There salmon and walnut pasta it is a very tasty first course of fish, with different textures. In this recipe of mine, I have combined the flavor of smoked salmon with the crunchiness of walnuts to make this dish truly unique.

HOW TO PREPARE SALMON AND WALNUTS PASTA

• Cut the salmon slices into strips and set aside.

• Heat a drizzle of olive oil with the chopped shallot over low heat and sauté for a few minutes.

• Add the salmon into strips, brown for a few minutes, add the brandy and let it evaporate. Turn off the flame.

• Meanwhile blanch the pasta in lightly salted water.

• Add the cooking cream to the salmon and walnut pasta sauce and turn the heat back on, again over low heat and mix gently.

• When everything is well blended, add a handful of chopped parsley and mix.

• Strain the pasta leaving little cooking water and add to the sauce, stir everything for a few minutes, until it is well blended.

• Serve your salmon and walnut pasta hot.

• I I did not add salt to the preparation of the sauce, because the salmon in cooking will leave its flavor. But if you prefer, taste and choose whether to add it or not.

• Cooking must necessarily be done over low heat, so as not to damage the salmon strips very much.

• This first dish goes eaten hot, otherwise you risk it drying out. I recommend enjoying it as soon as it is ready.

Gluten-Free, grain-free, dairy-free, sugar-free and keto-friendly, this quick bread uses just 4 ingredients and has the perfect crumb, flavour and moisture. It is very easy to make and will be a hit with your family! You don’t have to use cashew butter, any other natural nut or seed butter (tahini or almond butter) will work just super. Regular chocolate chips are perfect for this recipe too if you are not on a low-carb or keto diet.

  • 4 Large eggs, room-temperature
  • 1 tsp Baking soda
  • 175 g Cashew butter (creamy or crunchy or a mix of two)
  • 100 g Sugar-free chocolate chips (milk, dark or white)
  1. Line a small loaf pan with parchment paper. Set aside. Preheat your oven to 180C/350F.
  2. Beat together eggs and baking soda until soft peaks form. Add in cashew butter and continue mixing until just combined. Fold in 75 grams of milk chocolate chips.
  3. Pour the bread batter into the prepared loaf pan. Sprinkle the rest of milk chocolate chips on top.
  4. Bake for 25-28 minutes until an inserted toothpick comes out clean. Remove and cool briefly. Turn out the bread and cool completely on a wire rack before slicing. Enjoy!

I originally adapted this fruit salsa recipe from Tasteofhome.com because my husband’s work was doing a salsa competition at work and I wanted to offer a unique contribution. I’m totally in love with how this stuff turned out and could eat it all day!

How to Make Fruit Salsa From Scratch

Making fruit salsa is super easy (and made even easier thanks to the canned and already prepared items). Simply wash and chop the fresh fruit or dice and drain the canned, toss together with sugar and juice and you’re good to go. You can have this simple dish put together in minutes flat.

Can You Freeze Fruit Salsa?

Yes, if you think you’re not going to eat your fruit salsa soon enough, then go ahead and freeze it in an airtight container to get it to last even longer. You can thaw it out in the fridge overnight before eating and it should still taste great.

What Size Flour Tortillas Work Best?

The flour tortilla size of choice is up to you/. Personally I like the standard sized ones because the chips once cut aren’t too large or too small. If you want a smaller chip the street taco sized tortillas are great and if you want larger ones or to cut them out using cookie cutters for fun shapes, then a larger burrito sized tortilla would be a great option.

-1 cup  fresh strawberries, finely chopped

-1 cup blueberries

-1 small can of mandarin oranges, finely chopped

-3 medium kiwifruit, peeled and finely chopped

-3 rings of canned pineapple, finely chopped

-1 tablespoon lemon juice

-2 teaspoons sugar or honey

-10 flour tortillas

-1/4 cup butter, melted (or butter flavored Pam Spray)

-1/3 cup sugar

-1 teaspoon cinnamon

In a small bowl combine the fruit, lemon juice and sugar. (You can also use honey instead, if preferred!)

Cover and then refrigerate the mixture until serving. The longer you let it rest the better the flavor can develop.

While the fruit is in the fridge, preheat your oven to 350F degrees.

Brush the flour tortillas with melted butter, or spray them with pam spray.

In a small bowl, combine the cinnamon and sugar and then sprinkle it on top of the flour tortillas. With a pizza cutter, slice each tortilla into 8 pieces.

Bake for 8-10 minutes on a lightly greased cookie sheet. Then, cool the on a cooling rack. Serve with the prepared fruit salsa. Enjoy!!

Gluten free tortillas are usually thinner so they may not hold up as well under the weight of the fruit salsa. If you’re okay with that risk then go for it. Spoons could always help out in the event that the chips fail.

This snack is perfect as-is but serving it in a bowl with a scoop of vanilla ice cream could e an incredible way to enjoy yourself on a hot summer evening. A layer of crispy cinnamon chips topped with vanilla ice cream and a scoop of fruit salsa over the top just sounds mouth wateringly delicious, wouldn’t you agree?
