As much as I’d like  to cook a delicious dinner every night, it just doesn’t always happen. Weeknights are rough – especially Mondays. It takes me a while to get into the swing of things each week. By the time I get home from work on Monday night, I’m usually ready to collapse on the couch. Yup, around here Mondays are take-out night. Or at least, they were.

Thanks to Bumble Bee SuperFresh™, I can prepare a delicious meal in minutes without even having to think about it. Can you believe that whole plate of food up there took less than 10 minutes to prepare? The most difficult part was slicing the zucchini.

When Bumble Bee® recently asked me if I’d be interested in trying out their new line of frozen fish with readymade sauces, I was a little hesitant. But then I checked out their web site and I liked what I saw! This wasn’t the Bumble Bee® that I was familiar with at all: this fish is fresh frozen (just like the fish I buy all the time) within hours of being harvested and the sauces are simple and straightforward without any artificial flavors or preservatives. They range from 130 to 230 calories per serving, depending on which variety you choose.

I tried the Spicy Shrimp Romesco first and was very happy with what I saw when I opened the bag: big, beautiful shrimp and a small packet of sauce (essentially supercharged compound butter). There are only 12 ingredients listed on the bag and not only could I pronounce them all, they’re all things that I frequently have in my kitchen! It was also very easy to prepare: just sauté the shrimp for four minutes, pour off the liquid, add the sauce and cook until it’s melted (about 2 more minutes, so 6 minutes total). While the shrimp cooked, I boiled some orzo (which only takes 8 minutes) and sautéed some  zucchini to round out the meal.

So how was it? We were impressed! The serving size was generous; we each got 10 shrimp, which were delightfully sweet and fresh tasting. The sauce was really well balanced and also tasted very fresh. It paired with the shrimp perfectly, complementing them without overpowering them. You could tell that they use really high-quality ingredients and, honestly, it tasted like something I would have made myself. (Could I have made this from scratch? Probably. Would I have on a Monday night? Probably not.)

I’m definitely a fan! The shrimp is the quickest to prepare, but the other varieties look just as easy – just slip each frozen, pre-seasoned filet into a parchment packet (included) and bake for 17-20 minutes. So simple and you don’t even need to dirty a pan! I’m planning to try the Tilapia with Lemon, Pepper, and Herbs next (I’ll serve it with quinoa and roast asparagus).
