Triple Chocolate Brownie Pie


When I told my family about Pie Day Fridays, that I was posting a new pie recipe each Friday this summer, my daughter frowned and announced in a very disappointed tone that she didn’t like pie…

She wasn’t speaking from experience, though, because she’d really not tried pie much in her lifetime. So I set out to make a pie that my chocolate loving daughter wouldn’t be able to refuse.

Now once y’all see this recipe you’ll probably think “Oh that’s just too simple.” Some folks might even think it is so simple that it shouldn’t even be called a recipe, but I think most of y’all will be more in my mindset of “Oh that is so simple, it’s wonderful!”

If you’re like me and have never met a brownie you didn’t like, you’re gonna love this pie.

And yes, Katy Rose says she loves pie now so all is right in my little world .

You’ll need: a pouch of brownie mix, chocolate chips, and a regular unbaked pie crust.

You’re also going to need whatever ingredients that brownie mix calls for so take a gander at the back and make sure you have that on hand. It’s usually just a bit of oil, an egg, and some water (which I usually substitute milk for but either way works fine).

Mix up brownie mix according to package directions.

Don’t you know that little hands helping make everything taste better? 

Stir in chocolate chips.

That is me saying “this” with a spanish accent, which is as close as I can possibly come to speaking Spanish. I admire folks who can speak more than one language, but I’m not one of them. I think the hard drive on my brain is full This will be interesting next week as I venture to yet another Spanish speaking country with nothing beyond my nearly forgotten American Sign Language skills and an Alabama accent. Bake this at 350 for 25-30 minutes, or until set in the center.

Remember that ovens, like people, may vary  

Allow to cool slightly before cutting.

Top with vanilla ice cream and chocolate sauce to add the third layer of chocolate

Triple Chocolate Brownie Pie

Ingredients

  • 1 pouch brownie mix (the size for an 8×8 pan)
  • 1 cup chocolate chips (semi sweet or sweet)
  • 1 unbaked pie crust (regular size, not deep dish)

Instructions

  1. Prepare brownie mix according to package directions. Stir in chocolate chips.
  2. Spoon into unbaked pie shell. Bake in 350 degree oven for 25-30 minutes. Allow to cool slightly before serving.
  3. Top with vanilla ice cream and drizzle with chocolate sauce for third layer of chocolate 🙂

2 1/4 cups flour
1/2 tsp. kosher salt
1/2 tsp. baking soda
1 1/2 sticks soft butter
1 cup light brown sugar
1/2 cup regular sugar
1 T. vanilla extract


1 egg


1 egg yolk
use 2 cups mini chocolate chips
1 bag of Dove mini milk chocolate squares, unwrap one for each cookie you make.
 Preheat oven to 350 degrees. Line cookie sheets with parchment.
Beat
butter and both sugars until well blended. Add in vanilla, egg and
yolk until light and creamy. Add in flour, salt and baking soda just
until incorporated. Stir in chocolate chips by hand. Chill if you have
time.
Grab a nice scoop of dough and surround the chocolate candy so it is completely enclosed.  Bake 11-14 mins. or until edges are browned and centers no longer look
wet. Cool completely on sheets.
 

DARK CHOCOLATE PEPPERMINT CREAM PIE {Made with Peeps Peppermint Marshmallow Stars!}

I was asked by Peeps, the maker of the fun marshmallow treats, to come up with a recipe using one of their holiday marshmallows. I came up with this delicious cream pie {after being inspired by Nellie’s Strawberry Cream Pie!} It’s easy to make, the flavors go beautifully together and the Peeps Peppermint Marshmallow Stars add a festive touch!

Dark Chocolate Peppermint Cream Pie
Serves 6-8

  • 1 cup semi-sweet chocolate chips
  • 3 tsp butter or shortening
  • 1/4 cup milk
  • 1 Graham cracker pie crust (or chocolate- either way!)
  • 4-oz (1/2 a block) cream cheese, softened
  • 1/2 cup sugar
  • 1/2 cup sour cream
  • 1/2 tub Cool Whip (4 oz)
  • 1/2 tsp Peppermint extract
  • 1/2 cup Peppermint chips*
  • dark chocolate, for shaving on top
  • 1 package Peeps Peppermint Marshmallow Stars

Combine chocolate chips, butter or shortening and milk and melt in the microwave. I usually microwave it for about 30-45 seconds and then stir. If needed, microwave for another 15-20 seconds and stir again. Stir until smooth and then pour the mixture into the bottom of the crust. Sprinkle 1/4 cup of the Peppermint chips on top of the chocolate. 

*Peppermint chips are like chocolate chips only smaller and peppermint flavored. I found mine at Walmart! If you can’t find them, feel free to use 1/4 cup of crushed candy canes in place- sprinkling 1/8th cup over the chocolate and the remaining amount on top. I personally just think the peppermint chips are easier to eat! 

Beat the cream cheese, sugar, sour cream and peppermint extract until smooth.

Fold in the Cool Whip.

Pour (or scoop) the mixture into the crust. Take the Peeps Peppermint Marshmallow Stars out and separate each star. Gently press them into the top of the pie, pushing down so that the stars are flush with the rest of the cream. Cover and refrigerate overnight.

Don’t be tempted to not refrigerate the pie overnight! It needs time to set, trust me!
Top pie with remaining peppermint chips and shave about 1-2 oz of dark chocolate on top.

Add chocolate mixture into pie crust, then top with peppermint chips.

Add cream mixture over the top.

Then press the Peeps Peppermint Marshmallows into the cream. 

After refrigerating overnight, top with remaining peppermint chips and dark chocolate shavings. Here’s what the pie looks like inside! The chocolate on the bottom is almost like a rich ganache- so delicious! 

The chocolate-peppermint-marshmallow combination is a winner!
