How to Make Chocolate Truffles by Gordon Ramsay

How to Make Chocolate Truffles

We’ve posted chocolate truffle-like confections before, but I’ve always taken the coward’s way out, and just finished them by dusting in cocoa, which, while technically acceptable, isn’t even close textually to what we’ve finally done here. A proper truffle needs to feature that irresistible contrast between the soft ganache center, and a crispy, pure chocolate shell. Don’t worry – it’s easier than it sounds.

WHITE CHOCOLATE RASPBERRY OREO BALLS by Gordon Ramsay

WHITE CHOCOLATE RASPBERRY OREO BALLS

White Chocolate Raspberry Oreo Balls are a delicious no-bake treat made with Oreo cookies, cream cheese and a raspberry in the middle! These Oreo Balls are dipped in a white chocolate candy coating and coated with a chocolate drizzle.

Oreo Balls are absolutely amazing – if you haven’t made them before, you need to try them! The original recipe only has three ingredients total! And you don’t have to bake them. That’s my kind of treat. I have made the original recipe many times and decided to change it up just a little bit.

I absolutely love pairing chocolate and fruit, so I decided to make Oreo Balls with a raspberry in the middle. I also added a slight hint of raspberry flavoring to the Oreo mixture and the candy coating as well.  That’s all I did!

Adding a raspberry is so simple, but the results are amazing!  I can’t even explain how many people have absolutely raved about this recipe. I have taken these Oreo balls to many parties and it is so fun to watch people be surprised by the little raspberry in the middle. People just can’t stop eating them, and is absolutely shocked at how simple this recipe is.

How do you make Oreo Balls?

Regular Oreo Balls are made with cream cheese, Oreo cookies and a chocolate coating. Only 3 ingredients for an amazing bite sized, no-bake dessert! All you have to do is crush up the Oreo cookies and mix them with the cream cheese and then shape the mixture into balls. Freeze the balls for a few minutes and then dip them in melted chocolate. For this recipe, I chose to use vanilla almond bark, but you could also use regular chocolate if you prefer that.

What are Oreo Truffles?

Oreo Truffles and Oreo balls are the same thing! With the addition of the cream cheese and the raspberry, I’ve had so many people be surprised that the main ingredient is Oreo cookies. The White Chocolate Raspberry Oreo Balls really do taste like fancy, complicated-to-make truffles!

What are the ingredients in White Chocolate Raspberry Oreo Balls?

  • 36 OREO Cookies, finely crushed (14.3 oz. pkg)
  • 8 oz. brick cream cheese, softened
  • 1 lb almond bark (Candi-Quik), melted (I used vanilla almond bark but you could use milk chocolate or semi-sweet instead)
  • 40-48 raspberries, washed and patted dry with a paper towel
  • 1/2 tsp raspberry flavoring/extract, divided
  • DRIZZLE: 1/2 cup semi-sweet chocolate chips OR any remaining almond bark can be used – just add food coloring!

Making an oreo ball with a raspberry in the middle

How do you make Oreo Balls?

  1. Crush the OREO cookies.  I used my blender, but you can place the cookies in a sealed plastic bag and smash them with a hammer also!  I found that the blender worked best when I did half the cookies at a time, rather than trying to crush all 36 at once.
  2. Mix the crumbs with the cream cheese until well blended.  Add 1/4 tsp of raspberry flavoring to add a slight raspberry flavor to the mixture.
  3. You will need to shape 40-48 (1-inch) balls, forming them around each raspberry.  Use your fingers to shape the mixture around the raspberry and then roll them between your hands to make a nice, round shape. (I use a cookie scoop to get the right amount of mixture every time!)
  4. *Freeze the balls for about 15-20 minutes before dipping.
  5. Melt the candy coating or baking chocolate in the microwave according to package directions and add 1/4 tsp of raspberry flavoring to the chocolate.
  6. Dip each ball in the chocolate and place on waxed paper.  If you have a little bit of the candy coating left, you can add some red food coloring to the remaining amount and drizzle it onto the balls to make them look pretty!  You can also melt about 1/2 cup semi-sweet chocolate chips and drizzle that on the top instead. The coating should be hardened within just a few minutes and then you can use a knife to trim off any excess chocolate around the edges/bottoms.
  7. Refrigerate until ready to serve.  Enjoy!

*Don’t skip this step! The balls need to be chilled before you dip them in the melted chocolate. If they aren’t chilled, you will end up with a lot of crumbs in your candy coating and they won’t look quite as pretty! Because of the raspberries in the middle, you don’t want to freeze them too long either. So if you need to prep ahead of time and you won’t be able to start dipping them within 15-20 minutes, just put them in the fridge to chill. They will be ready in about an hour, but you can leave them in there for several hours if you need to before dipping them.

How do you store Oreo balls?

Oreo balls need to be stored in the refrigerator because of the cream cheese in the recipe. Make sure to put them in an airtight container. Regular Oreo balls can be stored in the refrigerator for 2-3 weeks, but because this kind has fresh raspberries in the middle, they need to be eaten within 2-3 days.

Can Oreo balls be frozen?

Oreo balls can be frozen in an airtight container for up to 2 months. Because these White Chocolate Raspberry Oreo balls have fresh raspberries in them, I would not plan to store them in the freezer because the consistency of the raspberry will get a little bit mushy when thawed.

How do you melt chocolate in the microwave?

Melting chocolate in the microwave is easy if you go slowly. Always use a glass or ceramic bowl and chocolate that’s not old. To melt 1 cup of chocolate chips I’d begin with 1 minute in the microwave. After the 1 minute, let chocolate sit for 2-3 minutes. Then, gently stir and see if chocolate begins to melt smooth. If it’s still really solid, add 20 seconds in the microwave, then let it sit again. Often chocolate looks like it’s not melted when it really is, and you don’t know for sure until you gently stir it. If your chocolate melts but it’s too thick to work with, try adding 1/2 teaspoon of coconut oil or shortening, then letting it melt and stirring it in.

What other types of Oreo Balls are there?

The fun thing about Oreo Balls is that it is very easy to change them up a little bit and make dozens of variations! I’ve tried a few different kinds, and while the White Chocolate Raspberry variety continues to be my favorite, there are some other really yummy ones!

These Lemon Raspberry Truffles are made exactly the same way, but using Lemon Oreos for a totally different flavor! There are so many different varieties of Oreo cookies to try – any of them will work!

Another thing you can do to make Oreo Balls fit every occasion is to add sprinkles or different colors of drizzle on top. This way, you can make these treats fit every single holiday just by changing the colors of the sprinkles!

What type of chocolate works best in white chocolate party mix?

I usually just use whatever brand of white chocolate chips I happen to have on hand, and the recipe tastes amazing and works out well every time! If you are a little bit pickier about your chocolate, you can definitely use a higher quality white chocolate for the candy coating on this Chex mix. I actually don’t usually like white chocolate very much, but absolutely love it in this recipe – something about the other flavors makes it so yummy!

How long can you store chex mix?

This chex mix recipe will stay fresh for about 3-4 days in an airtight container. Any longer than that, and the cereal will start to taste a bit stale, so make sure to package some up and start handing it out to the neighbors – this batch is pretty large!
