I have a thing for finding healthy bread recipes and am always up for trying new ones. There’s something about homemade bread that just feels comforting. And, when it’s a little healthier I feel like I can indulge a little more.

I don’t buy cookbooks often, but when I bought the Lion House Bakery Cookbook, I saw the recipe for wheat rolls and it looked great. Tried it and immediately fell in love. They’re so light and fluffy, You’re going to love them too!

This bread rolls recipe uses a combination of whole wheat flour and all purpose flour to keep them from being too dense or dry. This is very common with bread recipes, to have both when making whole wheat breads. You can also use bread flour (like I did) because it aids in the fluffy texture.

Why Are There Oats in These Rolls?

The oats in this bread recipe help to make it a little healthier and give a great texture. The oats when cooked in with the bread aren’t dry or crunchy, they’re actually very soft and practically unnoticeable. It’s more of a visual than a taste thing. But you have to admit, they do look great, right?

How to Make Soft Wheat Dinner RollsWheat Rolls Ingredients

-2 tsp active dry yeast

-1 1/2 cups warm water

-1/2 cup quick rolled oats

-2 TBSP molasses

-3 TBSP dry milk

-1/2 cup all purpose flour

-3 1/4 cups whole wheat flour

-3 TBSP shortening

-3/4 tsp salt

How to Make Lion House Wheat Rolls

In a large mixing bowl, dissolve the yeast and molasses in warm water and let proof until foamy. This should take about 5 minutes.

Add in the remaining ingredients, leaving the flour as the last addition. You’ll want the dough to be slightly sticky, so make sure to add the flour slowly. You might only need 3 cups of whole wheat flour if the dough looks like it’s getting too firm.

Knead the dough until it is soft and elastic, about 5 minutes. Place it in a bowl sprayed with cooking spray. Cover bowl and let sit in a warm place until dough has doubled in size, or about an hour. I let mine sit in a warm oven being as it’s too cold on my kitchen counter. You can do that too by turning your oven on 350 ° for 1 minute, then turning it off and placing the bowl inside the oven.

How to Make Soft Wheat Dinner RollsOnce the dough has doubled, punch down and then knead it lightly.

Roll out the dough until it is about 1/2 inch thin. Cut strips of dough using a pizza cutter. Roll the strips and then place seam side down on a greased cookie sheet. I normally just do my best rolling out a rectangle, then just cut strips. This time around I tried to make them more similar in size, first cutting the rounded sides off. My opinion; skip trying to be pretty. My rolls still ended up different sizes and I could have saved 10 minutes!

Allow the rolls to rise for 30-40 minutes.

Bake at 375° for 12 to 15 minutes. Brush with melted butter, if desired.
