between Caramel Banana Pie and Banoffee Pie?

Just a little. Banoffee pie came from England. It’s a traditional British dessert that is prepared with bananas, cream and toffee but in our Southern version we are using caramel.

The Caramel Banana Pie (Southern Plate Banoffee Pie) is SUPER easy to make compared to traditional versions but every bit as decadent and rich. What’s even better is that  this recipe takes less than five minutes to put together, rather than the hour+ of prep time most recipes call for

Caramel Banana Pie

Ingredients you’ll need for Caramel Banana Pie our Southern Plate version of Banoffee Pie are:

  • Bananas,
  • A graham crust, Whipped cream
  • And some good old *Dulce De Leche

What is Dulce De Leche?

Dulce De Leche is caramel made from sweetened condensed milk. It gives this recipe a caramelly toffee like taste.

Can I make Dulce De Leche for this Caramel Banana Pie?

Yes. Most people start with sweetened condensed milk and make it into caramel themselves by putting it in a water bath i.e. preheat oven to 425

Place sweetened condensed milk in a oven safe deep dish pie plate or the equivalent.

Cover with tin foil

Place in a larger pan where you add water to create a water bath around the deep dish pie pan of sweetened condensed milk.

Bake in oven for  1-2 hours.  The longer you bake the darker the caramel like dulce de leche will be.

Me? My life is complicated enough and I know there is more than one way to crack an egg;) I go to the grocery store and look in the Mexican foods section and buy that stuff already in a can. Nestle has already done the work for me and who am I not to accept their kindness 😃

Besides, I could write sonnets about the quality and richness of this caramel. 

Where can I find the Dulce de Leche?

To find this lovely caramel concoction for the caramel banana pie you may have to look at a grocery store or two to find it but once you know who sells it around you, you’ll always know where to go. Most stores have it with their Mexican foods, right next to the sweetened condensed milk that cost as much as $1 less than the same stuff on the baking aisle. Some stores (like my local Kroger) actually have it right next to the sweetened condensed milk on the baking aisle. Either way, be on the lookout for this because it is well worth the trouble.

  •  Cover and refrigerate for at least an hour, or until it is somewhat firm.

Note: Most Banoffee pie recipes call for topping your pie with sliced bananas and whipped cream at this point but unless you have enough people to eat that pie in one sitting, I suggest cutting the bananas and topping each individual slice just before serving to keep the pie fresh longer.

Caramel Banana Pie or Southern Plate’s version of Banoffee Pie. Call it what you want, I call it delicious!

Ingredients

  • 2-12 ounce cans Dulce De Leche*
  • 1 regular size graham cracker crust
  • fresh bananas 2-4
  • Whipped Topping

Instructions

  • Open cans and spread caramel into bottom of graham crust. Cover and refrigerate at least an hour.

  • Cut into slices and top each slice with sliced bananas and whipped cream just before serving. Store leftovers in refrigerator.

*This is commonly found in the Mexican section at grocery stores but sometimes on the baking aisle next to the sweetened condensed milk. You may have to look at a store or two until you find out who carries it in your area.
