- 400 g of spaghetti
- 2 cloves of garlic
- 50 g of walnut kernels
- 8 anchovies or anchovies in oil
- 1 sprig of parsley
- 1 hot red chilli pepper
- 4 tablespoons extra virgin olive oil (EVO)
- Salt to taste
Preparation
Start preparing spaghetti, garlic, oil, anchovies and walnuts finely chopping the parsley and walnuts. In a pan, heat the extra virgin olive oil and add the garlic cloves and chilli pepper. Let it brown until the garlic turns golden, then add the anchovies and let them melt in the hot oil. Once the anchovies have melted, remove the garlic from the pan. Add the chopped walnuts and mix well to combine all the flavors.
In the meantime, cook the spaghetti in abundant salted water and drain them al dente. Pour the spaghetti into the pan with the anchovy and walnut sauce and mix well, adding the chopped parsley. Continue stirring over medium heat until the spaghetti is well seasoned and the sauce is well distributed. Serve them piping hot, garnished with a drizzle of extra virgin olive oil and, if you like, a sprinkling of black pepper. Your spaghetti, garlic, oil, anchovies and walnuts they are ready.
