Soft & Chewy Mint Chocolate Cookies

The combinations of mint and Chocolate just reminds me of Christmas.. especially when you throw baked goods into the mix! I fell like the combination is either a love it or hate it type of thing. I happen to LOVE it!

If you fall into the same category, you are going to go bananas over these cookies. Extremely soft and chewy with just the right amount of peppermint to compliment the rich chocolate cookie.

Take these Chocolate Mint Cookies to your Cookie exchange party this year, they will be a hit, pinky promise! The best part about these cookies.. They are no harder than a regular chocolate chip cookie recipe. Taste fancy, but honestly there is no extra work!

Ingredients for Chocolate Peppermint Cookies

  • Butter
  • granulated sugar
  • brown sugar
  • egg
  • vanilla
  • all purpose flour
  • cocoa
  • baking soda
  • salt
  • mini chocolate chips
  • Junior Mints candies

You’ll need a couple of packages of the Movie Theater size Junior Mints. Be on the lookout for the seasonal boxes of Christmas Junior Mints! They’re flecked with red and green candy and add a really festive look to these cookies!

How to make Chocolate Mint Cookies

Making Chocolate Mint Cookies is just as easy as making regular chocolate chip cookies. We will cream together the butter and sugars first. Then the egg and vanilla goes into the mix. Next, the dry ingredients are added, followed by the mini chocolate chips.

We are not going to add the Junior Mints until after the cookies have baked. It is important to wait until after the are cooked or else all of the pepperminty goodness will escape and dissolve into the cookie instead of having a burst of Pepperminty goodness.

As soon as the cookies come out of the oven, press 2-3 junior mints onto the top of each cookie and allow them to cool.

How to Freeze Chocolate Cookie Dough

If you’d like to freeze the dough before baking, I would suggest scooping the dough and then freezing the balls on a cookie sheet for about 1 hour. After the hour is over, you can then toss the cookie dough balls into a zip top bag without the cookie dough balls sticking to each other.

When you are ready to bake the cookies, arrange on the cookie sheet and let them sit at room temperature while your oven preheats. You will then bake as usual before topping the cookies with Junior Mints.

Ingredients

  • 3/4 cup salted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tbsp vanilla (yes, 1 tbsp 😉 )
  • 1 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup mini chocolate chips
  • 75 junior mints approx.

Instructions

  • Preheat oven to 350°.

  • Cream together the butter, granulated sugar and brown sugar.

  • Add the egg and vanilla. Mix until light in color and creamy.

  • Add in the dry ingredients (flour, cocoa, baking soda and salt), mix into the dough. Mix until completely combined. The dough will be soft.

  • Fold in the mini chocolate chips.

  • Scoop or roll the cookie dough out into equal sized balls. Arrange on a cookie sheet. and add a few extra mini chocolate chips on top of the dough, if desired.

  • Bake at 350° for 7-9 minutes or until the cookies are puffy and no longer glossy on top.

  • Remove from oven and immedietly press 2-3 junior mints onto the top of each cookie. Allow the cookies to cool on the cookie sheet.

These darling cheesecakes have a graham cracker crumble base, an easy-to-make cheesecake layer, and is topped with cherry pie filling, but you can totally switch it out for any of your other favorite cheesecake toppings.

Ingredients needed for White Chocolate Cherry Cheesecake Recipe

These are the ingredients you’ll need to make White Chocolate Cherry Cheesecakes ~

  • Graham Cracker Crumbs
  • Butter
  • Cream cheese
  • A box of white chocolate instant pudding
  • Milk
  • Cool Whip
  • Cherry pie filling (or any other topping you’d like to use!)

How to make graham cracker crust:

Combine graham cracker crumbs and melted butter and mix gently.

Divide the graham cracker mixture evenly between your individual serving containers. I like using small jars or my glass square bowls! When using small serving containers this recipe makes about 10 mini-cheesecakes.

Press the mixture gently into the bottom of the serving bowls. Stick the bowls in the freezer while you make the filling.

How to make the no-bake cheesecake filling:

Combine the pudding mix and milk in a mixer. Stir, then let it sit for about 5 minutes to let it thicken.

Add in the softened cream cheese and mix. The mixture should be creamy and smooth!

Gently fold in the Cool Whip until it’s well combined. Get your serving bowls out of the freezer and spoon the mixture into them.

Set the serving bowls in the fridge and let it chill for at least 4 hours. I like to let them chill overnight.

If you can’t find Cool Whip, which is the brand name of whipped topping where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well when mixed into the jello salad. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!

How do you make stabilized whipped cream?

To make stabilized whipped cream, you will need the following ingredients:

  • 4 ounces of cream cheese (softened to room temperature)
  • 1/3 cup powdered sugar
  • 1 tsp vanilla
  • 1 cup heavy whipping cream.
  1. Beat the cream cheese with the powdered sugar and vanilla until soft and smooth.
  2. In a separate bowl, beat the whipping cream just until soft peaks form.
  3. Add the cream cheese mixture to the whipped cream and beat until stiff peaks are formed. Store in the refrigerator until ready to use.

A little tip for making whipped cream faster. Use a metal bowl for whipping the cream and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
