It’s no lie, Jello is easy and delicious! Kids love it and it seems to be a staple at every family party (especially holiday parties!) I attend. I say, elevate that and make it fancy!!

Not only does the Jello now look gorgeous, it has a fun contrast of colors and flavors. This Jello Mold is totally adaptable too, This will work with any flavor of jello. I have visions of a pretty Christmas themed Jello Mold.. Red and green!

The ingredients are extremely simple, water, jello, sweetened condensed milk and fresh fruit (oh, and some ice water!)! Notice how the fresh fruit didn’t all sink to the bottom of the jello? I have a trick for that! 😉

This Jello mold is made in a 12 cup bundt pan.

How to make a Strawberry Jello salad Mold

Like I said above, all that it takes to make this Jello Mold is Jello, water, sweetened condensed milk and fresh fruit. You’ll also need a nice big bowl of ice water. I’ll get to that in a minute though. 😊

Prepare your 12 cup bundt pan by spraying it with non-stick spray. This will help release the jello from the mold when it is time. Lightly spray the pan with non-stick spray and set aside.

Dissolve 2 pkgs of jello into 4 cups boiling water in a large glass bowl. Once the jello powder has dissolved, stir in 2 cups of cold water.

If you aren’t a fan of fresh fruit in your Jello, skip this step and pour that Jello right into the Bundt Pan.

To add fresh strawberries to the jello, follow these directions.

In order to keep the strawberries from sinking to the bottom the Jello needs to be thick before we add the strawberries. To achieve this, set the bowl of Jello into a larger bowl full of lots of ice and water.

Stir the jello for about 30 minutes. The ice water will cool the Jello and it will become the consistency of hair gel. That is when you want to add the strawberries!

Stir the strawberries into the thick Jello, then pour the Jello into the bundt pan. Pop the jello into the fridge and let set.

Next, dissolve the last package of jello with 1 cup boiling water. Then stir in 1 cup cold water. Next, add an entire can of sweetened condensed milk to the jello.

Stir thoroughly and let it sit on the counter until the mixture cools to room temperature, about 15 minutes.

After about 15 minutes, check the Jello in the fridge. It should be firm to the touch. Carefully pour the creamy layer of jello on top of the fruit layer.

Refrigerate over night before removing from the mold.

With the non-stick spray, the jello should come out of the mold easily. If the jello seems to want to stay in the mold and not come out, flip the bundt pan upside down and heat the outside of the pan with a hair dryer to loosen the jello a bit. You could alternatively dip the bundt pan into hot water to loosen the jello.

  • 3 6 oz pkg strawberry Jello
  • 5 cups boiling water divided
  • 3 cups cold water divided
  • 1 cup strawberries sliced
  • 1 can sweetened condensed milk
  • ice water in a large bowl

Steps to make a Strawberry Jello Salad Mold

  1. Prepare bundt pan by spraying it thoroughly with non-stick spray. Set aside.
  2. Dissolve 2 pkgs of jello into 4 cups boiling water. Add 2 cups cold water to the Jello.
  3. Set the bowl with the Jello into a larger bowl filled with ice water. Stir the jello occasionally for 30 minutes until it thickens, similar to hair gel like consistency.
  4. Stir in the sliced strawberries and pour into the prepared bundt mold. Chill in the fridge for 15-20 minutes.
  5. While the Jello is in the fridge, dissolve the last pkg of Jello into 1 cup of boiling water. Add the remaining 1 cup of cold water to the Jello mixture once the powdered has been dissolved.
  6. Stir in the entire can of sweetened condensed milk and let the mixture come to room temperature, about 15 minutes.
  7. Check the Jello in the fridge, it should be firm to the touch. Carefully pour the creamy Jello onto the fruit jello in the bundt pan.
  8. Let the Jello sit in the refrigerator overnight.
  9. When removing the jello from the mold, place a large plate on top of the bundt pan and flip in one swift movement. If the jello seems to be having a hard time coming out of the mold, heat the bundt pan mold slightly by either using a hair dryer or dipping the mold into hot water and flipping again.

How do you remove the jello from the mold?

The key the easily removing a jello mold from the bundt pan is to thoroughly spray the pan with cooking spray before pouring the jello inside! I like to use spray, instead of greasing it myself with shortening on a paper towel because spray covers the surface of the pan better and gets into all the grooves of your bundt pan. Also, make sure your jello is fully set before removing it from the pan! As you can see in my recipe, you have the jello sit overnight before removing it. If you’re really struggling to get it out of the pan, try to quickly heat the pan. My favorite way to do this is to fill the sink with really hot water, then dip the pan in for 5-10 seconds, then try overturning it again.

Peanut Clusters are the easiest no-bake treats to make with just four ingredients – chocolate chips, butterscotch chips, peanuts and crunchy chow mein noodles! This Peanut Cluster recipe is the best one that I’ve tried and you can make a whole batch in just a few minutes!

Peanut Clusters are my absolute favorite candy to make. And eat. Of all of the treats that I have ever made and tried, I really do think these are my all-time favorite. Even slightly above chocolate chip cookie dough, which is saying a lot!

I love baking during the holiday season and have although I usually try a few new recipes each year, there are a few stand-by treats that I just have to make.  These Peanut Clusters are at the top of my holiday baking list every single year and I usually end up making at least 2-3 batches of them….for several reasons.

  • The first is that I really like to eat them- as simple as they are, they are one of my favorite treats of all time!
  • Peanut Clusters are soooo easy to make!  Only 4 ingredients, no actual baking is involved, and the whole process only takes about 5 minutes total for an entire batch. And if you buy the correct sizes of each of the ingredients, you don’t even have to measure anything! You just dump all 4 packages in. It can’t be any easier!
  • All of the ingredients are ones that I can keep readily on hand in my pantry. If I need to take a last-minute treat somewhere, I can have a batch of Peanut Clusters ready very quickly.
  • People love them! I have made these so many times for so many people that I now get requests for them!  There are a lot of Peanut Cluster recipes out there but many of them are slightly different and they just don’t taste quite as good! Many versions of this recipe use almond bark or peanut butter/peanut butter chips, but this version uses an equal amount of butterscotch chips and semi-sweet chocolate chips. You have to try this version!

What are the ingredients in Peanut Clusters?

  • 12 oz bag semi-sweet chocolate chips
  • 12 oz bag butterscotch chips
  • 5 oz can crunchy chow mein noodles
  • 16 oz jar salted or lightly salted peanuts

How do you make Peanut Clusters?

  1. Melt chocolate chips and butterscotch chips in a saucepan over medium-low heat.  Stir until the chips are completely melted and the mixture is smooth. (You can also melt the chocolate and butterscotch chips in the microwave if you prefer! Just place all the chips in a large microwaveable bowl and start by microwaving on high for about a minute. Stir and then continue to put the bowl back in the microwave, cooking at 30 second intervals and stirring in between each interval. As soon as all of the chips are mostly melted, just continue to stir until mixture is smooth. You do NOT want to cook the mixture too long!) 
  2. Remove from heat and add the chow mein noodles and peanuts.  Stir until the noodles and peanuts are completely coated.  Place wax paper on cookie sheets and then drop the mixture by spoonfuls onto the wax paper.  This process is easiest if you use two spoons – fill one spoon with the mixture and then use the other spoon to scrape it onto the wax paper.
  3. Place the cookie sheets in the fridge until the Peanut Clusters are completely set.  I prefer to eat them cold, but they taste wonderful at room temperature too!

  • 12 oz bag semi-sweet chocolate chips
  • 12 oz bag butterscotch chips
  • 5 oz can chow mein noodles
  • 16 oz jar salted or lightly salted peanuts

Instructions

  1. *Melt chocolate chips and butterscotch chips in a saucepan over medium-low heat.  Stir until the chips are completely melted and the mixture is smooth.

How do you store Peanut Clusters?

  • Peanut Clusters can be stored and served at room temperature. They tend to be a little messier that way because when the chocolate coating is at room temperature, it will start to melt almost immediately as soon as you touch them. If storing at room temperature, make sure to eat them all within about 3-4 days.
  • Peanut Clusters can also be stored in the refrigerator. Once the peanut clusters are set, you can put them all in an airtight container in the refrigerator and then pull them out right before serving. I actually prefer to eat them cold anyways, but if you like them softer, bring to room temperature before eating. Peanut Clusters will stay good in the refrigerator for up to 2-3 weeks, so you can make them way in advance which is another reason I really like this recipe!

Can you freeze Peanut Clusters?

Yes, you can freeze Peanut Clusters for up to a month. Just be sure to put them in an airtight container.

What type of peanuts do you use in Peanut Clusters?

I almost always use the lightly salted peanuts in this recipe. I have tried the recipe with salted peanuts and unsalted peanuts and they just don’t taste quite as good to me. But then I think that regular salted peanuts are way too salty even when eating them plain, so maybe that’s just a personal preference. I definitely recommend using either salted or lightly salted instead of unsalted though – you do need at least some salt to make Peanut Clusters taste the best!

Easy Homemade Peppermint Patty recipe with just a handful of ingredients! Copycat York Peppermint Patties but BETTER. Simple soft, sweetened mint candy covered in chocolate for a delicious, easy peppermint patty candy.

Homemade Peppermint Patties are candy made from a simple recipe of butter, powdered sugar, corn syrup and peppermint extract. I dipped mine in dark chocolate then sprinkled some with chocolate jimmies. The result? Incredible homemade peppermint patties that taste even better than York Peppermints! They’re softer, have better flavor and hello, in under an hour you have an entire tray of peppermint candies! They’re perfect for parties or gifts. Customize them with different colored sprinkles, white chocolate, add coloring to the mint candy.

HOMEMADE PEPPERMINT PATTIES

Easy Homemade Peppermint Patty recipe with just a handful of ingredients! Copycat York Peppermint Patties but BETTER. Simple soft, sweetened mint candy covered in chocolate for a delicious, easy peppermint patty candy.

Ingredients

  • 1/4 cup softened butter
  • 1/3 cup light corn syrup
  • 1-2 tsp peppermint extract*
  • 3 cups powdered sugar
  • 2 cups dark dipping chocolate**
  • chocolate jimmies if desired

Instructions

  1. Combine butter, corn syrup, extract and powdered sugar in a mixing bowl. Mix with an electric mixer for about 3 minutes, until ingredients are well combined and are holding together.

  2. Remove dough from bowl and break off about 2 teaspoon-sized sections. Roll into a ball and gently flatten with your hands. Put patties down on a pan lined with wax or parchment paper. Once all patties are made, place pan in the freezer for 10-15 minutes.

  3. Melt chocolate in microwave for 1 minute 20 seconds. Let sit for an additional minute in the microwave. Remove and gently stir. Remove peppermint patties from freezer. Use a fork or a handy Winton Dipping tool like I did to dip each patty in the chocolate, flip to coat the other side, then tap to remove any excess. Transfer chocolate coated patties to wax paper to cool. Top with chocolate jimmies if you’d like.

  4. Store in an airtight container, refrigerate if preferred but it’s not necessary. Yields 40 mints.

Recipe Notes

*Add 1 teaspoon peppermint extract, then mix until well combined. Taste dough. If you’d like them to be stronger, add an additional 1/2 to 1 teaspoon extract. You can also use 2 drops of peppermint essential oil instead or even 2 teaspoons mint extract for a more subtle mint flavor. Think Andes Mints as opposed to Starlight mints! Yum.

**When making candy like this I really find that dipping chocolate just works best. You can purchase Ghirardelli Melting Wafers at most grocery stores. I buy my melting chocolate in bulk on Amazon. If you really want to use chocolate chips instead, I suggest melting 1/2 a tablespoon of shortening or 2 tsp coconut oil in with the chocolate chips, to thin it out and make it easier to dip the candy.

My mother-in-law introduced me to this ginger cookie recipe and it’s a keeper! She got the recipe from a friend and neighbor of hers – an emergency room physician who has a hobby of making cookies.

If you don’t have any fresh ginger on hand, I’ve listed a couple alternatives. I’m sure there are some who like to have fresh ginger on hand, but I’m not one of them! Chocolate Orange Sticks are one of my absolute favorite holiday treats! I’ve been searching for a recipe like this for years- I love gummy candy but each recipe I’ve tried has been too much work or the candy hasn’t set. I finally made my own recipe and love it. They’re soft candies that don’t taste like jello, but more like a soft Turkish Delight, only MUCH simpler to make. They were fun to make and I think I could have even cut them smaller and had more to give out as gifts.

They only require a few minutes of active time, but they do have to set for 2-3 days, so plan accordingly. I covered mine in regular granulated sugar, but I think they’d be fun covered in coarse sugar, or a mixture of coarse sugar and powdered sugar. You choose!

Mint Oreo Pudding Cookies are absolutely amazing! I was ready to make them a few days ago and decided to make a mint version since I had some Mint Oreos in the cupboard. Martha Washington Candy is a holiday treat from my husband’s side of the family. It has a sweet, creamy filling that’s mixed in with coconut and chopped pecans and then covered in chocolate. Sounds amazing, right?! It is! I have to admit, the only real downside to making these is that the process is a bit messy. Not a big deal when it’s just my husband and I. But now we have 5 little people who are eagerly awaiting their chance to help. Suddenly now, messy recipes take on new meaning! I’ve learned that some handy kitchen gadgets and a little preparation go a long way in minimizing the messiness. That and somewhere along the way, I just relaxed and came to enjoy the process- sticky hands, messy countertops and all.

 

Chocolate Peppermint Truffles - Butter With A Side of Bread

Truffles are a great holiday treat and these ones are no exception! The peppermint and chocolate flavors are so tasty together and always make us want more!

Truffle making for the holidays is one of my favorite activities and these chocolate peppermint truffles are incredible. You start with a rich chocolate ganache- only my ganache is different than most others because it has butter. Ha. Does that surprise you?! It shouldn’t! The addition of butter gives these truffles a smooth, creamy texture. Then coated with delicious dark or white chocolate and sprinkled with peppermint- they’ll be the highlight of your dessert table. (If they make it that far!)

Homemade truffles aren’t hard to make, but they do take a while simply because you need to fully chill the truffles twice. So keep that in mind- mix up the ganache the night before and leave it in the fridge overnight to chill, then you can make them the next day!

 

This quick and easy Chex mix is a result of combining two holiday favorites: Chex mix and Gingerbread. The result is a simple and sweet holiday mix that everyone loves! The spices add just the right amount of flavor to the sweet chocolate. You can’t go wrong with less than 10 minutes of prep time either! Enjoy.

Here’s another one of my favorite holiday treats: FUDGE. Smooth creamy rich delicious chocolaty fudge. How’s that for some adjectives. I never make just normal fudge, it’s always got to be something different. This year I was inspired by some Stephen’s Hot Cocoa. Have you seen the Mexican Cinnamon variety? Oooh it’s so good. One of the items on my list for today was to make a batch of Peppermint Popcorn. It’s so easy to make and it is perfect for holiday parties since it makes a ton. Peppermint Popcorn is a holiday favorite around here and is one that goes fast! Good thing it’s fairly easy to make! Such a delicious treat! Enjoy!

Oh boy do we love this time of the year! The holidays just make us happy, especially Christmas… it really is the most wonderful time of the year. HOW DO YOU MELT CHOCOLATE FOR CHRISTMAS DESSERTS?

Melting chocolate in the microwave is easy if you go slowly. Always use a glass or ceramic bowl and chocolate that’s not old. To melt 1 cup of chocolate chips I’d begin with 1 minute in the microwave. After the 1 minute, let chocolate sit for 2-3 minutes. Then, gently stir and see if chocolate begins to melt smooth. If it’s still really solid, add 20 seconds in the microwave, then let it sit again.

Often chocolate looks like it’s not melted when it really is, and you don’t know for sure until you gently stir it. If your chocolate melts but it’s too thick to work with, try adding 1/2 teaspoon of coconut oil or shortening, then letting it melt and stirring it in.

CAN YOU FREEZE CHRISTMAS DESSERTS?

Yes, you can freeze most Christmas desserts!  Most cookies can be frozen as dough balls or baked cookies. Many candies can be made ahead of time and stored in an airtight container in the fridge for up to a week. My favorite airtight containers are Snapware. I’ve found that when I use Snapware, the foods generally stay fresh for at least 3-4 days longer than when you use regular tupperware. Many Christmas candies can also be frozen, it really just depends on the type of candy.If you have a question about a specific type of Christmas dessert, ask me in the comments and I’ll answer!
