Easy Pineapple Cake made with crushed pineapple, then topped with a simple cream cheese frosting. This easy cake recipe is perfectly moist and full of flavor!
Easy Pineapple Cake is made from scratch with just a few simple ingredients. The can of crushed pineapple is where most of the liquid for the cake comes from, so you don’t need to add any additional oil. Which makes this cake pretty healthy, right? Ok, so maybe not a health food, but using the pineapple instead of oil does save you a few calories. And the pineapple makes the cake so moist – it’s amazing!
It only takes a few minutes to mix the cake together and the simple cream cheese frosting can be made right after the cake comes out of the oven. Frost the cake while still a little bit warm and it spreads so easily. The cream cheese frosting pairs so well with the flavor of the cake!
What is pineapple cake?
Pineapple cake is made with simple ingredients (eggs, flour, sugar, brown sugar and baking soda) with a can of crushed pineapple mixed into the batter. The recipe is very simple but the pineapple in the cake recipe adds so much flavor and makes the cake very moist as well. The cake is delicious on it’s own, but the cream cheese frosting pairs so well with it so don’t skip it!
Ingredients in Pineapple Cake
2 eggs
20 oz. can crushed pineapple (don’t drain!)
2 cups all-purpose flour
1 cup sugar
1 cup brown sugar
2 tsp baking soda
Cream Cheese Frosting
3 oz. cream cheese, softened
1/4 cup butter, softened
1 tsp vanilla
2 cups powdered sugar
How to make Pineapple Cake
In a large mixing bowl, use an electric mixer to beat the eggs for 2-3 minutes. Add pineapple, flour, sugars and baking soda.
Pour into a greased 9X13 pan. Bake at 350° for 35-40 minutes or until toothpick inserted in center comes out clean.
As soon as the cake comes out of the oven, you can make the frosting. Beat the cream cheese, butter and vanilla together until smooth. Add the powdered sugar and continue to beat until completely smooth.
Frost the cake while still warm (just make sure to wait about 8-10 minutes after the cake comes out of the oven so it’s not hot enough to completely melt the frosting, just warm enough to soften it so that it spreads easily).

HOW DO YOU SOFTEN CREAM CHEESE?
Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.
-To soften at room temperature more quickly, just set the cream cheese on a plate and cut into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.
-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!
