Cookie Pizza Time Loaded With Candy Topings

Pizza for dessert? Oh, you mean a cookie pizza?  A cookie pizza topped with melted marshmallows and oodles of candy?  All sitting on a chocolate chip cookie crust? Oh yes, please sign me up.  Talk about a dessert that is FUN for kids and grown-ups, too!  This is a winner. Think about the endless possibilities for your pizza “toppings.”  Twix, kit kat,milkyways, m & m’s, peanut butter cups, gummy worms and on and on and on!  I definitely recommend cutting this pizza with a pizza cutter. A knife was a bit too sticky going through the marshmallow and the pizza cutter went through it easily leading to clean cuts!

So…….what candies will you be adding?  Wrap these in cello with a big ribbon and you have a perfect treat to bring to parties, barbecues and even preschool!

Ingredients

  • 2 sticks soft butter
  • 1/2 cup light brown sugar
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 1/4 cups AP flour
  • 3 cups milk chocolate or semi-sweet chocolate chips
  • Topping:
  • 3 cups mini marshmallows
  • Candies of your choice, I used Twix minis cut in half, M&M’s and Rolos

Instructions

  1. Preheat to 350°
  2. Cream butter and sugars until well blended and fluffy.
  3. Add eggs and vanilla-beat well.
  4. Add flour, baking soda, salt.
  5. Mix just to combine.
  6. Fold in chocolate chips.
  7. Spread batter onto a pizza pan or deep dish pan lined with nonstick foil. Mine was 14 inches.
  8. Mine baked 18-20 minutes to get it lightly golden.
  9. Remove from oven and sprinkle on the marshmallows all around leaving some of the edge plain to create the crust.
  10. Return to the oven for 3 more minutes until marshmallows start to puff.
  11. Remove from oven and sprinkle on your candies evenly.
  12. Let cool completely and cut into slices using a pizza cutter!

How To Make Whipped Cream With Canned Evaporated Milk

Thank you for all of the great feedback on my last video showing you the easy, hands free way to shred meat!

Today I’m sharing a great tip from the old days on how to make a delicious whipped cream using ingredients you probably have in your pantry right now! I just had to do a video on this one because seeing is believing!

Whipped Cream With Canned Evaporated Milk

Ingredients

  • 12 ounce can evaporated milk
  • 1/2-3/4 cup confectioner’s sugar
  • 1 teaspoon vanilla

Instructions

  1. Place can of milk in freezer for thirty minutes (use a timer so you don’t forget!). While that is getting cold, place mixing bowl and beaters (or whisk attachment) in refrigerator or freezer as well.
  2. Pour chilled evaporated milk into mixing bowl and beat at high speed for 1 minute, or until foamy. Add sugar and vanilla. Beat again for about two minutes, or until thick and creamy.
  3. Serve immediately
  4. Note: This is great on top of desserts, fruit salads, pies, custards, etc. However, this has to be served as soon as it is made as it won’t hold up for more than thirty minutes or so.

I can’t believe it is already SEPTEMBER! This year is flying by. Did you know that September is Better Breakfast Month? Just in time for “back-to-school”! This is the first year I am not starting a new school year, which feels a little weird. Peanut Butter and Banana Pancakes

Serves: 2

Ingredients
  • 1 cup whole wheat flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 tbsp sugar
  • 1 egg
  • ½ cup creamy peanut butter
  • 1 cup milk
  • 2 tbsp vegetable oil
  • 2 bananas, peeled and sliced
Instructions
  1. Heat a skillet over medium heat.
  2. Add all ingredients except for the banana to a blender and blend until batter is well mixed and smooth.
  3. Pour ¼ cup batter onto the skillet and top with a few slices of bananas.
  4. Cook until bubbles form on the top, then flip and cook for an additional 30 seconds.
  5. Repeat until all batter is used.
  6. Top with bananas and serve warm.
Makes 6 pancakes
