Introduction and My Rating

This is the most common recipe people will claim as their all-time favorite from my site. It had a special spot on my site for years as “My One Must Try Recipe.” And I called it the best meal I had ever grilled at the time and it probably still is. It really is that good.

I’m claiming a dream sequence for this one. I only had a few hours of sleep the night before; I lay down for a few minutes with dinner on my mind.  I had a pork tenderloin in the refrigerator for dinner but no plans. I should do another one for my grilled pork tenderloin series, but I had done no research.

So, what to do with that tenderloin? I really would like more of my Memphis BBQ sauce, but on what? Just grill the thing and dump sauce on it?

But out of my drowsiness came the memory of wanting to try dry rub Memphis ribs sometime. I have seen them over and over on the various cooking show. Well, my half-awake self-decided to use the rib rub on the tenderloin. I obviously have my best ideas when I’m not really with it.

🐖Pork Tenderloin

Start with well-trimmed pork tenderloin. You need to get th,e silverskin and any other membranes off so the brine and the dry rub can do their thing.

The tenderloin refers to the psoas muscle along the lower back. It is chicken tenders in the chicken or beef tenderloin (filet mignon) in cattle. The psoas is generally most tender cut since it is not used for movement.location of pork tenderloin on a chart of a pig

Please be sure you have a pork tenderloin and not a pork loin.

🧂The Brine

Brine for a few hours to make that already moist and tender meat cut with a fork. I’m suggesting a very simple brine of salt and some brown sugar. We will pick up most of the flavors in the rub.

The brine is optional but will increase the tenderness some and prevent drying on the grill. If you use the brine, make the rub without the salt.

🥣The Rub

Memphis BBQ is sweet and spicy. Very similar to Kansas City or St. Louis BBQ. But my favorite is Memphis.

I like to add the dry rub for a few hours and allow it to penetrate, and flavor the meat. Then I suggest adding a bit more just before cooking.

You can vary the rub for your taste if you want, but I highly recommend the rub as written. Also, I generally make up 2-3 times as much as I need for later use. It will last for up to 6 months sealed airtight and preferably in a dark place.

There is a range for the cayenne pepper. I suggest most people will prefer the lower end of the range. Skip if you want, but Memphis BBQ usually has a touch of mild heat in all that great spice.

♨️The Grill

Almost any gas grill will do. We want a grill surface temperature of 450° to a maximum of 500°. For most grills, that is a little over half power.

Let the tenderloin rest at room temp for 30 minutes before grilling. This allows you to get to the correct internal temperature easier without overcooking the spicy crust.

Charcoal should be fine. Just don’t crank up the heat all the way and watch the temperature.

Of course, preheat, clean and brush with vegetable oil to prevent sticking due to the sugar in the rub.

🖊️ Tips

Pork tenderloin is not round, flat, nor even square — it is a triangle, so there are three sides. Whether cooking on a grill or in a pan, cook three sides and don’t force it into a shape that is not natural.

There are some things you can skip in this technique, but each of them contributes to the outstanding final results. You will decrease results a tiny bit with each omission. The possible omissions are the brine, the rub waiting time, and the rest at room temperature before grilling.

Start with a simple brine. 4 cups cold water, 4 tablespoons table salt, 3 tablespoons brown sugar. Mix well in a one-gallon food storage bag.

Add the tenderloin to the brine and refrigerate for 1 to 4 hours.

Mix the Memphis dry rub: 2 tablespoons paprika, 1 tablespoon brown sugar, 1 teaspoon black pepper, 1/2 teaspoon chili powder, 1/4 to 1/2 teaspoon cayenne pepper, 1/2 teaspoon dry mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 teaspoon kosher salt – only add if not brining.

When the tenderloin is done brining, rinse under running water and pat dry with a paper towel. This will remove the brine salt from the surface.

Place on a piece of plastic wrap about 6 inches longer than the tenderloin. Rub all sides of the tenderloin well with the rub reserving about 1/4 of the rub for later.

Roll the tenderloin tightly in the plastic wrap, seal the ends and refrigerate for 1 -2 hours. Longer is OK.

Remove from refrigerator, unwrap and rub with the remainder of the rub on all sides and allow to rest at room temperature for 20-30 minutes. Preheat grill. You want a surface temp 450°– 500°. That is medium-high on most grills. Clean and oil the grill well. This last step is important, or it will stick.

Grill for 5-6 minutes per side and then decrease the heat a little and continue to flip about every 5-6 minutes until internal temp of 150°. About 25 minutes in total. Remember that a pork tenderloin has three sides.

Pro Tips

  1. Be sure you have a pork tenderloin and not a pork loin.
  2. 1 teaspoon table salt = 1 1/4 teaspoon Morton kosher salt = 2 teaspoons Diamond Crystal kosher salt
  3. I like to make more rub and save for later. Store airtight in a dark area for up to 6 months.
  4. You can skip the brine, the time with the rub, and the rest to room temperature but all these things add something to the final results.
  5. Dry rubs and the sauce you use should complement each other. I suggest my Memphis sauce or another sweeter sauce like a Kansas City or St. Louis sauce. Not a Carolina vinegar-based sauce.

Jack Fruit BBQ is a great dish for plant based diets, Vegetarians, or anyone who just wants to try something new and off the beaten path! Jack Fruit BBQI think most of y’all are going to be completely blown away by today’s recipe. Not only is it the easiest barbecue you’ve ever made, but it’s also stunningly delicious – and made with a fruit. If you’ve spent most of your life steeped in Southern food culture (like myself) you probably have no idea what to expect from a BBQ JackFruit Sandwich – and you may be glancing up at that picture over and over just wondering how something that looks so much like pulled bbq can be anything else! Well, as an old dog, I confess that it’s nice to learn a few new tricks every now and then so I’m going to pass this one on just in case some of y’all would like to expand your horizons, too. 

  • Why make Jackfruit BBQ? I have a niece who is a vegetarian and my daughter eats mostly plant based. She will still eat meat from time to time but prefers more plant based dishes when possible. Also, we have an amazing Asian market near us and I saw this a few months back and wanted to try it! 
  • Does it taste like fruit? Not at all but it is important that you get the right kind of jackfruit. 
  • What kind do I get? You want it to say “Young, Green”. Either both or one of those descriptors is fine. Young jackfruit is not sweet and easily adapts to any flavor sauce you cook it with.  You also want to make sure it is in either water or brine, not syrup. I have always managed to find Jackfruit in water so that is my preference. 
  • Where do I find it? If you have an Asian market near you they will most likely have a ton of it on their shelves. Other health food grocers may have it as well (such as Whole Foods, etc). You can also buy it online at places like WalMart.com, although my local WalMart does not carry it in the store.
  • How do you make it? That is the super easy part. Let me show you! 

Ingredients for Jack Fruit BBQ

You’ll need: A can of young jackfruit in water or brine, your favorite BBQ sauce, and some buns.

This is what Jackfruit looks like. Sometimes it will be more white in color, sometimes more pale yellow, but often like this, which is kind of a chicken color to me. Pour out your can and drain it well. I usually take my hand and press it a bit to remove a little extra liquid.

Place this in a medium to large skillet and use your fingers or a spatula to mash it up a bit. In doing this, it will separate into meat looking strands as pictured. Doesn’t that look like meat? It’s amazing!

Stirring Jack Fruit BBQ

Place this on medium to medium high heat and cook for about five to ten minutes, stirring often, to get more of the water cooked out of it. 

Adding Sauce To Jack Fruit BBQ

Add in your BBQ sauce. The amount is up to you. I usually add about a cup.

Stir that up and continue cooking until heated through, then serve!

Does it taste like BBQ? Yes, it sure does. To me, there a slight juicy burst to the last part of the bite that is reminiscent of eating pineapple in terms of texture, but the flavor itself is bbq all the way!  I hope you get to try this soon. It will definitely fool some folks!

Jack Fruit Barbecue Sandwiches

Ingredients

  • 14 oz can young green jackfruit in water or brine
  • 1 cup barbecue sauce

Instructions

  • Drain jackfruit in a colander. Place in large skillet over medium high heat. Chop up with spatula or chopper* and stir often for 5-10 minutes until more water is evaporated.

  • Add in enough bbq sauce to taste- I usually add about a cup. Stir and continue cooking until heated through. Serve on buns and enjoy!

*You can also just moosh it up with your hands as you put it in the skillet.

How to keep food off the grill warm?

I serve many of my grilled items on a ceramic or porcelain plate or tray that I heat in the microwave. Ceramic and porcelain retain heat well, so if you plate your meat or other items hot, they will stay warm for around 15-20 minutes, which is usually more than enough time for people to prepare their plates and eat their food.

How to tell when your meat is done?

A thermometer is the ideal way to tell in your meat is done: Rare from 120-125 F, Medium rare from 130-135 F and Medium from 140-145 F. If you don’t have a thermometer however, you can use the touch test. Touch the cut of meat with your finger and then feel the fleshy part of your hand underneath your thumb. The meat is raw if it feels like the fleshy part. Now hold your thumb and index finger together and feel the fleshy part of your hand beneath your thumb: The meat is rare if it feels like that. Repeat for each finger: thumb to your middle finger = medium rare, ring finger and your thumb = medium, finally, join your pinky and thumb = well done.

Servings: 12 servings

Ingredients

  • 1 box 3.4 oz instant vanilla pudding mix
  • 32 oz. container vanilla Greek yogurt
  • 8 oz. container Cool Whip thawed
  • 2 12- oz bags frozen berries*

Instructions

  • In a large bowl, combine the pudding mix and the Greek yogurt, stirring until well mixed.

  • Fold Cool Whip into the mixture.

  • Lastly, fold in the berries.  I had set mine out for about 10 minutes before making the salad, but you can put them in frozen and they will thaw very quickly so you can serve the salad right after mixing.

  • If you don’t serve the salad immediately, store in an airtight container in the fridge. When you’re ready to serve, give the salad a quick stir and top with additional berries, if desired, to garnish.

Notes

*I used frozen raspberries and blueberries in my salad, but you’re welcome to use fresh berries if you’d like. You can also try using diced strawberries, blackberries or a combination of all 4 varieties!

The sauce is easy to make and results in a sticky glaze on top tender, juicy grilled chicken. We love grilling chicken so I’m always on the hunt for great recipes. Cherry Pie Cookies are an easy way to whip up some delicious cookie cups that satisfy your craving for cherry pie, without all the work! Cherry Pie Cookies came to be when I was craving cherry pie today, but didn’t really feel like whipping up a pie crust. So instead, I made Nellie’s Super Soft Sugar Cookies and translated them into Cherry Pie Cookies! My kids were drooling on the floor while I was making them. {Talk about testing a 3-year old’s patience. “No, we can’t have one yet, Mommy needs to take a billion pictures of the pretty cookies first.” Poor kid!} They’re so easy and taste delicious- I think they’d be gorgeous on a holiday table. Milky Way Cake is a huge hit at our house, it is made with melted Milky Way candy bars and topped with a chocolate marshmallow ganache! This Milky Way Cake recipe is totally different from anything I’ve ever tried before and it ended up being incredible! To make the cake batter, you actually use 8 melted Milky Way candy bars! The chocolate/caramel flavor comes out very strongly in the cake and is so yummy. The frosting is an amazing chocolate and marshmallow ganache that goes perfectly with the cake  – just make sure to have a large glass of milk nearby because it is pretty rich! Raspberry Cream Cake begins with a white cake mix that is topped with sweet whipped cream, raspberries and danish dessert. Wonderful raspberry cake recipe with great flavors! Raspberry Cream Cake is a favorite of mine! Fresh raspberries are in abundance these days so I decided it was the perfect time for me to make one of my favorite desserts.  This is one of these super easy cakes that looks and tastes like it was a lot of work to make.
