Marshmallow swirl brownies are just another version of this simple and traditional chocolate dessert. I love how simple and easy these are to make and I’m sure you will too!

Marshmallow brownies are a brownie recipe that includes fluffy melted and gooey marshmallows. Sandwiched between a fudgy thick brownie and a rich layer of homemade chocolate frosting, these marshmallows are right at home. Every bite is as delicious as it is eye-catching.

For the brownies you will need:

-Sugar: We want 1 cup of granulated white sugar to help get a sweet brownie with crunchy sweet edges around the pan.

-Butter: 1/2 cup of unsalted butter (softened) will add a depth of richness and the fat we want to make these turn out great. Oil could be used, but butter adds a better flavor.

-Eggs: Two eggs will work as the binder and a leavening agent for these brownies keeping them nice and fudgy/thick.

-Vanilla: We only need 1 teaspoon of vanilla extract to help get a good flavor base for these brownies.

-Cocoa Powder: With 1/3 cup of baking cocoa powder we can get a rich chocolate flavor that tastes incredible.

-Salt: This is the flavor enhancer and it works to make everything else taste great! We need 1/4 teaspoon of salt to do this.

-Milk: Thinning down the batter just a tad is 3 tablespoons of milk. You can use dairy or plant based milk here.

-Flour: Just 1/2 cup of all-purpose flour is needed to create the gluten-base for this brownie recipe.

-Chocolate Chips: Optional but so worth it- 1/2 cup of mini chocolate chips to scatter around in the batter. Yum!

-Marshmallows: We need a 10 ounce bag of mini marshmallows to make this recipe.

-Butter: 3 tablespoons of softened butter will allow the frosting to get a depth of flavor and richness as well as a nice shine.

-Chocolate Chips: We only need 1/4 cup of chocolate chips to get a good chocolate flavor.

-Milk: With 2 tablespoons of milk we can thin down the frosting so it’s not too thick.

-Powdered Sugar: Adding 1 cup of powdered sugar is perfect for making the frosting thicker, sweeter, and creamier.

Preheat your oven to 350 degrees F and then line an 8×8 baking dish with parchment paper and set it aside.

In a bowl, whisk together the sugar and butter.

Add in the eggs, vanilla, cocoa powder, and milk. Whisk until the mixture is smooth.

Stir in the flour, salt, and mini chocolate chips. Stir until the flour has been well incorporated.

Bake in the oven for 30 minutes until the brownies have set. Then remove from the oven.

Ingredients

  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup cocoa powder
  • 1/4 tsp salt
  • 3 TBSP milk
  • 1/2 cup all-purpose flour
  • 1/2 cup mini chocolate chips
  • 10 oz bag mini marshmallows

Chocolate Frosting

  • 3 Tbsp butter softened
  • 1/4 cup chocolate chips
  • 2 Tbsp milk
  • 1 cup powdered sugar

Instructions

  • Preheat oven to 350 degrees. Line an 8×8 pan with parchment paper and set aside.

  • Whisk together sugar and butter.

  • Add eggs, vanilla, cocoa powder, and milk and whisk until smooth.

  • Stir in flour, salt, and mini chocolate chips, stirring until flour is well incorporated.

  • Bake for 30 minutes, until brownies are set. Remove from oven.

  • Once brownies are cooked, remove from oven and spread with marshmallows. Do your best to get them even, but it doesn’t have to be perfect- you’re going to spread it around a bit afterwards. Return to the oven for about 3 minutes- until marshmallows begin to puff. (You don’t want the marshmallows to brown so keep a close eye on them.)

  • Take brownies out of the oven. Cool for about 10-15 minutes. Make the frosting.

Frosting

  • Combine butter, chocolate chips, and milk in a bowl. Microwave for 45 seconds. Add powdered sugar and whisk until smooth.

  • Pour frosting over warm brownies. Swirl gently with a spatula. You just want to spread the marshmallows around a bit and incorporate a bit of the chocolate frosting into the melted marshmallows. Let cool to set.

  • Chill in the fridge or freezer for 20-30 minutes prior to cutting for a cleaner cut. I also spray my knife with non-stick spray! ENJOY!

How to Store Marshmallow Brownies

How you choose to store these brownies depends on how fast you plan to eat them. While they can do just fine in the fridge for a few days, they also hold up well if left covered on the counter. It’s up to you as to which way you’d prefer to enjoy them!

Can you freeze marshmallow brownies?

These brownies can be frozen! Before freezing, I recommend slicing them into serving sized squares and flash freezing for 2 hours on a baking sheet until solid. Then individually wrap them up in plastic wrap before storing in an airtight container. Then, when you want to eat a sweet chocolaty treat, all you have to do is remove a piece of brownie from the freezer and let it thaw for an hour or so on the counter until soft.

This IS the BIG question haha. With the gooey and soft marshmallows on top, cutting straight lines can be a rather daunting task. Thankfully I have an awesome trick up my sleeve that I’m willing to share. After your brownies have completely cooled and set- stick them in the freezer for 20 minutes. Once they’re partially frozen, remove the brownies from the pan using the parchment paper as a sling. Use a large, sharp knife that’s been sprayed with non-stick cooking spray to make cuts in the brownie without nearly as much gooey goodness sticking to the knife. You can also rinse the knife under hot running water between slices if that helps!

Even with minimal effort, they’re still very impressive!

-Marshmallows: You will need 20 large marshmallows, not the mini ones, to make these pops.

-White Chocolate: We only need about 1 cup of white melting chocolate, this is roughly half an 8 ounce bag of white chocolate chips.

-Sprinkles: With gold colored sprinkles we can add that festive New Year’s’ touch to every pop. The amount needed will vary but you can add as much or as little as you want.

-Sticks: To make them into pops we need cake pop sticks or you can use colorful black/gold/white looking paper straws for an added touch of fun.

Press your marshmallows onto the sticks. Don’t shove them down too far, you don’t want the stick to pop out the other side.

In a bowl, microwave the chocolate in 30-second intervals, stirring well between each until smooth.

Hold the marshmallow sticks and dip the marshmallow end into the melted white chocolate to cover them. Tap the stick a few times with your finger to encourage excess white chocolate to drip off.

Coat the covered marshmallows in sprinkles of choice.

Let them cool for about 30 minutes to harden the chocolate coating. Alternatively, you can stand them up in a mug (marshmallows on top, sticks in the cup) and move them to the fridge to speed up the cooling process. Enjoy!

How Long Are White Chocolate Marshmallows Good For?

Marshmallows and white chocolate are both two ingredients with a very long shelf life. You could probably get these things to last a very long time if properly stored but for best results, I recommend eating them within a week. Stale marshmallows aren’t very enjoyable and New Years’ is a one-day holiday, so they quickly become outdated. You can, however, swap out the sprinkles for fun new holiday-themed ones (like Valentine’s or Easter) to create more marshmallow pops throughout the year. You know you’ll want to. 😉

Can I Double This Recipe?

Absolutely! You can double, triple, or even cut the recipe in half. You could even add more than one marshmallow to a stick and create little kabobs. This is a dessert that’s perfect for customizing to what YOU want and making them totally your own.

While you could, I wouldn’t recommend it. While keeping chocolate in the fridge might be fine, freezing it is a little different. Because of the cold, the chocolate will weep or sweat as it thaws, making the pops messier to eat and causing the colors in the sprinkles to run. I recommend not making them more than a few days in advance and keeping them at room temperature or in the fridge as needed.

I love how fun, bright, and colorful these cookies are. And with well under 100 calories per cookie? Well, I’ll take it! The bitterness of the chocolate, sweetness of the marshmallows and the touch of salt make for the perfect bite of rainbow goodness.

I found my ‘cereal’ marshmallows as a limited edition at the store, but you can also find them on Amazon. Though if worse comes to worse, pick them straight out of the box! That might take a while though. So, if you can find them to buy easily, that would be best.
