Introduction and My Rating

I do not call many recipes “the best.” Too much bragging in that term. I need to feel deep in my heart that the recipe is worthy. This recipe is worthy in every way. This is the best taco soup you can make.

This taco soup is low in fat and calories but is “kicktail” spicy with a ton of taste, plus it is thick enough to be called taco chili. You won’t believe this fits your diet.

The main complaint about most taco soups appears to be the mild washed out taste. Those recipes start by cooking some burger and then dumping into a crock pot with the taco seasoning. The spices are minimal, to begin with, and then diffuse into the liquid, so the meat has little, if any, flavor.

I originally called this “Kicktail Taco Soup” due to the spicing and the great taste. I don’t want a hamburger soup with a bit a taco spices. I want to taste TACO. This is it.

Is it Taco Soup or Taco Chili?

This is a thick soup as published but if you want a very thick chili-like result, leave out the beef broth.

My Rating

My rating system. Great 5 out of 5

It is only a 1 to 5 scale, but this is a 6. I loved it—a personal favorite of mine.

🐄The Meat

This recipe requires ground meat. Generally, that will be beef, but turkey or chicken will be fine.

The ground meat must be browned, spiced, and drained before adding to the pot. Crock pots are great for a lot of things but cooking ground meat is not one of them. You will have clumps of meat along with all the fatty drainage in your dish. Please cook ahead.

👨‍🍳Spicing

The spicing is the key to a great taco soup. Most are way under spiced on an envelope of taco season diluted across the meat and soup base. So hamburger soup with a little spice.

I started with a modified version of my spicy taco meat. Then I bumped up the spices even more and added a little jalapeno. I added all the spices to the meat when cooking to keep some flavor and not have it all washed out in the soup. Excellent, just right.

How hot is it?

This is 6/10 on the heat-o-meter with a teaspoon of cayenne pepper and one jalapeno. Add more spices or another jalapeno if you want to burn.

If you want less heat, cut back the cayenne pepper and/or eliminate the jalapeno pepper. You will still have great taste without the heat.

The Dry Ranch Dressing

I looked at a lot of recipes and really can’t claim an “inspired by.” This Paula Deen recipe had ranch dressing powder, as did several others. It added an interesting taste, a little cool to oppose the heat of the jalapeno. I recommend it, but it is optional.

Can I just a packaged taco season?

Please, no. I will be washed out with no taste.

Recipe Size

I estimate a serving size of about 1 ½ cups.

This is a relatively easy recipe to cut in half. Just adjust the serving area in the recipe card. It will do the math. But the instructions do not adjust. Cooking time is unchanged.

Crock Pot Size

A half recipe will fit nicely in a 3-quart crock pot. A full recipe needs 5-quart or larger.

Storage

Good in the refrigerator for 3-4 days and good in the freezer for 3-4 months.

♨️Stovetop Method

This is easy and fast on the stovetop. Just prepare the meat, onion, and spice in a Dutch oven type pan. Drain well, then add all the other ingredients. Cover and simmer for at least 30 minutes but better of a full hour.

Use the ground meat and beans of your choice.

Prep a medium onion with a medium chop and optionally, one jalapeno by mincing.

Combine 1 lb lower fat ground beef with the onion over medium-high heat. Cook and break up the beef.

While beef is starting to cook, combine the spices: 3 tablespoons chili powder, 1 teaspoon cumin, 1 teaspoon oregano, ½ to 1 teaspoon cayenne pepper, 1 teaspoon garlic powder, 1 teaspoon salt, and ½ teaspoon of pepper.

When beef and onion have cooked for 6-8 minutes and just browned, drain fat. Add the spices and about half the can of tomato sauce. Continue to cook until beef is well browned–about 10 minutes total cooking time. Add the beef to the crock pot.

Rinse 1 can of black beans and 1 can of kidney beans, and add to the pot. You may substitute any beans you want.

Add all remaining ingredients: 1 small can green chilies, two cans diced tomatoes, 1 – 14oz can tomato sauce, the diced jalapeno, one-half envelope of dry ranch dressing mix (optional), and a 14 oz can of beef broth. The beef broth may be omitted if you want this thick.

This crock pot cheeseburger soup is extra thick and cheesy with loads of potatoes and other vegetables. This “stick to your bones” soup will become a family favorite this winter.

Introduction and My Rating

This is a recipe suggested by my wife after having a similar dish at one of our favorite restaurants. Think of it as an extra-thick cheesy potato soup with some burger.

I call this an extra thick soup, but it can also be called a chowder, a thick soup based on a white sauce. A white sauce is based on a roux with flour, which is the recipe’s thickening method.

The model recipe I settled on was a Taste of Home recipe that was stovetop. It was not exactly what we wanted. I wanted the crock pot. Plus, I wanted some other adjustments.

The big change was the thickness of the soup along with the crock pot conversion. I doubled the thickening and made exactly what we wanted. That was done by doubling the roux (butter and flour).

My rating system. Great 5 out of 5


A lower 5 or high 4. I was hungry and loved a thick cheese soup, so I’m going with the 5.

🐄The Meat

This recipe requires ground meat. Generally, that will be beef, but turkey or chicken will be fine. The burger is double the model but suggested by commenters and an obvious must-do.

The ground meat must be browned and drained before adding to the crock pot. Crock pots are great for a lot of things but cooking ground meat is not one of them. You will have clumps of meat along with all the fatty drainage in your dish. Please cook ahead.

Most of us will start with store-bought ground beef, which is fine. Just brown, break apart and drain.

There is a difference between hamburger and ground beef. Ground beef has a variable amount of fat, but the fat is from the beef being ground. Hamburger can have up to 30% fat, and fat can be added from trimming other cuts. Please choose #1, not #2.

✔️Tips

The Potatoes

A starchy potato, like Russet, is probably best here, but others can be used. I decrease the potato down a bit in the original recipe. There was more potato than want we wanted.

Also, be sure that the potato is chopped smaller than then other soups. I suggest ½ inch or a bit smaller.

Frozen diced potatoes will work fine here, also.

What cheese?

I continued my love of Velveeta. It melts well, and I do love the taste. OK, I know that is not “gourmet or foodie” like, but this is an everyday cooking blog.

Any American or cheddar cheese should be fine. Or go wild and use the cheeses of your choice.

Spices

I consider the basil and parsley flakes optional. I did them but felt they didn’t add anything other than a hint of basil that didn’t seem needed.

Make it Bacon Cheeseburger Soup.

Everything is better with bacon. You can add bacon as a topping. Or, for the full bacon experience, add it during the cooking.

You can add 8 pieces of cooked chopped up bacon with the browned meat.

❄️Storage

This and most soup will store in the refrigerator for up to 4 days, tightly covered.

If frozen, the potatoes may lose some texture, and milk-based soups do not freeze the best. It is up to you, but for the best results, don’t freeze.

♨️The Crock Pot

This recipe, as written, needs a 6-quart or bigger size crock pot. If you cut the recipe in half, use a 3 quart or larger pot.

Thickening in a Crock Pot

This recipe depends on a roux to thick the soup. A roux (pronounced roo) is the best way to thicken almost any other liquid like gravy.

Here we are using equal parts of butter and flour. Melt the butter and whisk in the flour and cook for a few minutes. Then add some liquid (milk here) and allow it to thicken before adding to the pot.

You can also use tapioca, cornstarch, or arrowroot, which are less fussy for thickening in a crock pot. What doesn’t do well is just added flour to the recipe.

I do not like cornstarch here since reheating a liquid that has been thickened with cornstarch gives a gel-like consistency.

Peel and chop 3-4 medium potatoes into ½ inch cubes to make 3-4 cups. Peel and shred 2 medium carrots and chop one small onion and one stalk (rib) of celery.

Add veggies to a larger crock pot. Add 2 cups of low sodium chicken broth. Optionally add one teaspoon dry parsley and 1 teaspoon basil. Cook on low for 4 hours.

At 4 hours, brown 1 pound of ground beef. Drain the beef and add to the crock pot.

Wipe out the pan. Melt one stick  (8 tablespoons) butter. Add ½ cup flour, whisk for several minutes until changing color slightly. Add 2 ½ cup milk. Whisk continuously for a few minutes while adding ¼ cup of sour cream, ½ teaspoon salt, and ½ teaspoon pepper.

When thickened, add to the crock pot and mix well. Add 1 pound cheese of choice. Velveeta for me. Cook one additional hour on HIGH. Be sure the potato is tender before stopping.

Good morning, good afternoon, and/or good evening – whichever greeting applies to when you read this! I’m excited to share this ridiculously good recipe for Crock Pot Chicken Tetrazzini with you today. It’s become a school day favorite of Katy and her best friend, SJ.

Since we homeschool, I like to put this on early in the morning and we all have a nice lunch of a creamy noodles and delicious chicken to look forward to. Scroll right on down if you want to get to this yummy recipe.

How to Make Crock Pot Chicken Tetrazzini
Ingredients for Chicken Tetrazzini- And Changing Our Focus

To make this delicious Crock Pot Chicken Tetrazzini, you’ll need:

  • Chicken
  • Cream of Chicken Soup
  • Cream Cheese
  • Butter
  • Minced Garlic
  • Italian Dressing Mix

The sizes and such are in the printable recipe card at the bottom of this post.

Steps for making Crock Pot Chicken Tetrazzini

  • Place chicken in slow cooker.
  • Add cream of chicken soup, Italian dressing mix, and butter. Don’t add cream cheese yet.
  • Cover and cook this on high for three hours or low for about 7.
  • Cut cream cheese into cubes and stir that in. Allow to cook for about thirty more minutes or until cream cheese is melted.
  • Use a wooden spoon to stir it up well and break up the chicken into small pieces as you do – the chicken will come apart easily.  Crock Pot Chicken Tetrazzini - a teenager's favorite!

Serve Crock Pot Chicken Tetrazzini over hot linguini or noodles of your choice like zucchini noodles to keep it low carb.

Slow Cooker Chicken Tetrazzini

Ingredients

  • 1 pounds Boneless Skinless Chicken Breasts or Tenders
  • 1 can Cream of Chicken Soup
  • 1 packet Italian Dressing Mix (.6 oz)
  • 1 Tablespoon Minced Garlic
  • 1/4 cup Butter
  • 8 ounces Cream Cheese

Instructions

  • Place all ingredients in crock pot except cream cheese. Cook on high 3 hours or low 7 hours. Add cream cheese (cut into cubes), stir, cook additional 1/2 hour or until cream cheese melted (no lumps). Stir with wooden spoon to break up the chicken, this will be easy to do. Serve chicken and sauce over hot noodles and enjoy!
