Guys, there isn’t enough good I can say about this Pineapple Juice Cake. It’s truly and honestly, one of my most favorite cakes. Even next to pineapple upside down cake. And yes, there is a reason I haven’t yet posted a recipe for a pineapple upside down cake here. – And the reason is that it’s one of my all time favorites and I want to be sure it’s healthier version is every bit as delicious as the original.
This cake, takes the cake! It’s sort of similar in texture to a tres leches cake in that the cake has time to soak up all the pineapple juice goodness to leave you with one deliciously moist and gooey cake. I would eat this cake for breakfast, snack, dessert… anything and everything! It’s just that damn good.

What is blueberry snack cake?
This is a simple and easy cake made in a 9×13 baking dish. The taste is rich and velvety smooth like butter and the bursting flavors of blueberries in every bite give a sweet and tangy fresh flavor that keeps you coming back for another bite.
Buttery Blueberry Cake Ingredients
-Flour: all purpose flour, cake flour and even bread flour can be used.
-Sugar: granulated sugar works best for this easy cake recipe and you only need 1 ½ cups.
-Butter: I always use real salted butter. It tastes so much better than any alternative.
-Baking powder: This is the leavening agent that helps to make the cake rise and be nice and fluffy.
-Salt: Salt works to enhance flavors and makes everything taste great.
-Vanilla extract: I suggest using a good quality vanilla extract or a Vanilla Bean Paste. These are my favorites, but you can use what you have (you do taste a difference with the better stuff though!)
-Eggs: You can use 2 whole eggs instead of 3 egg whites. I love using egg whites because of the soft, fluffy texture they give cake!
-Blueberries: Using fresh or frozen blueberries you can have the star of your cake. Just make sure to quickly rinse frozen berries and to not thaw them before using.
How to Make Buttery Blueberry Snack Cake
Preheat your oven to 350F degrees and prepare a 9×13 baking dish by spraying it with nonstick cooking spray. Set it aside.
In a mixing bowl, combine the four and sugar.
Add in the cubed butter and mix quickly so that the butter is incorporated and crumbly.
Remove ¾ cups of the mixture and set it aside.
Add in the baking powder, salt, vanilla, and egg whites.
Mix the batter thoroughly on medium-high speed for about 3-4 minutes.
Pour the cake batter into the prepared baking dish. Sprinkle with blueberries and the reserved crumble mixture.
Bake at 350F for 30-35 minutes until golden brown.

Instructions
Spray a 9×13 baking dish with non-stick spray and set aside. Preheat oven to 350°F.
Combine flour and sugar in a mixing bowl. Add in butter cubes and mix quickly, so that butter is incorporated and mixture is crumbly. Remove 3/4 cups of the mixture and set aside.
Add in baking powder, salt, vanilla and egg whites. Mix batter thoroughly for 3-4 minutes on medium-high speed.
Pour cake batter into prepared pan. Sprinkle with blueberries and reserved crumble mixture.
Bake at 350°F for 30-35 minutes, until golden brown.
Notes
You can use all purpose flour, cake flour and even bread flour. You can also choose to use 2 whole eggs instead of 3 egg whites. I love using egg whites because of the soft, fluffy texture they give cake!
After your cake has cooled completely cover it well with plastic wrap or keep it stored in an airtight container. You can leave your cake at room temperature and there’s no need to place it in the fridge. Eat within a few days for the best results.
Can I freeze blueberry cake?
You can keep your cake well covered and store in the freezer for up to 3 months. I recommend individually wrapping serving sized pieces if you’re wanting to eat it little by little. Then it’s perfect for the lunch bag!
Is this is a blueberry coffee cake?
It’s not a coffee cake as those generally include cinnamon in the streusel topping and a few variations. This cake recipe is actually much more like a blueberry buckle, which gets its name from the batter that buckles under the weight of the fruit and streusel topping and rises up to overtake them in the baking process.

We all love fresh, ripe summer peaches and this was such a delicious way to enjoy them, we will definitely be making this cake again.
What is a Jello Poke Cake?
Poke cakes are simple cakes that you bake and then poke holes in, using the back of wooden spoon, and then fill with some type of filling; jello, cream cheese or pudding. For this peach cake recipe we are using peach jello to fill the holes of the cake.
Ingredients Needed For Peaches & Cream Poke Cake
Here is all you need to make this simple recipe:
French Vanilla cake mix, plus ingredients to make cake
Peach flavored Jello
1 cup boiling water
Frosting Ingredients:
8 oz cream cheese
1/2 cup butter
1 tsp vanilla
3 cups powdered sugar
2-3 ripe peaches for topping the cake
How to make Peach Jello Poke Cake
To make, prepare the cake according to the directions on the back of the package. Pour into a 9 x 13 inch baking dish and bake as directed.
Allow the cake to cool for 15-20 minutes. Using the back of a small wooden spoon or even the tines of a large fork, poke holes into the baked cake. I only poke half way down into the cake and evenly space out the holes.
Combine the boiling water and the Jello, until the Jello is completely dissolved. Pour the Jello all over the cake, making sure to get Jello into the poked holes.
Cover the cake with plastic wrap and refrigerate for at least 3 hours to allow the Jello to cool and set.
How to make Cream Cheese Frosting
To make the cream cheese frosting, combine the softened cream cheese and butter until smooth using a hand or stand mixer. Add in the vanilla and mix. Mix in the powdered sugar 1/2 cup at a time until the frosting is to the desired consistency.
Once the peach poke cake has cooled frost with the cream cheese frosting by spreading evenly over the top of the cake.
Just before serving the cake, slice fresh peaches into thin slices and layer on the top of the cake. Store any leftover cake covered in the fridge.

Clean and slice the peaches into thin slices and place on top of the cake when ready to serve. Store the cake covered in the fridge.
You can make poke cakes ahead of time! Since this cake has to chill to set for a few hours, it’s actually perfect to make the day or night before. Just store the cake in the fridge until you’re ready to serve. When making this Peach Poke Cake, I’d also reserve the fresh peaches and top the cake with them just prior to serving, so that they don’t dry out.
Can I use a different cake mix?
You can use any variation of vanilla cake mix. I also think it’d be delicious with a spice cake mix!
What if I can’t find Peach Jello?
I find the greatest variety of jello and pudding flavors at Walmart. If you still can’t find it in a store, you can purchase it online here.
