Ingredients

  • 300 g of spaghetti (or bucatini, macaroni)
  • 350 ml of tomato sauce
  • 3 eggs
  • 6 tablespoons grated cheese (pecorino or parmesan)
  • 100 g of mozzarella
  • 100 g cooked ham (optional)
  • Olive oil
  • Salt and Pepper To Taste

Preparation

The first thing to do to prepare the spaghetti omelette with sauce it is the tomato sauce with basil, to be set aside once ready. Cook the spaghetti until cooked al dente, then drain them and cool them quickly under cold water to stop the cooking. Season spaghetti with tomato sauce and add the grated cheese. In a bowl, beat the eggs, add a pinch of salt and pepper, and mix them with the seasoned spaghetti. Heat a drizzle of oil in a pan, making sure to grease well both the bottom and the edges.

When the oil is hot, pour half the spaghetti into the pan. Add mozzarella and, if you wish, cooked ham. Cover with the remaining spaghetti and level all with a spatula. Let cook over medium heat until the bottom of the omelette is well done golden and crunchy. Flip the omelette using a lid or another pan and cook the other side until golden brown. Once both sides of the omelette will be crispy and golden, remove the pan from the heat and leave to cool for a few minutes.
