This New Years Marshmallow recipe is a combination of white chocolate covered marshmallows on sticks, with colorful festive gold sprinkles. Nothing screams New Years’ like a gold and white color scheme! These are the best white chocolate covered marshmallows because they’re so simple and fun. Even with minimal effort, they’re still very impressive!

-Marshmallows: You will need 20 large marshmallows, not the mini ones, to make these pops.

-White Chocolate: We only need about 1 cup of white melting chocolate, this is roughly half an 8 ounce bag of white chocolate chips.

-Sprinkles: With gold colored sprinkles we can add that festive New Year’s’ touch to every pop. The amount needed will vary but you can add as much or as little as you want.

-Sticks: To make them into pops we need cake pop sticks or you can use colorful black/gold/white looking paper straws for an added touch of fun.

Press your marshmallows onto the sticks. Don’t shove them down too far, you don’t want the stick to pop out the other side.

In a bowl, microwave the chocolate in 30-second intervals, stirring well between each until smooth.

Hold the marshmallow sticks and dip the marshmallow end into the melted white chocolate to cover them. Tap the stick a few times with your finger to encourage excess white chocolate to drip off.

Coat the covered marshmallows in sprinkles of choice.

Let them cool for about 30 minutes to harden the chocolate coating. Alternatively, you can stand them up in a mug (marshmallows on top, sticks in the cup) and move them to the fridge to speed up the cooling process. Enjoy!

Ingredients

  • 20 large marshmallows
  • 1 cup white chocolate
  • gold sprinkles
  • 20 straws or pop sticks

Instructions

  • Press marshmallows on sticks.

How Long Are White Chocolate Marshmallows Good For?

Marshmallows and white chocolate are both two ingredients with a very long shelf life. You could probably get these things to last a very long time if properly stored but for best results, I recommend eating them within a week. Stale marshmallows aren’t very enjoyable and New Years’ is a one-day holiday, so they quickly become outdated. You can, however, swap out the sprinkles for fun new holiday-themed ones (like Valentine’s or Easter) to create more marshmallow pops throughout the year. You know you’ll want to. 😉

Can I Double This Recipe?

Absolutely! You can double, triple, or even cut the recipe in half. You could even add more than one marshmallow to a stick and create little kabobs. This is a dessert that’s perfect for customizing to what YOU want and making them totally your own.

While you could, I wouldn’t recommend it. While keeping chocolate in the fridge might be fine, freezing it is a little different. Because of the cold, the chocolate will weep or sweat as it thaws, making the pops messier to eat and causing the colors in the sprinkles to run. I recommend not making them more than a few days in advance and keeping them at room temperature or in the fridge as needed.
