Crunchy with onion and zucchini – Gordon Ramsay’s version

Crunchy with onion and zucchini

There crunchy with onion and zucchini is a thin pizza without yeast, made with water and flour that is cooked in the low pizza pan. A kind of squashed very crunchy and really very appetizing, which can be prepared in just 5 minutes.

The recipe became famous on Tik Tok thanks thanks to its creator Diletta Secco, a young blogger who also created a sweet version with Nutella!

But how is the famous crunchy prepared?

It is very simple! Basically you make a batter based on water and flour, to which the zucchini and onions are added. But you can indulge in other versions with any type of vegetable.

The important thing is that the dough must be quite liquid and without lumps, like that of pancakes. Salt, oil and vegetables are added.

Without leavening since there is no yeast, the crunchy is then sprinkled on the surface with corn flour which will make it dry and crunchy.

In fact, the peculiarity of this recipe is precisely corn flour which is also sprinkled on the bottom of the pan so that it forms a sort of dusty and crunchy layer.

It is cooked in the oven like a real pizza, for at least 30 minutes, until it becomes golden and crunchy on the surface.

There crunchy with onion and courgettes, it is ideal as finger food or as an appetizer of cured meats. To be consumed lukewarm!

Let's see this fantastic recipe right away.

Grilled Zucchini Fast and NEVER Love that Even Children Like! | #Family DAY 16 – Gordon Ramsay’s version

Grilled Zucchini Fast and NEVER Love that Even Children Like! | #Family DAY 16

Family 💚 hello! Today I'll show you the grilled zucchini that I do lately, faster and that do not become bitter. With a simple mandolin, you will be able to achieve a nice result for a super side dish that even children like.

If you slice the courgettes a little thick (about 4mm) they will remain less bitter and you will prepare them faster, my mandolin is this!

Children like these zucchini simple (Marco tells me he wants to taste the oil!), But if you want you can enrich them with a thousand herbs, parsley, chives, a little bit of fresh marjoram or of thyme, garlic (in wedges or minced), onion, spring onion or shallot or even a fillet of anchovies. Also try them with a splash of soy sauce or vinegar… The variations are truly endless!

In addition to a simple and delicious side dish, this recipe can also be the basis for other dishes if you have leftover or you make them in quantity, such as a gravy for the pasta, for the risotto, rolls or flans streamers of vegetables or salads.

If you want to use them as a sauce for pasta or rice, you can accompany them with tuna or speck, or simple robiola, ricotta or stracchino.

You can freeze the grilled zucchini by letting them cool well, put them away to layers in containers without seasoning and freezing them.

I recommend that you divide them into portions that you will presumably need, or divide the layers with film for food or greaseproof paper so that you only defrost the ones you need.

When it is time to consume them, you can season them as you like best.

Instant Gluten Free Focaccia Stuffed with Stracchino, Zucchini and Anchovies, Without Brewer's Yeast – Gordon Ramsay’s version

Instant Gluten Free Focaccia Stuffed with Stracchino, Zucchini and Anchovies, Without Brewer's Yeast

Today we make a focaccia without brewer's yeast, but instant, filled with stracchino, grilled zucchini And anchovies. The recipe is perfect for last minute focaccia such as appetizer / aperitif, but also for the snack of children who love salty, replacing the filling with what they like best!

The doses indicated are perfect for a 26 cm pan.

Just one Bowl it's a table spoon, elbow grease to make this wonderful soft and tasty focaccia, with the foresight to form a dough as smooth as possible. It is not necessary to knead on the pastry board or with the planetary mixer, however if you want to speed up the preparation further, you can use any mixer.

If you change mix compared to the one I used, the amount of water needed to get a consistency like my dough could change: add a little water at a time and adjust accordingly.

If you want a more full-bodied cheese, maybe racy, you can replace the stracchino with smoked cheese or fontina, of course the fillings are all valid depending on what you like: cold cuts, tuna, peppers and all kinds of vegetables.

If you like it more, you can choose to roll out all the dough and put the filling on top as I did with the focaccia with figs you find here!

Once the base has been rolled out, you can choose to put different fillings: for example, I added anchovies only on half of the focaccia and marked it by piercing the surface with a fork.

At this point you can also stuff the focaccia in wedges with everything you like!

You can replace the instant yeast with baking soda and cream of tartar like in this pizza.

Also with a suitable mix and a filling lactose-free, you can make this focaccia suitable for intolerant people (always read the labels).
