It’s time for a roundup of ten of my best soups and stews. All with easy to follow step by step photo instructions to help you get it right the first time, every time.

Editor’s Note: Originally Published as “A Week of Soups” on January 6, 2018. At that time, I updated and republished a total of 9 recipes. I will be updating this roundup yearly with my current recommendations.

It is winter in Michigan, but you wouldn’t know it this year. We finally have a few inches of snow, so a warm bowl of soup will be just right now.

I have selected ten of my best soup recipes for this roundup. There are stovetop recipes and some in a crock pot. There are beef, chicken, pork, and even two non-meat offering.

My Two Must Try Soup Recipes

Two super easy but wonderful soups.

#1 – Easy One Pot Broccoli Cheese Soup

These incredibly satisfying Pizza Rolls are filled with ground beef coated in pizza sauce, a generous serving of cheese on a hearty sub roll. Make a batch ahead of time and have a quick grab and go meal whenever the need arises.

I’ve been enjoying these Pizza rolls most of my life and I’ve found them to be real family pleasers, especially during those times when everyone is going in different directions and schedules have a hard time matching up.

My mom used to make these when she and my dad went out of town. We were all in our late teens by then and with a batch of these in the fridge and a little extra money for any unforeseen needs, she could go off for a weekend confident that we wouldn’t starve to death.

We’re not at a point where we go off on a regular basis sans kids, but I still love to make these from time to time, especially on Fridays, because it means I can take the weekend off from cooking!

You’ll need: TWO packages of sub rolls, mozzerella cheese, TWO jars of Pizza sauce, Plastic cling wrap, and beef. We’re going to make a dozen of these. If you’d like to make only six, just half it. I always buy saran wrap when I make these as you will be using a good quantity of it and I’m usually running low about this time anyway, so Saran Wrap is just kind of part of the recipe for me.

This is where normal people would have this skillet full of sauteed onions and bell peppers as well. Normal people would like to have sauteed onions and peppers in with this dish. Normal people would find that delicious in addition to smelling downright heavenly. However, I am convinced that out of my entire household (even my own children), I am the only one who was not dropped on their head as a child. No one in my household will eat these if I put onions and bell peppers in them. Normal = me. Abnormal = my family. If you are normal, feel free to add some sautéed onions and peppers. 😀

After your beef is browned, stir both jars of pizza sauce. 

Stir well and cook on medium until bubbly.

Slice each of your rolls as you would a hot dog bun, careful not to go all the way through.

I like to get the buns that aren’t slices so that I can have them like this, it makes the sub so much easier if it isn’t sliced all the way through to the other side.

Fill with beef mixture.

Top with cheese.

Wrap in Saran Wrap.

I like to save my original sub roll bags to put the wrapped rolls back in for an extra layer of protection in my fridge.

Pizza Rolls

Ingredients

  • 2 lbs ground beef
  • 2 Cups shredded Mozzarella
  • 1 Dozen sub rolls
  • 2 – 15 oz jars of pizza sauce

Instructions

  1. In large skillet, brown beef over medium high heat while breaking up into small pieces, until no longer pink and fully done. Drain off any grease.
  2. Add both jars of pizza sauce to beef in skillet. Stir and cook on medium until bubbly.
  3. Slice each bun almost through and spoon beef mixture into the bun. Add cheese on top and seal with plastic wrap. I like to save the bag the rolls came in and place the sealed ones back in there for an extra layer of protection. Place in refrigerator.
  4. When ready to eat, heat individual rolls in microwave for about one minute.
  5. Can be stored in fridge for several days.

Zero Fat Biscuits | 101 Cooking For Two by Gordon Ramsay

Some recipes are for low-fat biscuits, but this one is zero-fat. Using nonfat yogurt to replace the butter and milk, you still get great rise and texture. Plus, just a few ingredients will get you there.

The Story (skip if you want.)

For some unknown reason, I bought a large container of nonfat yogurt a few weeks ago. I think I was going to make a low-fat carrot cake, but I ended up not using the yogurt.

So, time to experiment. I decided biscuits were a great place to start. With a little looking around, I found some guidance but not exactly what I wanted. So I modified my normal drop biscuit recipe with great results.

My rating system of a 4 out of 5 so very nice.


A high 4 or low 5. I love biscuits, but I don’t usually have the yogurt.

Pro Tips: Recipe Notes on Zero Fat Biscuits

I’m now aware that flour has 1 gram of fat per cup (who would have known). By FDA rules these are still “zero” since they are less than 0.5gm per serving.

I usually do drop biscuits, but I did these as cut biscuits that increased the work a little. That surprised my wife a little, and she wanted to know what was different other than the shape. So really the taste is very good.

So what differences are there?

  • First, the slight yogurt tang. Not very noticeable except if you know, it has the yogurt. Not a bad thing.
  • Second, they are fluffy but not flaky. If you want flaky, you should cut in some butter. I miss the flaky a little, but for zero fat, I will live.
  • Third, the outside is a little firmer.

About 176 calories for these LARGE biscuits at six biscuits for this amount. However, I generally do 8 drop biscuits, so they are 132 calories each.

Variations on Zero Fat Biscuits

Healthier Sausage Gravy and Biscuits

Zero Fat Blueberry Scones

Preheat oven to 400 convection or 425 regular.

Combine 2 cups AP flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt. Mix well.

Add 1 1/4 cup nonfat yogurt. Fold in until all dry is incorporated.

You can now make drop biscuits if you want. Or spread the dough onto a floured surface and pat down to about 3/4 inch thick. Cut with a floured 2 1/2 inch cutter. Make them the size you want. Cut, combine scraps, cut, combine scraps.  Place on a PAM sprayed baking pan. I got 6 cut biscuits. I will usually do 8 drop biscuits.

Bake until golden brown. About 12 minutes.

Recipe Notes

Pro Tips:

  1. The texture is not that of a standard biscuit. More fluffy doughy not flaky. There is a bit of a yogurt taste if you pay attention. And the outside is a bit harder.
  2. Greek Yogurt will work but a bit more yogurt taste.
  3. Good for several days and should freeze well.
  4. Originally I had 1 teaspoon salt, but I have decreased the salt to 1/2 teaspoon which reflects my current practice.
  5. This recipe works fine as drop biscuits which are less work.
  6. The nutrition is for 6 biscuits from this recipe, but I now do 8 drop biscuits which are 132 calories per biscuit.
