I love asparagus. I seriously cannot wait for asparagus to come into season every year! Unfortunately, I am the only one under my roof that does enjoy it… as a result, most of my asparagus recipes will be intended for one or two servings.
The idea behind this recipe actually started with my mom a year or two ago. She had mentioned to me about how she had been wrapping roast beef around sautéed asparagus as a healthy sort of snack.
Hm… that does sound amazing.
But let’s kick it up a notch! Let’s cook those bad boys up in some balsamic vinegar to get a zing and then add in some horseradish sauce for a zap! Perfection.
I love to eat this as a small lunch or even make them ahead of time and enjoy one for a snack during the day.
Roast Beef & Asparagus Roll-ups

The Skinny:

Ingredients:
3 Large Fresh Asparagus, Washed & Trimmed
1 1/2 Tbsp Balsamic Vinegar
Salt & Pepper to Taste
3 Slices (1 Oz. Each) Deli Roast Beef, Sliced
1 1/2 Tbsp. Horseradish Sauce
Directions:
Lightly spray a skillet with non-stick cooking spray. Set the asparagus in the prepared skillet and top with the balsamic vinegar and a sprinkle of salt and pepper to taste. Cover and cook on medium heat, turning occasionally, for 5-10 minutes or until the asparagus is tender.
While you’re waiting on the asparagus, lay out the sliced roast beef. Top each slice with 1/2 tbsp. of the horseradish sauce.
When the asparagus is done, remove from the oven and allow to cool slightly before wrapping each in a slice of the prepared roast beef.
