The Carnival Arancini I'm a sweet leavened typical greedy Marche cuisine, which is prepared near the Carnival. It is about Brioche rolls flavored withOrange, hence the name "arancine“; ranging fried or baked in the oven ! From super soft texture, from taste and aroma delicious, they will make you fall in love at the first bite, adding them immediately to the menu of Shrove Tuesday together with Chiacchiere, Castagnole, Frittelle, Bomboloni! Let it bet?
Like every traditional recipe exist small variations from family to family. What I give you today is there Original recipe of Arancini from Marche extracted from my regional cookbook. It's a very easy preparation , which will take you a short time, you can knead by hand, without a planetary mixer, the time to rise, roll out the dough then stuff with sugar is Orange peel finally wrap around and get some swivels just like Cinnamon rolls! A little more rest and I'm ready for cooking. According to tradition, they come fried in abundant oil; but you can easily make some Baked Carnival Arancini, just like mine! lighter, but equally greedy! Perfect for the Most colorful buffet of the year! but also for snacks simple for children and more e breakfasts tasty!

How to make Carnival Arancini
First of all mix together the flour, sugar and dry yeast. If you are using the fresh one, dissolve 1 teaspoon of water.
Then add the milk, stir, then the egg. Finally, stir in the soft butter in small pieces. Knead by ironing the dough well. When it is smooth, add the salt, knead well again in order to obtain a homogeneous and elastic mixture.
Finally cover with cling film and let it rise for 3 – 5 hours, the time it triples its volume in a temperate environment at about 28 °.
Then turn the dough over on a work surface, roll it out with a rolling pin to a thickness of about 6 mm, forming a rectangle. Then add the sugar and the grated peel of the oranges:

until you get a sausage. Use a double cotton thread to cross and form the swivel by cutting it directly to 1 cm of dough:
As you make them, arrange them in a baking tray previously lined with baking paper.
Finally let it rise for another 40 minutes at 28 °
At this point you can fry in plenty of oil, directly cutting the square with the swivel and immersing it in boiling oil for about 2 minutes, it will come off a few seconds after immersion.
Or you can bake in a static oven, as in my case, at 180 degrees for about 18 minutes until golden brown!
