Lily’s Lunch Box (Week 5) – Tex-Mex

There’s two things I can always count on getting my little one to eat. Beans and rice! In fact, she takes her beans and rice plain. No salt. No ‘spice’… just a sprinkle of cheese and she’s done. She has been that way with beans and rice for her entire life.

Though it’s not my way of eating them, I’m more than happy to oblige her with this small request. Thankfully, corn and mandarine oranges are two more things that are on the top of her ‘will always eat’ list. What does that give you? A fun tex-mex lunch idea!

This is another meatless and gluten-free lunch option for the kiddies. Of course, if there isn’t a re-heating option available at your child’s lunch time, then this may not be the best of lunch ideas.

Although, my little girl would eat this hot or cold without question.

I’ve used a combination of black beans and quinoa to give a nice boost to protein in this meal, to make up for the fact that there isn’t any meat. Plant based proteins for the win!

If your little one isn’t a fan of pico, you could always swap that out for a mild salsa or some halved cherry tomatoes and a squeeze of fresh lime juice. Yum!

Still not a fan? Just garnish with some cilantro.

The Skinny:
Servings: 1 • Size: 1 Lunch Box • Calories: 268.4 • Fat: 4.4 g • Carb: 51.6 g • Fiber: 9.1 g • Protein: 14.2 g • Sugar: 4.5 g • Sodium: 397.1 mg

Ingredients:
1/2 C. Reduced Sodium Black Beans, Drained & Rinsed
1/2 C. Whole Kernel Corn
1/4 C. Quinoa & Rice Mix, Cooked (I used a whole grain medley.)
1 Tbsp. Fresh Pico
1 Tbsp. Reduced Fat 2% Cheddar Cheese, Shredded
1 Mandarine Orange, Peeled

Directions:

Pack neatly and seat in an airtight container.

This can be served either as a cold lunch or warmed for a bit in a microwave if available.

BLACKBERRY UPSIDE-DOWN CAKE

A few days ago we went on a hike and found a huge row of blackberry bushes that had not been picked. We spent a couple hours picking blackberries. When we got home we found we had about 10lbs of blackberries.  I turned some into jam, froze some and with a little more we made this scrumptious pike. I call it a pike because it is a little flat like a pie but is fluffy like a cake. Pie + Cake = Pike. Super easy to make with only 4 ingredients.

BLACKBERRY UPSIDE-DOWN PIKE

1 box of White cake mix – I prefer Pilsbury
1 can of Sprite / 7up
1/4 cup Sugar
2 cups Blackberries

Preheat your oven to 350 degrees. Spread the blackberries on the bottom of a greased 9″ cake pan.

Sprinkle the sugar on top of the blackberries.

Pour the box of cake mix on top of the sugared blackberries and spread evenly around the pan.

Pour the can of sprite on top of the cake mix. Be sure to cover the whole cake while pouring. The sprite will foam up as it mixes with the cake mix.

Gently mix the cake mix and sprite just a little. Bake in the oven for 30-35 minutes. Pull out of the oven and let cool for 10 minutes. Then tip upside-down on to a serving platter and allow to cool completely. Serve with ice cream or whipped cream. So yummy!!!!

The Blessing Of Wrinkles

Hopefully you’ve known a kind older person in your lifetime. One whose face is filled with wrinkles from a lifetime of smiles, whose cheeks have a rosy glow from making the effort to be cheerful, and whose eyes have a twinkle of wisdom and memories.

The only thing capable of rivaling such beauty is a smile from a newborn babe. 

Forget wanting to look like movie stars and “perfect” folks. I want wrinkles, LOTS of them. I want laugh lines around my mouth and crinkles at my eyes. I want wore out hands from preparing meals for generations and I want joints so used they begin to wear and ache in my older years.

And don’t you dare deny me my white hair as a testament of the grace I was shown in being able to watch my kids and grandkids grow up! 

God, keep me so busy and focused on the living at hand and the love, smiles, laughter, and joy that come with it that I could not possibly end up with a drawn and pinched face or the time or inclination to have one stretched and taught from trying to hide the evidence of a life well lived.

I want to leave this world with every blessed wrinkle I can possibly manage to earn and when I grow old, stand back coz I’ll show them what beautiful really is.
