Skinny Cookies & Cream Popsicles

These popsicles are so smooth, creamy, and decadent that you’ll never guess they’re only about 100 calories each!

Did I mention they have even have cookies in them? Omy. 

With a three year old in the house, I’ve always got cookies on hand. While I try to stuff her full of the good stuff, she’s a child and they always want what they see other kids with. Namely junk. So, recently I’ve been buying these new WhoNu? cookies. They come in a varaiety of flavors, but our favorites are the chocolate chip and chocolate & cream sandwiches. She gets what she wants, and I get what I want. Win, win.

I’ve been wanting to post a recipe using these healthier alternative cookies. Not only do they boast fewer calories, they also have as much fiber as a bowl of oatmeal, as much calcium as a glass of milk, iron, and vitamins A, B, C, D, and E! That’s right. 17 essential vitamins and minerals. 

My daughter happened to catch me hobbling around the kitchen yesterday to mix these up and has been asking for her popsicles ever since. I finally had to break down and let her have one for a mid-morning snack today after I was done taking these photos.

The best part? I don’t feel guilty about letting her eating them at any time of day!

The Skinny:
I had enough mix left over for a 5th popsicle using my molds, of course this will vary for everyone. Nutritional information is adjusted for 5 popsicles.
Servings: 4-5 • Size: 1 Popsicle • Calories: 111.6 • Fat: 2 g • Carb: 15.5 g • Fiber: 1.2 g • Protein: 6.6 g • Sugar: 9.4 g • Sodium: 206.3 mg

Ingredients:
4 Oz. Fat Free Cream Cheese, Softened
4 Oz. Fat Free Plain Greek Yogurt
1/4 C. Fat Free Milk (I used Mootopia.)
2 Tbsp. Powdered Sugar
6 Chocolate Cookie Sandwiches, Crushed (I used WhoNu?)

 Directions:

Combine the cream cheese, yogurt, milk and powdered sugar together in a medium bowl until smooth and creamy.

Stir in the crushed cookies.

Pour the mixture into the popsicle mold of your choice.

Place in the freezer until set and frozen. 

Mango Chile Lime Popsicles (Paletas)

A couple of months ago I was out at Eeyore’s birthday here in Austin.

Yes… we celebrate Eeyore’s birthday here. It’s quite a thing, actually.

Anyway! It was pretty warm out that day and there was a vendor selling some rather interesting sounding homemade organic local popsicles. One of the flavors on the list was a mango chile flavor.

Of course, that’s the one that I ordered! Unfortunately, they were all sold out. Ergh!

Well, it sounded easy enough. I’ve made my share of popsicles in the past so I thought I’d try my hand at this mango chile one too!

This is definitely a play on sweet and heat or sweet and sour. The flavors from these popsicles easily hit just about every point of differing tastebuds within your both.

The mere thought of them makes my mouth water a bit!

The first time that I made these, they were just a little flat. So, the next time I decided to add some lime juice to brighten up the flavors. Perfect!

While the mixture may sound a bit different, I promise these are pretty outstanding.

When making these, I wanted the flavors to change a bit through the popsicle, so I kept the bottom (or top depending on how you’re looking at them) a little more spicy and with larger chunks of fresh mango. The opposing end was left rather sweet and sour with the combination of lime mango and lime.

I told you, these bad boys will tickle all your taste buds!

My popsicle mold makes about 6 of these, but every mold is sized differently. So please, just keep that in mind!

Mango Chile Lime Popsicles

The Skinny:
Servings: 6 • Size: 1 Popsicle • Calories: 70.6 • Fat: 0.4 g • Carb: 18.3 g • Fiber: 2.2 g • Protein: 0.6 g • Sugar: 15.6 g • Sodium: 4.5 mg

Ingredients:
3 Large Ripe Mangos, Peeled, Pitted & Cubed
3/4 Tsp. Chili Powder, Divided
1/8 Tsp. Cayenne, Divided
2 Tbsp. Water
2 Tbsp. Fresh Lime Juice

Directions:

Combine 1/3 of the cubed mango in a small bowl with 1/2 tsp. of the chile powder and about half of the cayenne.

Puree the other 2/3 of the mango, the remains of the chili powder and cayenne, water, and lime juice together in a food processor or blender until perfectly smooth.

Place about 2 tbsp. of the cubed mango mixture into the bottom of the popsicle mold and then top with the puree.

You may want to tap the mold carefully a few times on the countertop to help get rid of any air bubbles.

Place the popsicle sticks into the fruit.

Mine stood on their own and didn’t need anything to help hold them up.

Freeze for 2-4 hours or until frozen solid.

Remove from the mold carefully and enjoy!

I added a bit of low sodium tajin seasoning to mine as I ate it.

Coconut Water & Mixed Berry Popsicles

It’s starting to get really hot here, and I’ve been busy starting to come up with healthy and refreshing ways to stay cool in the summer heat as it rears it’s ugly head. Never mind that I‘m dying here already and we have another 10+ degrees to go until we’re really in the prime of Texas summer. Ugh.

So uhm… a whole popsicle for 30ish calories? Yes, please!

These popsicles are not only ridiculously healthy, but fresh and completely guilt free. Plus, it’s an entirely fun way to eat your fruits.

By the time these were set and ready, I had a few hot and eager hands that were just waiting to get a hold of them. Now, of course there was some feed back… The ladies that tried these agreed that there needed to be some more sweetness added, but the man chomping down on one quickly piped up and said that the fruit made them sweet enough.

So, you’ll want to go by your own taste when adding the agave. If you find a need to add it at all, that is!

Another option, if you’re looking for something a little more sweet, would be to use one of the flavored coconut waters. But, to each his own.

Now, I’ve never had coconut water before, so I wasn’t too sure what to expect.  I was rather surprised and delighted to find that the coconut flavor was minimal and barely detectable at all really.

I’m not a fan of coconut flavoring generally.

I also used fresh berries in my popsicles (mostly because it’s what I had and well… they’re red, white, and blue!), but really you could use any fruit that you have on hand.

I think next time I’ll make a mommy-only version with a extra little kick. (Wink, wink.)

Coconut Water & Mixed Berry Popsicles

The Skinny:
Servings: 4 • Size: 1 Popsicle • Calories: 33.7 • Fat: 0.2 g • Carb: 8.4 g • Fiber: 1.3 g • Protein: 0.8 g • Sugar: 2.7 g • Sodium: 7.4 mg

Ingredients:
1 C. Pure Coconut Water
1 C. Fresh Berries
1/2 Tbsp. Agave

Directions:

Fill your popsicle mold with fresh berries.

Mine held about 1/4 c. in each section for a total of about 1 cup in all.

Pour the coconut water over the berries and drizzle each section with agave.

You could also mix or shake the agave and coconut water up together instead. And again, my mold held about 1/4 c. of the coconut water in each section.

Insert your popsicle sticks accordingly.

I used plain-jane wooden sticks that were perfectly held in place being pressed down into pierce a few of the berries.

Place into the freezer for about 2 hours or until frozen solid.

Once ready, remove carefully from the popsicle mold and enjoy!
