Alfredo Twice Baked Potatoes are the perfect side dish for any meal! We love baked potatoes and they are even better when you add alfredo sauce and two different kinds of cheese!

We eat a lot of baked potatoes at my house, mostly because my kids are picky eaters and this is one food that is plain enough to please everyone! I recently saw this idea for Alfredo Twice Baked Potatoes and was so excited to try it because alfredo sauce is another food that my kids can all agree on! Alfredo sauce plus cheese plus potatoes? Sounds like the perfect food! These turned out absolutely amazing and I’m not sure we will ever be able to go back to “normal” baked potatoes!

How do you make baked potatoes?

To make baked potatoes, make sure to scrub and wash the potatoes thoroughly. Pat dry and then use a pastry brush to coat the skin with a little bit of olive oil. Sprinkle salt on top of the olive oil. This method will make the skins a little bit crispy so if you prefer softer skins, you can wrap the potatoes in aluminum foil instead of using oil. Make sure to pierce the potatoes with a fork 2-3 times before baking. With either method, you can just place the potatoes directly on the middle rack of the oven.

When you are making twice baked potatoes, you will have better success if you use the first method because the crispier skins will hold their shape better when you scoop the filling out and will hold the filling better when you put it back in.

What is a twice baked potato?

A twice baked potato is made when you bake the potatoes until done, cut them in half, scoop out the filling and mix it with toppings before putting it back into the skin for a few more minutes of baking. If cheese is one of your toppings, this is a great way to ensure that all of the cheese gets melted!

Twice baked potatoes are also easier to serve at parties, large dinners or with children because each person doesn’t have to cut open the potato and take the time to prep the potatoes before eating. You can just use a little bit of butter, salt and cheese in twice baked potatoes and then have other toppings available for everyone to personalize their own potato to their liking.

How long to bake a baked potato?

Bake at 375° for about 60 minutes, or until the centers are soft when poked with a fork. If the potatoes are really big, you may need to add another 30 minutes to the baking time. If you are making twice baked potatoes, you will need to bake the potato for an additional 6-8 minutes once the filling has been put back into the potato skins.

  • 1 cup alfredo sauce (use your favorite kind from the store or try a homemade recipe like this one!)
  • 1 tsp garlic powder

  • 1 cup shredded cheddar cheese, divided

How do you make alfredo twice baked potatoes?

When the potatoes are done baking, remove them from the oven and slice each one in half horizontally.

In a mixing bowl, combine the alfredo sauce, garlic powder, mozzarella cheese and half of the cheddar cheese. Once combined, scoop out the pulp and add to the sauce mixture. Mix until completely combined and then put the mixture back into the potato skins.

Sprinkle the baked potatoes with the remaining cheddar cheese and then put them back in the oven for about 5-6 minutes, or until the cheese on top is completely melted. Serve immediately.

Ingredients

  • 2 large baking potatoes
  • 1 cup Alfredo sauce use your favorite kind from the store or try a homemade recipe like this one!
  • 1 tsp garlic powder
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese divided

Instructions

  1. Scrub and dry the potatoes. I like my skins to be a little bit crispy, so I prefer to brush them with olive oil and sprinkle them with a little bit of salt before baking. If you prefer the skins to stay soft, you can wrap them in aluminum foil instead. Either way, make sure to pierce them with a fork three or four times before baking. Bake at 375 for an hour, or until the centers are soft when poked with a fork.

Can you make baked potatoes in the microwave?

To make baked potatoes in the microwave, make sure to scrub the potatoes thoroughly. Pierce the skin 2-3 times with a fork and then place on a microwave-safe plate. Microwave on high power for about 5 minutes. Turn the potato over and bake for another 5 minutes. Test with a fork to make sure the potato is soft all the way through. If it isn’t soft in the middle, microwave for a few more minutes until soft.

What do you serve with baked potatoes?

Baked potatoes can be served with many different other items. At my house, we eat them as a main dish with salad but baked potatoes make a wonderful side dish. They pair beautifully with any chicken, steak or ham and they also go well with all types of green vegetables. We love to eat baked potatoes with broccoli, asparagus or green beans.

Are baked potatoes healthy?

Baked potatoes are low in calories, extremely low in fat and they also are a good source of protein and fiber. Potatoes are an excellent source of vitamin C and potassium as well. A large baked potato has about 270 calories and 63 grams of carbohydrates. Adding toppings will add calories and fat of course, but potatoes are a very nutritious and low cost food.

What type of potatoes are best for twice baked potatoes?

Russet potatoes are the best type of potato to use. They are large and the skin is sturdy enough to hold the filling and retain it’s shape.

Can you make twice baked potatoes ahead of time?

One of the things that I like about twice baked potatoes is that you can make them several hours or even a day ahead of time. Bake them the first time, prepare the filling and place the filling back into the potato skins. Let them cool for about 20 minutes and then cover them tightly with plastic wrap and store in the refrigerator. They will need to cook for about 15-20 minutes at 375° until the cheese is all melted and the filling is warm to the center.
