Crock Pot Fudge | 101 Cooking For Two by Gordon Ramsay


Let’s make some great fudge with this super-easy recipe. Have fun making fudge with your child or just by yourself. This crock pot fudge recipe is just what you need for the holidays.

Introduction and My Rating

A slow cooker is perfect for making fudge because it decreases the chance of scorching or burning on low. With the top off, the kids can watch the “action” as the ingredients slowly melt into the fudge they are “helping” you make.

You and the kids can add your choice of nuts like I did. You could top with candies like sprinkles, M&M’s, or Reese’s Pieces.

There are lots of slow cooker fudge recipes out there. There were very few surprises. Some recipes are far from the mainstream, but most use chocolate chips and sweetened condensed milk like my 5 Minute Fudge.

A nice 5. There is better fudge, but this is very nice.

The Chocolate

You can use either semisweet or dark chocolate chips. I suggest a good name brand. Generic/store brands tend to be lower quality chocolate with less cocoa butter.

Butterscotch Chips Option

This recipe gives you an option to use two bags of semisweet or dark chocolate chips or one bag of chocolate and one bag of butterscotch chips. While all the other recipes use just chocolate, I like my fudge with some butterscotch.

But the butterscotch doesn’t melt quite like the chocolate chips. It likes to maintain its shapes even when melted. When doing a stovetop fudge like my 5 Minute Fudge, you are standing there stirring the pot but not so much here.

So the answer is fairly simple, stir well several times and at the end, stir aggressively and mush any remaining chips against the side to make it combine with the chocolate. Not hard, but just be aware of it. Also, I would not even try the generic butterscotch chips.

♨️The Crock Pot

This recipe fits nicely in a 3-quart crock pot but could use a bigger pot. It might melt a little faster. You need to have the chocolate melted well, and if using butterscotch chips, they need to be soft enough to combine. So you need to know your pot and pay attention.

Low Vs. High

Why low for the fudge? Can I just turn it up since I have the top off? No, please don’t do that.

On low, most crock pots get to full temperature over 5-6 hours degrees. On high, some may run up to full temperature in under 2 hours.  Neither low nor high should go above 211°, but some older ones or malfunctioning pots will—they shouldn’t, but some do. That is just too hot for fudge and will ruin the texture.

If you want to hover over the crock pot, stir frequently, and stop when melted, you can use high. But with low, you can dump and come back later. Even if you skip the stirring, it should be fine.

Why is the Lid off?

The first and most obvious thing about this recipe is cooked in an open crock pot with the top off. Yep, no top.

Why? Water is the enemy of fudge, and with the top off, all moisture is vented. Several recipes (usually British if I remember) were very emphatic about this, and I believe they were right.

An added plus is if the kids are “helping” they can look at the cooking and see its progress.

Just leave the top off. Your slow cooker will be slower, but that is fine. I tried just leaving it ajar, and it was not the same. Moisture still accumulated on the lid and dripped back in.

Pan Size

I used an 8-inch square pan. A 9-inch would also be fine. Or make a wreath like my Easy Fudge.

Storage

Fudge can be stored airtight at room temperature for about a week or a bit more. It can be refrigerated airtight for 2-3 weeks.

Fudge can generally be frozen for up to 3 months but may lose a bit of texture. If you are planning on freezing, use real, not imitation, vanilla.

Start with a smaller crock pot. A 3-quart cooker is fine but a larger pot will work. Give it a heavy spray of PAM. The larger pot may cook a little faster.

Combine one 14 oz can sweetened condensed milk, two 12 oz bags of semisweet or dark chocolate chips, and 1 teaspoon vanilla. You can substitute one bag of butterscotch chips for one of the chocolate chip bags but see the discussion above, please.

Cook in the crock pot on low for about 2 hours with the lid OFF. Stir halfway through. And then check occasionally.

Remember TOP OFF and on low.

Prep an 8 by 8 or 9 by 9 pan with crossing sheets of parchment paper. Also, butter corners well to prevent sticking. I like to just a touch of butter under the parchment paper to hold it in place.

You can just butter the dish if you wish. If you do this, then after cooled, set in warm water for a few minutes to release the fudge.

When the fudge combines easily, mix in ¾ to 1 cup of chopped walnuts if you wish.

Pour into the prepared pan and smooth. You may add other toppings at this time. Refrigerate until firm (at least 2 hours).

Remove from pan and cut into serving-size pieces.

Pro Tips

  1. Use two 12 oz bags of semi-sweet or dark chocolate chips. Use a good brand.
  2. You can substitute a bag of butterscotch chips for one of the chocolate. They are generally harder to melt and mix but I like the taste.
  3. You can use a 3 quart or larger crock pot. If you use a full-size pot, this may melt faster.
  4. DO NOT COOK ON HIGH.
  5. KEEP THE LID OFF.
  6. Stir at about 1 hour into cooking then check occasionally after that. It is done when it all is melted and comes together.
  7. Use an 8 or 9-inch square pan. You can line it with parchment paper or just coat it with butter. If unlined, you may need to set the pan in warm water for a few minutes after the fudge is set up to get it out of the pan.
  8. I like to add walnuts at the end. You can add other things if you want or top with sprinkles, M&M’s, or Reese’s Pieces.

Why did I come up with Crock Pot Chili by Christy? Well, any southerner worth their salt has a great chili recipe, preferably a signature one. This is why I set out several years back trying out this one and that, tweaking and adding until I came up with one I could call my own.

Prepare Your Meat Ahead of Time

I’ve tweaked it slightly over the years for my personal taste and for this tutorial I am making it in the crock pot for all of you. This prevents anyone from having to stand over the stove and fret over it while it simmers and the flavor develops fully. If you brown and freeze your meat ahead of time (like I do), this becomes a “toss it in and turn it on” recipe that will make it great for a quick and easy meal!

Ingredients you’ll need to make Crock Pot Chili Recipe:

  • Pinto Beans
  • Kidney Beans
  • Chopped Green Chilies
  • Onion
  • Ground Beef
  • Tomato Sauce
  • Tomatoes (or canned, diced tomatoes)
  • Celery
  • Cumin
  • Chili Powder (Y’all, my 29 ounce can of tomato sauce was camera shy so it’s not pictured above

Now, dump all canned items, liquid and all, into crock pot.

(If you have small kids, just put half the can of chilies in until you make sure they aren’t too hot. Normally they are very mild whenever I get Wal Mart brand, but I got these from another grocery store and they were uncharacteristically hot! That is the first time this has ever happened and I’ve been making this chili for years. I’ll stick with Wal Mart’s brand of chopped green chilies from now on!)

Stir and cover. Cook on low, 7-8 hours or on high, 3-4.

I serve mine with crackers, cheese, and sour cream. Goes great with cornbread!

 

Christy’s Crock Pot Chili

Ingredients

  • 2 lbs ground beef
  • 29 oz can kidney beans with liquid
  • 29 oz can pinto beans with liquid
  • 29 oz can tomato sauce
  • 1 cup diced onion
  • 1/2 C diced green chilies
  • 3 medium tomatoes or one large can of diced
  • 1 1/2 tsp black pepper
  • 2 C water
  • 2 tsp salt
  • 3 T chili powder
  • 1/4 C diced celery
  • 2 tsp cumin

Instructions

  • Brown ground beef until done.

  • In large pot (or crock pot), combine the beef plus all remaining ingredients. If in pot, bring to a simmer over low heat and cook, stirring a few times an hour, for two to three hours. (You can avoid this by using the crock pot)

  • If in a crock pot, stir to combine and cover. Cook on low 7-8 hours or high for 3-4 hours.

 Food Safety Tip from the USDA

“Never leave food out of refrigeration over 2 hours. If the temperature is above 90 °F, food should not be left out more than 1 hour.

  • Keep hot food hot—at or above 140 °F. Place cooked food in chafing dishes, preheated steam tables, warming trays, and/or slow cookers.
  • Keep cold food cold—at or below 40 °F. Place food in containers on ice.

Basically, food can be kept at room temp safely for two hours but should be refrigerated or frozen after that in order to avoid food safety issues.

From time to time I run across a person who has never heard of apple butter. When I am finished gasping in horror at the wasted life they have led up until that point, I make it my first order of business to slather some on a biscuit and get it to their mouth as soon as possible.

Apple Butter Recipe Is So Easy To Make

Apple butter is surprisingly easy to make, especially with the help of a crock pot. Still, folks seem to be intimidated by it. Perhaps it’s the complex taste of the spices combined with how few people actually do make it anymore which causes it to be shied away from in our kitchens. There is no need though as this apple butter recipe is likely one of the easiest things that I’ve brought you so far!

Fill Your House With Sensational Scents

I like to put my apple butter on to cook in the slow cooker just before I go to bed and let it cook all night long. When I wake up in the morning, the house is filled with the most delicious and fragrant smell that I often reserve making it for a time when we have company! I wake up first thing, take the lid off, and give it a few fans just to make sure the house is thoroughly saturated with apple butter smell  We eat a breakfast of biscuits and fresh, hot apple butter while I let the rest continue to cook. This is about as close to heaven as you can possibly get while still drawing breath.

Your Apple Butter Recipe Ingredients Are

  •  Two large jars of unsweetened applesauce (three pounds or fifty ounces),
  • Sugar,
  • 3 lbs granny smith apples,
  • Apple juice,
  • Cinnamon,
  • Cloves,
  • Allspice.
  • Exact recipe is at bottom of page.

  • “Chip” your apples like we did in the apple pie (If you have not read the apple pie tutorial, you now have your first official homework assignment). Do this by peeling them and cutting little chips of them off.

  • Place in large crock pot along with both jars of apple sauce, sugar, spices, and a bit of apple juice (exact quantities at the bottom).

If you feel like it is too much sugar for you or too much cloves or allspice, just do a little less. The beauty of this recipe is that you cook it all night in the crock pot, then taste it in the morning and add what you prefer to make it to your taste. You can also use Stevia or Monk Fruit instead of sugar if you like, but it will require much less as these sweeteners are a lot sweeter than sugar.

  • Stir well and cover with lid. Cook on low overnight, eight to ten hours.

  • After cooking over night or through the day, your apple butter will be dark brown and rich. But it will have a bit too much water in it. This is where you will taste it and see what you want to add. I am including the exact quantities I use at the bottom of this crock pot apple butter recipe.
  • Leave the lid off and continue cooking for a few hours until it cooks down a little bit. “Cooks down” is how old folks say “its too runny, you need some of that water gone!”.

  • After it cooks down a bit, fill up pint or quart jars and seal. If you go through the process of canning this crock pot apple butter, you can simply leave the jars on a shelf in your pantry. Otherwise you would need to refrigerate them and use within two to three weeks.

Ingredients

  • 2- 3 lb 50 oz jars unsweetened apple sauce
  • 3 lbs granny smith apples
  • 4 cups sugar
  • 1 1/2 cups apple juice
  • 2 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp allspice

Instructions

  • Peel and cut apples into small chips. Place all ingredients in the crock pot and stir.

  • Cover and cook on low overnight (eight to ten hours). Remove cover, stir and taste. Add more spices or sugar if desired.

  • Continue cooking for a few more hours, uncovered, until some of the liquid has gone and butter has cooked down a bit.

  • Pour into jars and refrigerate (unless it is canned properly).

  • Serve over hot biscuits, toast, scones, or just eat it out of the jar if no one is looking!
