What is skinny alfredo pasta?

To put it simply, it’s an alfredo sauce recipe that is made with low fat alfredo sauce. Thanks to evaporated milk instead of heavy cream, we can reduce the fat content in this recipe by over half! In a 12 oz can of evaporated milk there are 24 g of fat and 480 calories. In the same 12 oz of cream you will find 83 g of fat and 835 calories. It’s an eye-popping difference, right?

Here’s what you’ll need-

-Butter: Using the butter we can start a roux with is the base of any great alfredo sauce.

-Flour: The flour will work as a thickener in the sauce to get it to that consistency we want without making it runny.

-Parmesan cheese: We’re going to want the green canister of grated parmesan cheese and some fresh shredded parmesan cheese to make this alfredo sauce extra delicious.

-Salt: A little bit of salt will help to bring out the flavors in this sauce and make it taste great.

How to make Low Fat Alfredo Sauce

-Garlic: alfredo sauce and garlic are a match made in heaven. Garlic adds a great flavor that pairs well with the cheese

-Evaporated Milk: We only need a can of evaporated milk, but it’s enough to make this sauce creamy and complete.

-Pasta: You’re welcome to use what you’d like! Lately I’ve discovered Tinkyada Brown Rice Pasta. It’s amazing- tastes just like regular pasta! You’ll want to cook the pasta according to package directions.

Melt your butter in a saucepan and then add in the flour, grated parmesan cheese, salt, and garlic. Cook on medium to medium high heat until it’s bubbly.

Whisk in the evaporated milk until the liquid begins to thicken and then add in the shredded parmesan cheese and continue whisking until the cheese has melted.

Serve over cooked pasta.

This sauce is amazing! I love making a double batch and storing them in an airtight container in the fridge for dinners later on. It’s a great recipe to make ahead!

Yes, Homemade Alfredo Sauce freezes beautifully. Store it in an airtight container in the freezer for 2-3 months. Defrost it in the fridge then heat on the stove or in the microwave, adding 1-2 TBSP if water or milk to return it to optimal creaminess.

Ingredients

  • 2 tbsp butter
  • 1 tsp flour
  • 2 tbsp grated parmesan
  • 1/4 tsp salt
  • 2/4 tsp garlic
  • 1 12oz can evaporated milk
  • 5 oz shredded Parmesan about 1.5 cups
  • 1/2 cup water

Instructions

  • In a saucepan, heat the butter over medium heat until melted. Sprinkle in 1/4 cup of the water, as well as the flour, grated Parmesan, salt, and garlic.

  • Cook about 1 minute until thickened & bubbly.

  • Whisk in the can of evaporated milk and stir continuously until it starts to thicken.

  • Add the shredded Parmesan and whisk until melted and sauce is smooth.

  • If sauce is too thick, add remaining 1/4 cup water. Serve over pasta and enjoy, topped with fresh parsley & additional Parmesan cheese.

How to use skinny alfredo sauce

You can use this sauce over pasta, I personally enjoy it over penne or farfalle and it makes enough to cover at least 5 servings worth. Adding grilled chicken is also a great way to stretch it and add protein. Alternatively, this sauce works great as a white sauce on pizza, so it can be very versatile.

What if I don’t have shredded parmesan cheese?

I’ve personally used Italian blend cheese when I was in a pinch and it was pretty good. You can do the same.

I have attempted to make fettuccine alfredo sauce from scratch at home a few times, and have never liked the end result. I love fettuccine alfredo in restaurants, but the kind you find in grocery stores taste completely different. There isn’t one that I really like. I FINALLY found a from scratch recipe I love, especially because it is “lightened up” by using less butter than traditional fettuccine alfredo sauce recipes. I found this recipe in Cooking Light magazine, and read some of the reviews and followed their advice. I added some more garlic and and it came out just perfect! You can control how thick you want the sauce to be by adding more or less flour. Mine came out really creamy! I don’t think I would eat this every week (although I would love to if it weren’t a calorie dense sauce!!), but it is definitely a treat that you don’t have to feel too guilty about Add some grilled chicken or salmon for your protein source.

I have been working like crazy the past week, and it isn’t going to get better until next month. Some of my shifts are 13 hours long, which takes some getting used to. It is good  to gain experience so quickly in the beginning of my career, but it has also been very exhausting at times….and of course, I miss my kitchen when I have to be away so much. Things should get back into a better balance next month. Until then, sorry for being away for a while!

Ingredients
  • 1 tbsp butter $
  • 3 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1⅓ cups 1% low-fat milk
  • 1¼ cups grated fresh Parmigiano-Reggiano cheese, divided
  • 2 tbsp light cream cheese
  • ½ tsp salt
  • 1 package of uncooked fettuccine (8 ounces)
  • 2 tsp chopped fresh flat-leaf parsley
  • Cracked black pepper
  • Grilled chicken or salmon (optional)
Instructions
  1. Bring a large pot of salted water to a boil, then add the fettucine. Cook al dente, then drain and rinse with cool water for 3 seconds. Toss with olive oil, cover and set aside.
  2. Melt butter in a medium saucepan over medium heat.
  3. Add garlic; cook 1 minute, stirring frequently.
  4. Stir in flour.
  5. Gradually add milk, stirring with a whisk. Cook 6 minutes or until mixture thickens, stirring constantly.
  6. Add 1 cup Parmigiano-Reggiano, cream cheese, and salt, stirring with a whisk until cheeses melt.
  7. Toss sauce with hot pasta.
  8. Sprinkle with remaining ¼ cup Parmigiano-Reggiano cheese and chopped parsley.
  9. Garnish with black pepper, if desired, and top with hot grilled chicken or salmon.

Guiltless Pumpkin Alfredo Sauce

I know what you’re thinking, mostly because when I first heard of this flavor combination a few years ago… I was a little skeptical as well. But, I promise this sauce is absolutely amazing and perfect for fall!

The taste of pumpkin is very mild here, but adds just enough of a hint to the alfredo to bring you into the new season with it’s warmth and color.

You could use this sauce in substitution for any other place where you would use a typical alfredo.

If you love pumpkin, feel free to add in more puree and adjust the sauce accordingly to your taste. 

I kept pretty safe and used this sauce over some mushroom ravioli, but I plan to use up the little bit of leftovers to drizzle over a pumpkin alfredo pizza tonight.

Mhm… that’s right. Pumpkin alfredo pizza.

The Skinny:

Ingredients:
1/2 Batch Guiltless Cauliflower Alfredo Sauce
 1/2 Tbsp. Light Butter
1/4 C. Onion, Minced (I used a red onion.)
2 Tbsp. Water or Reduced Sodium Chicken Broth
1 Tbsp. Fresh Sage or 1 Tsp. Dried Sage Leaves
1/2 Tbsp. Thyme or 1/2 Tsp. Dried Thyme Leaves
1/2 C. 100% Pumpkin Puree (Not pie filling!)

Directions:
Melt the butter in a large pan over medium heat and add in the onion.

Saute until the onions are tender.  This shouldn’t take long, maybe a minute or two.

Add in the herbs and water (or broth.) Allow to cook down slightly.

Be sure you’re using fresh herbs or leaves. You don’t want dried ‘ground’ herbs as it will muddy the color of the sauce.

Stir in the pumpkin puree until well blended. 

Add in the prepared alfredo sauce.

Cook until heated through.


Serve over cooked pasta or however you fancy using this fall inspired alfredo!
