Our family loves meatballs so I love having a variety of ways to serve them. This pineapple teriyaki sauce recipe is a winner! It’s so simple to make (in the microwave!) and I’ve served it here on skewers as an appetizer, but we also love it over rice for dinner.
Ingredients for Teriyaki Meatballs
Here’s what you’ll need to make this recipe: 12-16 oz bag of frozen meatballs– I used Gardein Meatless Meatballs since I’ve been trying to follow a “Meatless Monday” routine. My kids aren’t even aware the meatballs don’t actually contain meat- they taste great! I love that they’re high in protein as well. If you haven’t tried Gardein products, stop by the freezer aisle and check them out!
Pineapple chunks – I used a 20-oz can, but you can also cut up fresh pineapple. You’ll need about 2.5 cups of 1″ cubes Bell pepper– cut into 1″ squares Teriyaki Sauce Ingredients– you’ll need cornstarch, soy sauce, brown sugar, minced garlic and ginger, and then pineapple juice
How to make Pineapple Teriyaki Meatballs
Combine frozen meatballs, pineapple and pepper in a medium sized baking dish. Preheat oven to 450° F. I used my Breville Combi Wave 3-in-1 to cook this entire recipe. It’s the size of a toaster oven but does SO much more! It’s an air fryer, convection oven and inverter microwave all in one appliance. It was so simple to use it for heating the sauce, then cooking the meatballs all in a small, countertop appliance.
Make the Teriyaki Sauce
Whisk together cornstarch and soy sauce in a 2 cup measuring cup. Add in brown sugar, garlic, ginger and pineapple juice. Whisk, then microwave for 2 minutes. Whisk until smooth and return to microwave for another 2 minutes, until sauce is bubbling and beginning to thicken.
Combine it all
Pour sauce over meatball mixture. Stir to coat. Bake for 15-20 minutes, until meatballs are hot throughout and peppers are softened.
Serve it as an appetizer or easy dinner
Arrange peppers, pineapple and meatballs on a skewer in a patter to serve as an appetizer. For dinner, serve meatballs and sauce over steamed rice.

- 1 bell pepper cut into 1″ squares
- 2 TBSP cornstarch
- 1/3 cup soy sauce
- 1/3 cup brown sugar
- 1 tsp minced garlic
- 1/2 tsp minced ginger
- 1/2 cup pineapple juice from can of pineapple
