Apple Cinnamon Chia Pudding

Ch-ch-ch-chia!

Chia seeds are full of health benefits. These amazing little seeds slow digestion, help prevent spikes in blood sugar for diabetics, are full of fiber, omega-3, calcium, manganese, protein, and so much more. They also help you feel fuller faster.

I use chia seeds in many things. I put them in a Chia Fresca to drink almost every day, and even use them in one of my favorite salad dressings! I’ve been wanting to make a chia pudding for a long while now, but somehow the timing just never quite worked out right.

With spring in the air, I was sent a free jar of Mussleman’s Apple Butter to create a brunch friendly recipe. Because what goes better with spring than bunch? Not much! Well… maybe flowers!

So, with my beautiful inspiration blooming on my kitchen table and my full jar of apple butter in hand  – it didn’t take long for me to come up with the notion of an Apple Cinnamon Chia Pudding.

This pudding had all the great flavors of an apple pie, but in the form of something that is much more healthy. Plus, it will definitely take care of any craving you may have for sweets.

You could enjoy this tasty treat as a breakfast, brunch, lunch, snack, or even a dessert!

My grandmother nearly licked the bowl clean once I was finished taking pictures here. Hehe.

Apple Cinnamon Chia Pudding

The Skinny:
Servings: 1 • Size: About 1 Cup • Calories: 176 • Fat: 4.5 g • Carb: 28.3 g • Fiber: 6.7 g • Protein: 7.6 g • Sugar: 18.6 g • Sodium: 70.2 mg

Ingredients:
1/2 C. Fat Free Milk
2 Tbsp. Chia Seeds
2 Tbsp. Apple Butter
1/8 Tsp. Vanilla Extract
Pinch of Ground Cinnamon

Optional Add-Ins: Fresh Apple Slices, Apple Butter, or Fat Free Vanilla Greek Yogurt.

Directions:

Toss the ingredients together in a basic mason jar or other sealable container.

Shake or stir together until well combined.

Cover and refrigerate for at least 2 hours.

Once ready, remove from the fridge and serve chilled.

I added a swirl of fat free vanilla greek yogurt for a change of color and texture.

Enjoy!

Eat within 2 days of making for best results. The longer it sits the thicker the pudding will become.

Money Saving Tip: Go Bananas!

Today’s money saving tip is all about Bananas and how buying them can save you lots of money AND give you a yummy treat!

My #1 Reason why I you should buy bananas: PRICE! This bunch of bananas, 8 large ones, cost $1.40. Even though that is far more expensive than they used to be, bananas are one of the best values in the produce apartment. 

That is just 17 cents per banana!

As compared to:

Bag of Chips $1.00

Fast Food Burger $3.00

Doughnut .99

Cup of Yogurt $1.00

Fast Food Fries $2.00

By eating a banana as a snack just once a day, you could easily save close to $10 or more per week PER PERSON.

You’d fill up a whole lot faster on a banana, save a ton of money, and likely feel better too!

What I love about them:

*Convenient – Bananas are a fast grab food at our house. I always have some sitting on the counter and if someone needs a snack or a last minute breakfast on the way out the door, they grab one. When I’m going to be gone for the day and my schedule is unpredictable, I toss one in my purse. There is no telling how many times a banana has been my lunch while I was out and about!

*Filling – Unlike a lot of snacks that just leave you hungry, bananas are very filling and a better replacement for lunch than a bag of chips or some of the other options out there.

*Good For You – Bananas are low in fat, high in fiber, potassium, complex carbohydrates,  and a low glycemic fruit.

*Delicious – Bananas taste good!

*AND They never have to go to waste!

They Freeze Well: Take ripe bananas, peel them, moosh them up with a fork, and immediately place in plastic zipper seal bags. Squeeze the air out, flatten, seal, and freeze. I write on the outside of the bag how many bananas I put in there to make them easier to use. These can be thawed for just a few minutes and then added to any recipe calling for mashed bananas (like Banana bread , banana crumb cake, or the smoothies below).

Apricot Turkey Panini

I love experimenting with sandwiches. My favorite type of sandwich is the panini, because I like my sandwiches hot and crispy. For this apricot turkey panini, I used arugula mixed with olive oil and pepper and a bit of Brie cheese, which is typically a great dessert cheese. Dried apricots give this sandwich a sweet flavor, similar to turkey and cranberries at Thanksgiving dinner. The slightly bitter taste of arugula balances the sweet taste of the apricots in this sandwich. I don’t have a panini press, but my George Foreman grill works wonders. If you have a grill pan, that will probably also work if you press the sandwich down with a spatula while cooking each side for a short time. Serve the panini with a side of soup and salad for a complete lunch!

Ingredients
  • 2 slices sourdough bread
  • 3 thin slices of turkey
  • 1 thin slice Brie cheese
  • 2 dried apricots, halved
  • 1 handful of arugula, rinsed
  • 1 tsp olive oil
  • Pepper, to taste
Instructions
  1. Preheat a panini press or an indoor grill (George Foreman, grill skillet, etc.).
  2. In a small bowl, combine the arugula, olive oil and pepper.
  3. Add the turkey, cheese, arugula and apricots to one slice of bread, then top with the other slice.
  4. Cook on the panini press or grill pan for a few minutes, checking to make sure it does not burn, until cheese is melted and bread is crispy.
