This very easy preparation was born by chance, the other day I had some fresh flowers left over from Pasta with courgette flowers; so I unrolled a roll of puff pastry and I added all the raw ingredients . Just the time to cook and the savory courgette flower cake was already ready to taste! A save dinner ideal when courgette flowers are in season. I also find it perfect as appetizers , delicious aperitif or for buffet to be served in squares together with slices of savory Strudel. Try it soon, everyone will fall in love with it!

Ingredients





Quantity for 4 – 6 people

  • 1 roll of rectangular puff pastry (round is fine too) and even better homemade puff pastry
  • 12 – 14 courgette flowers
  • 250 g of drained ricotta
  • salt
  • pepper

Method

How to make savory pie with courgette flowers

First of all, unroll the puff pastry and fold the large side edges on themselves by just under 1 cm and then the smaller sides, forming a cord.

(if you are using round puff pastry, fold the edge just under 1 cm inside)

Then work the ricotta with a fork with salt and pepper and spread it with a knife inside the edge of the puff pastry

then add the courgette flowers cut in half (from which you will have previously removed the hard, bristly part of the stalk)

I don’t remove the pistil, which is edible and very aromatic, you can remove it if you want.

Finally, add a drizzle of oil on the flowers and a sprinkling of salt and pepper

Finally, cook in the middle – lower part of the oven at 200° for the first 10 – 12 minutes, then lower it to 180° and continue cooking for another 10 minutes.

Variations and Tips

If you want, you can make the same rustico using excellent shortcrust pastry or excellent savory shortcrust pastry.

To enrich it further you can make a savory courgette flower cake with the addition of mozzarella cheese diced to be added both above the flowers and below.

Or you can give a further touch of flavor by adding bacon or baked ham!
