What do you put in vegetable soup?

My favorite vegetables to put in vegetable soup are broccoli, carrots and peas. However I’ve also added celery, green beans, corn and cauliflower to mine and it works out well. I’m a big fan of using what you have on hand, so raid the fridge and see what you have!

I kept this recipe very simple and added sage, which is my favorite vegetable soup seasoning, and some herb-blend seasoning. You can find this blend at most every grocery store, available from a variety of brands. Choose your favorite!

How do you make vegetable soup quickly?

Need dinner fast? Here are several hacks I’ve done to make this recipe come together even faster:

  • Use frozen vegetables that steam in the bag. You’ll need two 12-oz bags. Microwave them separately for 5 minutes each, then add them to the soup, reducing the cooking time by half in each step.
  • Don’t like frozen vegetables? Use fresh, but do all the chopping and cutting the night before. That way, you don’t have to take the time the night dinner is served! You can also steam the fresh vegetables in the microwave to cut down on time. Simply put them in a glass or ceramic bowl with 3 TBSP water. Cover and microwave for 5-7 minutes. Then add them to the recipe and decrease the cooking time by half in each step.
  • Don’t even want to bother steaming vegetables? Use canned vegetables! No microwaving necessary and you can still decrease the cooking time by half.

–3 TBSP butter

–1/2 cup diced onion

–1/4 cup flour

–1 tsp sage

–1/2 tsp herb-blend all-purpose seasoning

–1 tsp salt

–1/2 tsp pepper

–4 1/2 cups broth

–1 1/2 cups milk or a 12 oz can of evaporated milk

–1/2 cup Parmesan cheese

–1/4 cup instant mashed potato flakes, optional

  1. Melt butter in a medium saucepan. Add onion, seasonings, and flour. Whisk in 1 cup of broth. Heat until bubbling, then add vegetables and another 2 cups of broth. Cover and cook on medium heat for about 10-15 minutes, until vegetables are soft.
  2. Add in remaining broth, milk and potato flakes, if desired. Stir until well combined.

All types of cream cheese work well in this fruit dip recipe! I have tried regular cream cheese, the reduced fat cream cheese and even fat free cream cheese and they all turn out wonderfully! The consistency will be slightly different, depending on what type of cream cheese you use.

How do you soften cream cheese?

Cream cheese is easy to soften – you can set it out at room temperature or soften it more quickly in the microwave.

-To soften at room temperature more quickly, just set the cream cheese on a plate and cut into smaller pieces. The cream cheese should reach room temperature in about 15-20 minutes with this method.

-To soften the cream cheese in the microwave, remove the foil packaging and set the cream cheese in a small bowl or on a plate. Microwave for about 10-15 seconds. If the cream cheese is still cold and hard, continue to microwave for about 5 seconds at a time until the cream cheese is soft throughout. Just make sure not to microwave it too long or it will start to melt!

To start, you will want to stir cream cheese in a bowl until smooth. You can use a spoon, small whisk or an electric mixer. If you are finding that there are a lot of lumps in the cream cheese after stirring, try to soften it a little bit more. You can do this in the microwave, just make sure to only microwave the cream cheese for a few seconds at a time because you don’t want it to get too hot or melt!

Once the cream cheese is ready, gradually add the Jello powder and milk and stir until well blended. Again, you can use a small whisk or an electric mixer to make the mixture even more smooth.

Once the fruit dip is ready, you can serve it immediately or chill in the refrigerator until ready to serve. Serve with any kind of fruit you like!

Creamy fruit dip needs to be stored in the refrigerator and it will stay good for 5-7 days. Generally cream cheese does not freeze very well, so this dip should not be placed in the freezer. This fruit dip recipe is so easy to make that you don’t really need to worry about making it very far in advance – it only takes a few minutes to put together and is ready to serve immediately if needed, although I prefer to serve it chilled.

Is fruit dip healthy?

Fruit dip does have some sugar in it, but you can reduce the fat content completely by using fat free cream cheese and skim milk. Although fresh fruit is healthier without the dip, my kids tend to eat more fruit when they have something to dip it into – anything that encourages you to eat more fruit is a good choice in my book!

Creamy Chicken Toast – A Recipe and a Reminder


I was watching golf the other day, and the announcer said
that great golfers don’t need lessons, they only need reminders, and I
immediately thought how well that saying applies to cooking. Well, this creamy chicken
toast recipe is both a lesson (aka recipe) and a reminder, and a comforting one
at that.

We’ll get to the recipe, but first, the reminder. Sometimes
even I forget just how simple it is to make a cream sauce by reducing heavy
cream. Almost every “cream sauce” you see is really milk thickened with some
type of starch, usually a roux. These sauces are easy, and delicious, and we’ve
made hundreds of them, but once in a while it’s nice to have the thing those
concoctions are meant to mimic.

If you’re worried this might be too rich for you, keep in
mind that by the time we add all the buttery roux to a milk-based sauce, we’re
getting pretty close to the fat content of this. So, why not just do this with
cream all the time? Cream is way more expensive than milk, and that’s before we
reduce it. How much more? You know the old saying…if you have to ask, use milk.

As far as the recipe goes, I loved how this came out, but it
begs for adaptation, especially when it comes to which diced veggies to toss
in. Just be sure you cooked whatever you’re using before you add the cream, since
once that reduces, your dish is done, still crunchy vegetables, or not. Besides
that, not much can go wrong, and a lot can go right, so I really do hope you
give this a try soon. Enjoy!
