5-Minute Fisherman’s Stew – Give or Take


Of course this Fisherman’s Stew takes more than five minutes
to make, and I’m actually referring to the approximate cooking time once the
seafood hits the pan, but as they say, it’s only false advertising if someone
else does it. Besides, one taste and I’m sure you’ll forgive any temporal
exaggerations. If, that is, you use really great seafood.

A recipe this simple has many advantages. It’s fast, easy,
and doesn’t require a ton of prep, but the downside is, there’s nowhere to hide
sub-par ingredients. So, unless you’re going to splurge on the freshest,
sweetest, most pristine seafood you can find, you may want to look for another
recipe.

Above and beyond that very critical directive, you’ll also
want to be sure your brothy base is aggressively seasoned before you toss your
seafood in. Since we don’t season the fish and shellfish directly, we need to
make sure we have enough salt, and whatever else you’re using, to go around.
Other than that, not much can go wrong, and assuming there’s some crusty bread
nearby, I really do hope you give this a try soon. Enjoy!

Ingredients for 2 Portions:

For the brothy base:

1 cup crushed San Marzano tomatoes, or fresh tomatoes (if your tomatoes aren’t nice and sweet, toss in a teaspoon of sugar)

2 cups fish stock, clam juice, or if time are tough, water

1/4 teaspoon red chili flakes, or to taste

For the rest of the stew:

2 tablespoons olive oil

2 tablespoons butter

4 cloves garlic, thinly sliced

1/2 very thinly sliced fennel bulb

salt to taste

1/2 cup white wine

1/4 cup chopped parsley

8 ounces firm white fish, like halibut or sea bass, cut into
1.5-inch cubes

8 peeled and deveined raw shrimp

12 mussels, scrubbed clean

12 clams, scrubbed clean

some crusty bread

No-cook corn salad comes together quickly with just a few simple ingredients, but the curry vinaigrette adds tons of flavor! This summer side dish is delicious with grilled steak or salmon.

Corn seems to be everywhere you look this time of year. And with good reason – at the height of the season, it’s sweet, juicy, and incredibly affordable.

Once you’ve had your fill of Mexican street corn (and Buffalo street corn and grilled corn slathered with goat cheese and smoked paprika), give this fresh corn salad with curry and lime a try. 

This corn side dish starts like most traditional corn salads do, with sweet corn, red bell peppers, scallions, and jalapeno. Then it gets tossed with a super flavorful curry and lime juice vinaigrette that makes it really special. If you like curry, you definitely need to try this! Madras curry powder complements sweet corn so well. This salad hits all the right notes – it’s sweet and spicy and sour and such a great change of pace from more typical corn recipes. 

It’s delicious served with just about anything. I personally love it with salmon, but it’s also at home with grilled steak or even a burger. You can even get creative and use it on like relish on top of a hot dog!

To make this curried corn salad recipe, start by cutting the corn kernels from the cobs and add it to a serving bowl. Mix it with diced red pepper, scallions, minced jalapeno, and cilantro. 

In a small bowl, combine the juice of two limes with 1 tablespoon olive oil, 1 teaspoon madras curry powder, and a big pinch of salt. Mix well to combine, then pour over the corn salad. The salad is ready to serve right away but will be even better after sitting in the refrigerator for an hour to help the flavors meld. 

Can I use frozen corn in corn salad?

Fresh corn is definitely best in this recipe – frozen just doesn’t compare. If you must, I like to saute it for a minute or two in a teaspoon of butter. It will take an extra minute and dirty another pan, but it helps make up for the fact that frozen corn just isn’t as tasty as fresh summer corn is. 

Do I have to use Madras curry powder?

Nope! I love Madras because it’s a little spicier and I really like the contrast between hot and sweet flavors. But you can use whatever curry powder is your favorite. You can also use garam masala, which has a similar warm flavor but without any heat.

Ingredients

  • 2 cups fresh corn kernels (from about 4 ears of corn)
  • 1 red bell pepper, diced
  • 3 scallions, chopped
  • 1/4 cup cilantro
  • 2 limes, juiced
  • 1 Tablespoon olive oil
  • 1 teaspoon Madras curry powder
  • 1 pinch sea salt

Instructions

  1. Combine the corn, pepper, scallions, and cilantro in a large bowl.
  2. In a second bowl, combine the lime juice, olive oil, curry powder, and salt. Whisk to combine. Pour over the corn salad and stir gently to coat. Adjust seasoning to taste.
  3. Serve immediately, or refrigerate.

I’ve always loved chicken salad and have made it so many times over the years. I consider this recipe perfection! It’s very versatile, so feel free to add in or swap out whatever items you’d like. I give some ideas below.

Here are several tips on how to make a recipe for chicken salad come together QUICK!

–Use canned chicken! Just drain and you’re all set. This recipe requires 1 Costco sized can or two small cans.

–Use a store-bought rotisserie chicken. Just diced and refrigerate to cool, then proceed with recipe. {this can of course be done ahead of time!}

–Slice the celery and cucumber beforehand. Store them in a small container in the fridge until ready to use.

–Make the entire recipe ahead of time and let sit in a closed container in the fridge until ready to serve.

  • sliced almonds
  • cashews
  • chopped pecans
  • pineapple tidbits
  • water chestnuts
  • Craisins
  • dried cherries
  • chopped sugar snap peas

How much chicken salad per person?

You should plan on allowing 1/4 cup to 1/2 cup chicken salad per person, depending on how you’re serving it. If you’re making chicken salad mini croissants as an appetizer, you can even use just shy of 1/4 cup of chicken salad. If you’re serving chicken salad sandwiches for lunch or dinner, you’ll want to allow 1/2 a cup or even 1/3 cup per person.

Is chicken salad healthy?

Chicken salad is packed full of protein, fruits and vegetables, so yes, it is a healthy food option. I even substituted plain yogurt in for half of the traditional mayonnaise which adds even more protein and cuts down on fat and calories. I love adding the diced cucumber for an additional vegetable source, plus the crunch is delicious. If you want to make chicken salad even more healthy, serve it on whole grain high fiber bread, or serve it on leaves of lettuce, as a chicken salad lettuce wrap.

 Can you freeze chicken salad?

Theoretically, yes, you can freeze chicken salad but know that the texture will suffer once thawed out and served. The mayonnaise can separate slightly, so it’d be a good idea to stir thoroughly and then add in a tad more fresh mayo prior to serving. The cucumber and celery will lose much, if not all of their crunch once they’re thawed as well. So yes, you can freeze chicken salad, but really it tastes so much better if eaten fresh!

Can chicken salad be made a day ahead?

Yes, you can make chicken salad a day ahead of when you plan to serve it. Store it in an airtight container in the refrigerator. I actually think day old chicken salad tastes even better as it has had a chance for the flavors to meld! Just give your chicken salad a good stir and if the chicken has absorbed the moisture, you might want to add in a bit more mayonnaise or plain yogurt to compensate.

How long will chicken salad stay good in the refrigerator?

Chicken salad will stay good for 5-7 days if stored in an airtight container in the refrigerator. My favorite airtight containers are Snapware. I’ve found that when I use Snapware, the foods generally stay fresh for at least 3-4 days longer than when you use regular tupperware.
