Toffee Chocolate Chip Cookies

We love a good old chocolate chip cookie in my house. In fact, they are my son’s favorite. Toffee Chocolate Chip Cookies are soft and chewy with the added bonus of toffee bits for a classic that feels even more indulgent than the original! Since they are chewy, these are great cookies to make ahead of time if you plan on taking a trip in a few days and want cookies that still taste fresh for a week or two.

My mother has been making these weekly for a while now and her grandsons make short work of devouring them. That little something different makes them extra special. Let me show you how easy they are to make!

You’ll need: brown sugar, butter (softened), corn syrup (this makes them chewy), egg, all purpose flour, baking soda, baking powder, salt, semi sweet chocolate chips, and Toffee Baking Bits (I used the Heath brand that I found near the chocolate chips).

Place butter, brown sugar, corn syrup, and egg in a large mixing bowl. Beat with an electric mixer until well combined and fluffy. Toffee Chocolate Chip Cookies

Now, add in flour, baking soda, baking powder, and salt. Mix that until well combined.

Add in toffee bits and chocolate chips. Stir until incorporated.

Lightly spray a baking sheet with cooking spray or line with parchment paper* and scoop dough out, leaving about 2 inches space between each cookie. *My Mama says parchment paper works best for these. You can use the same sheet multiple times.

Bake 10-11 minutes or until just lightly browned on the bottom. Toffee Chocolate Chip Cookies

Let cool on cookie sheet for a few minutes and then remove to cool completely. Toffee Chocolate Chip Cookies

Ingredients

  • 1 cup light brown sugar
  • 1 cup butter
  • 1/4 cup light corn syrup
  • 1 egg
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 12 ounce package semi sweet chocolate chips
  • 6 ounce toffee baking bits

Instructions

  • Pre heat oven to 350 degrees. Lightly spray baking sheets with cooking spray or line with parchment paper. *My Mama says parchment paper works best for these. You can use the same sheet multiple times.

  • Place brown sugar, butter, corn syrup and egg in a large bowl. Beat iwth electric mixer until well combined. Add in flour, baking soda, baking powder, and salt. Mix again to combine. Stir in the chocolate chips and toffee bits until just incorporated.

  • Drop the dough by tablespoonfuls onto baking sheets, leaving about two inches in between each cookie. Bake 10-11 minutes, until edges are golden brown. Cool on the sheet for a few minutes before removing them to a cookie rack or platter to allow to cool completely.

Easy Cracker Toffee only takes about 15 minutes total and is so simple – no candy thermometer required! I make toffee every single year during the holidays. It’s one of my favorite treats! Every year I tend to make one classic Toffee recipe, then a variation- like my Cashew Toffee. This year I needed something a little faster and simpler- so I made this Cracker Toffee! I made a video showing just how it’s done; it’s so easy to make.

Cracker Toffee is a variation on a classic toffee recipe that’s made with a layer of saltine crackers at the base of the toffee recipe. The toffee is first boiled until it’s nearly at hard crack temp, then you pour it over crackers and finish cooking it in the oven. While in the oven, the toffee actually spreads over the surface of the crackers as well as underneath. You’ll top the toffee with chocolate chips and chopped nuts. The result is a delicious, softer toffee recipe with a great sweet/ salty flavor.

To make Cracker Toffee you’ll first start by heating up the butter and brown sugar in a saucepan on the stove. You want it to come to a full, rolling boil so turn the heat up to medium high.

While you’re waiting for the butter and sugar to begin boiling, preheat your oven to 400 degrees F. Line a jelly roll pan with parchment paper, then arrange en entire sleeve of saltine crackers over the surface of the pan. Measure out the chocolate chips and chopped nuts and set aside.

Once the butter mixture is boiling hard, set a timer for 3 minutes and stop stirring. When the time’s up, pour the mixture over the saltine crackers. Don’t worry if they’re not all covered, it will spread while baking. Place pan in the oven and bake for 7 minutes.

Take it out of the oven and sprinkle with the chocolate chips. Return to the oven for 2 minutes.

Spread the chocolate using a rubber scraper, then sprinkle the chopped nuts on top. Let cool to set. Cut into squares and enjoy!

Most cracker toffee recipes use saltine crackers and this is my most preferred cracker to use in cracker toffee. However, I’ve also used Ritz crackers and Club crackers with amazing results! You can use graham crackers too, but I prefer using a salted cracker as the sweet/ salty combination is wonderful! I use the regular Saltine crackers, not the low sodium or whole wheat.

When you make cracker toffee, you’ll use two pans: a medium sized saucepan and a 10×15 jelly roll pan. A jelly roll pan is essentially a cookie sheet with sides. Sides are important in this recipe because when the toffee is in the oven, it bubbles up, over and around the crackers and they tend to move a bit. If you don’t use a pan with sides, I worry some of the pieces would fall off the pan and make a big mess in your oven!

  • 1 sleeve regular saltine crackers
  • 1 cup butter
  • 1 cup brown sugar
  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts or pecans
  1. Preheat oven to 400 degrees F. Spread parchment paper over a cookie sheet. {It’s actually a jelly-roll pan– a cookie sheet with sides. Sides are important!}
  2. In a saucepan combine the sugar and the butter. Bring to a full, rolling boil over medium-high heat, stirring occasionally. A full, rolling boil is one that doesn’t let up once you stir it. Once it’s really boiling, set your timer for 3 minutes and stop stirring. After 3 minutes, immediately pour over saltines. Do your best to pour some on each cracker, but don’t worry about covering each one completely.
  3. Bake at 400 degrees F (205 degrees C) for 7 minutes. Once it’s been in the oven for 2-3 minutes, it will start to bubble. This is when the candy will cover the crackers on its own. They’ll also move around a bit, so you can see why it’s important to have a bit of excess parchment paper up around the sides.
  4. Remove from oven and sprinkle chocolate chips over the top. Put back in the oven for 2 minutes. Remove from oven and let sit for 1-2 minutes.
  5. Spread melted chocolate over toffee and top with chopped nuts. Cool completely and break into pieces. Enjoy!

How to store Cracker Toffee

Store your cracker toffee in an airtight container on the countertop. It stays fresh for about a week, although it tastes the best the first 3-4 days.

Can you freeze Cracker Toffee?

I do not recommend freezing cracker toffee. The mixture will soften and it won’t have the correct texture once you thaw it out.

Honeycomb Toffee – Do the Hokey Pokey

This very easy to make candy goes by many names; cinder toffee, sponge candy, and my personal favorite, “hokey pokey,” but no matter what you call it, this eye-catching confection is a proven crowd-pleaser. And, that’s before you dip in in chocolate, as my British friends highly recommend.


It’s no big secret that people love sweet, crispy things, but this also features the most interesting melt-in-your-mouth texture, which is created by thousands of bubbles, trapped in the cooling sugar syrup. As you can see in the video, I did two batches with different amounts of baking soda, and while the second batch did look better, the first batch was crunchier, and didn’t have any kind of aftertaste.

Other than suffering a horrible burn, there’s not a lot that can go wrong with this recipe, as long as you heat the syrup to 300 F. I checked mine with a probe thermometer, although a candy thermometer that attaches to the side of the pan would be a lot easier. Some folks say you can simply go by appearance, and when the syrup goes from clear to slightly golden, it’s done, but that requires a certain amount of experience.


Another method to gauge the temperature is by dropping a little bit of the molten syrup in water to see if it instantly turns into rock candy. That will work, but since thermometers aren’t expensive, and every kitchen should have one, that really is the way to go. Regardless, as long as you promise to be careful, I really do hope you give this gorgeous, homemade honeycomb toffee a try soon. Enjoy!
