Poke cakes became more popular a few years back so if you haven’t tried one, consider this a sign from the universe! They are not only so easy to throw together, the colors and flavors just simply can’t be beat!

Jello poke cakes are made by first having a base cake, classically vanilla but chocolate could work well, too! Once the cake has cooled, holes are poked into the cake with a fork before pouring unset jello onto the cake. The jello then sets in the fridge within the cake prior to serving. This gives the cake nice bursts of flavor!

You can use any jello flavor you’d like, my personal favorite is raspberry, though.

What is in Raspberry Jello Poke Cake?

  • White Cake: This can be a from-scratch white cake, a boxed cake mix that you’ve made or even a totally store bought white cake! As long as you have your favorite white cake (baked and cooled!), you are golden!
  • Raspberry Jello: you’ll need a little 3 oz package. Feel free to use sugar free if you’d like. You will need to mix up the jello according to package directions, so you’ll also need water.
  • Whipped Topping: frozen whipped topping or fresh whipped cream will be perfect to top this cake!
  • Raspberries: for garnish and only if you really want to. 😉

How long does my Poke Cake need to set for?

Typically you’ll want to let your jello and cake set for a good 3-4 hours prior to serving. This is perfect if you want to quickly get making the cake out of the way before focusing on your meal. If you are in a time crunch though, you can pop it in the freezer for 30 minutes to help quickly set the Jello. Just make sure to set a timer, because we just want the jello to set, not freeze the whole cake!

Yes, yes, YES!! Have a favorite? Use it!! I am all about getting creative in the kitchen! I think using orange jello mix to make a creamsicle type cake would be ta-die-for. I’m also wanting to play around with a chocolate cake with raspberry Jello mix. Doesn’t that just sound incredible? This method can be used in endless variations!

Does Jello Poke cake need to be refrigerated?

Yes, this does need to be stored in the fridge. The jello and the whipped topping need to be stored in the refrigerator so they don’t spoil. Cover tightly with plastic wrap and store in the fridge for up to 4 days. You can freeze the cake in individual pieces, if desired.

Ingredients

  • 1 boxed white cake mix baked according to package directions in 9×13 pan
  • 3 oz box raspberry jello mixed according to package directions
  • 8 oz frozen whipped topping

Instructions

  • Bake the white cake mix according to package directions in a 9×13 pan. Allow the cake to cool compltely.

  • Using a fork, poke holes into the cake about 1/2 inch apart from each other, all over the cake.

  • Mix up the raspberry Jello according to package directions. Spoon the jello over the cake, allowing the raspberry jello to soak into the cake.

  • Refriegerate the cake or 3-4 hours so the jello sets up. Alternitively, place the cake in the freezer for 30 mintues to quickly set the jello.

  • Spread the whipped topping onto the top of the cake and then refrigerate until ready to serve.

Can you use real whipped cream instead of whipped topping?

If you can’t find Cool Whip, which is the brand name of whipped topping where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well after a while on the cake. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!

To make stabilized whipped cream, you will need the following ingredients:

  • 4 ounces of cream cheese (softened to room temperature)
  • 1/3 cup powdered sugar
  • 1 tsp vanilla
  • 1 cup heavy whipping cream.
  1. Beat the cream cheese with the powdered sugar and vanilla until soft and smooth.
  2. In a separate bowl, beat the whipping cream just until soft peaks form.
  3. Add the cream cheese mixture to the whipped cream and beat until stiff peaks are formed. Store in the refrigerator until ready to use.

A little tip for making whipped cream faster. Use a metal bowl for whipping the cream and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
