For the Quick and easy recipe I took inspiration from my most loved preparations: thedough some meatballs with sauce, in fact you will need them 10 minutes to mix together ground beef and pork, eggs, softened bread and cheese, round them between your hands and finally cook the meatballs in the air fryer. Thanks to trick inherited from the baked meatballs, to add 2 tablespoons of broth during cooking, these they will not dry out (due to the air fan) proving to be kept inside although crunchy on the outside. To give you an idea, the result is incredible, do you know the delicious fried meatballs? they are practically the same, but without fried! Perfect to prepare as a second course save dinner or save lunch , needless to say, children eat them repeatedly like sweets and we adults follow suit! And if you want to combine it with an excellent quick side dish, also make air fryer potatoes, they are special! However, if you make them smaller they are also special for aperitif accompanied by a delicious sauce.

Ingredients

  • 300 g of minced beef
  • 50 g of sausage removed from the casing (alternatively other minced pork)
  • 70 g of stale bread (1 sandwich)
  • 1 small egg
  • 2 tablespoons of parmesan
  • 2 tablespoons of milk
  • fresh parsley
  • salt
  • 2 tablespoons oil (optional)
  • 2 tablespoons meat or vegetable broth

How to make meatballs in an air fryer

First of all, soak the bread in hot water, a few minutes will be enough, then obtain mainly the crumb, squeeze it well and add it to a bowl.

Then add the minced meat, crumbled sausage, egg, parmesan, milk, finely chopped parsley and a little salt.

Finally knead with your hands until you obtain a compact mixture

Roll balls of about 5 cm between your hands. But you can also make them smaller:

Then, as you make them, place them in the basket of your air fryer with some chopped rosemary and 2 tablespoons of broth, if you like also with oil:

Without preheating, cook at 180° for approximately 15-18 minutes, the time also varies depending on the size of the meatballs.

Halfway through cooking, shake and decide whether to add 1 more tablespoon of broth.

I have to admit this time I was a little skepticalthe success of the potatoes was clear, the legendary apple pie was also very good, but even the Zeppole in the air fryer I did not expect! Instead they were an incredible surprise: soft, ventilated, alveolate just like the originals! but without a gram of oil ! AND they swell wonderful without the risk of deflating! Why the ventilated power of the air fryer allows powerful and uniform cooking! For the easy making I relied on mine super tested bases : my classic choux pastry with the traditional infallible method and the custard in 5 minutes without the long cooking! Choux base:

  • 250 g of ’00 flour
  • 250g of water
  • 50 g of butter
  • 5 medium eggs
  • 5 g of salt

  • 400 g of fresh whole milk
  • 100g of fresh liquid cream
  • 6 very fresh medium egg yolks
  • 150 g of sugar
  • 30 g of ’00 flour
  • 20 g of potato starch
  • 1 tablespoon vanilla extract

How to make Zeppole in an air fryer

First of all, make the dough following the step-by-step procedure in ZEPPOLE di SAN GIUSEPPE

Please remember, once you have obtained the mixture of butter, water and flour, add the eggs one at a time, mix as indicated in the link, until you obtain a dense and full-bodied mixture:

Then, only when the mixture is fresh, you can place it in a piping bag with a 1.5 cm – 1.8 cm wide nozzle.

Then prepare some baking paper, fold it on itself so that it is double and thick

This trick helps you have a more solid base on which to place the donuts in the air fryer. Naturally, make it to the size of your basket

Directly on the baking paper, which you will have held still by attaching weights to the 4 sides, make 4 zeppole

doing 2 rounds, one on the other : the base round of the zeppola has a diameter of 6 cm. Make the second round further towards the inside of the zeppola, so as to almost close (but without closing) the central hole.

If you want to make several zeppole together, make them smaller, 4 cm in diameter, even 6 will fit

How to cook San Giuseppe zeppole in an air fryer

First of all, set gentle modes and preheat your instrument at 180° for 1 minute,

Then decide whether to spray flaxseed or peanut oil with a nebulizer to make them even tastier. Of course you can skip this step for a super lightweight version.

Then cook the first 8 – 10 minutes. until the zeppole take on an initial golden colour.

Finally raise to 200°C and complete cooking for another 5 – 6 minutes. Attention, you may have to extend cooking by 2 minutes depending on your fryer, always test so as not to burn them

Then cook all the other remaining zeppole in this way.

Finally, fill with a dollop of my very cold CUSTOM CREAM, which you will have previously prepared with the ingredients listed and 1 black cherry in syrup on each piece! If you like, you can also add a dollop of cream inside by cutting your zeppola in half and closing it perfectly

Without filling, I recommend sealing them in cling film, this way they will last up to 5 days.

Smashed brussels sprouts in air fryer


These smashed sprouts they are my creative and tasty reinterpretation of traditional Brussels sprouts, designed for those looking for a new and quick way to enjoy this winter vegetable. A crunchy and spicy finger food to serve as an aperitif or as a delicious side dish.

A simple recipe, which combines the natural sweetness of sprouts with an irresistible crunchiness obtained thanks to cooking in an air fryer.

Brussels sprouts, native to Northern Europe, are a winter vegetable rich in vitamins C and K, fiber and antioxidants, celebrated for their beneficial properties in strengthening the immune system and promoting digestive health.

Just like smashed potatoes, Brussels sprouts should be boiled or steamed and then “mashed”. To do this I recommend using a meat tenderizer or the bottom of a glass. A brush of extra virgin olive oil will help the breading stick.

In fact, I wanted to flavor my smashed sprouts with a mix of spices* such as paprika, cumin and coriander, to give even more warmth and depth to their slightly sulphurous flavour. The finishing touch? The combination with Tahini, the sesame cream widely used in Middle Eastern cuisine which goes perfectly with the intense flavor of the brassicas.
