Spaghetti alla Garum

Ingredients

  • 120 g of large spaghetti
  • 100 g of cherry tomatoes
  • 3 sardines
  • Pine nuts to taste
  • Raisins to taste
  • 4 tablespoons of extra virgin olive oil
  • 2 tablespoons of anchovy sauce
  • 1 clove of garlic
  • 1 piece of chilli pepper
  • Fresh thyme

Preparation

To start preparing Garum spaghetti, put a pan of salted water on the heat for the pasta, being careful not to overdo it with salt, as the seasoning will already be very tasty. In the meantime, prepare the ingredients: clean the sardines by removing the head, bones and entrails, then rinse them, dry them and cut them into pieces. Also cut the cherry tomatoes in half. In a pan, heat the extra virgin olive oil with the crushed garlic and chilli pepper. When the garlic starts to brown, add the raisins and pine nuts, toasting them lightly.

Add the cherry tomatoes to the pan and cook them jump quickly. At this point, it will not be necessary to add salt. Turn off the heat and add the sardines cut into pieces and the anchovy sauce, mixing well to mix everything together. When the pasta is al dente, drain it and add it to the pan with the sauce. Mix well so that the spaghetti absorb all the flavors. Complete with fresh thyme leaves. Your Garum spaghetti they are ready to be served. Enjoy your meal!
