Sometimes you’re just in the mood for a hot bowl of bold, flavorful chili. Am I right? You bet I am! Especially in the dead of winter when it’s below freezing outside and you’re craving some cheese-topped comfort food. With Crockpot Chili all you have to do is pile all the ingredients in the crockpot and let it do the work.

Best Meat for Chili

I LOVE this recipe for chili because a lot of the flavor comes from the 3 different kinds of meat. You’ll need 1 pound each of ground beef, ground pork and bacon. Doesn’t that sound incredible?! Other meat options are ground turkey, ground venison or even stew meat.

This is what you will need to make Bold Three Meat Crockpot Chili:

  • 3 lbs of meat- 1 lb each of ground beef, ground pork and bacon
  • 3 cans of tomatoes- I like to add one 14 oz can of diced tomatoes undrained, 1 8-oz can of tomato sauce and 1 12-oz can of tomato paste
  • beef broth
  • chili powder
  • 3 cans of beans, around 15 oz each, drained (I used kidney, chili and black beans for variety)
  • minced garlic
  • onion, diced
  • Seasonings: oregano, cumin, salt
  • Worcestershire sauce
  • brown sugar

How to make Homemade Chili in a Crockpot

This is how to make our Bold Three Meat Slow Cooker Chili:

First, cook all of the meat. I like to brown the ground beef and the ground pork together on the stovetop, while simultaneously cooking the bacon in the oven. 

Next, combine all ingredients in the slow cooker and cook on low at least 6 hours, preferably 8-10 hours. Low and slow so that the flavors meld perfectly!

Top with cheese, sour cream and chives.

It’s that easy!

What to do when Crockpot Chili is too spicy

It is totally okay if your Crockpot Chili gets too spicy! My kids have different spiciness tolerance levels, so I have had to find ways to make this Slow Cooker chili less spicy after it’s been made.

Firstly, add more beans. Adding more beans dilutes the spiciness and is a big plus if your kids are bean lovers like mine.

Secondly, add milk. It makes the chili creamier, and totally pulls back the spiciness level of the chili, and usually any other spicy dish.

Adding sour cream or cheese is my favorite way to dilute spice. I add sour cream and cheese to my chili anyway, but that’s just because I love the taste! However, if you find you chili’s spiciness level got too out of hand, just add some extra sour cream and cheese and it will totally take it down a notch.

Also, the sugar in the ketchup will take the spice right out of the chili, so it you have no more options, it’ll work.

What to do when my Homemade Chili is too thick

Adding beef broth is the best way to thin chili. Don’t add water; it will just take the flavor right out of your delicious dish. I prefer to add beef broth, but you can add vegetable broth if you prefer.

Beans for Chili Recipe

I like to use 1 can each of red kidney beans, pinto beans and black beans for my chili. These beans hold up well under several hours of low temp cooking and I love how they look in chili.

After you cook the meat, you simply add all the other ingredients to your crockpot and cook the chili on low for 8 hours. You can serve it after only cooking 6 hours, but those extra 2 hours are worth the enhanced flavor from letting the ingredients meld.

Ingredients

  • 3 lbs meat 1-lb each ground beef, pork and bacon

Today’s post came about one day when I had some BONELESS beef short ribs thawed out and I had no clue what to do with them.  I decided to make boneless short rib tacos and they were SO GOOD, I will definitely be making these again!!

Start with 2½ pounds of BONELESS beef short ribs. I’m sure every butcher shop has their version, but the ones I use look like this and they are about 1/2″ thick:


In a small cup, mix 3 teaspoons of chili powder, 1 teaspoon of ground cumin (don’t leave that out), 1 teaspoon of salt, 1/4 teaspoon of black pepper, 1/4 teaspoon of oregano and 1 tablespoon of dry onion flakes. Mix well and sprinkle both sides of the meat evenly as possible (no need to brown the meat!!)  


Put the seasoned meat in the crockpot in single layer and top with a 4 ounce can of undrained mild green chile’s (I use Ortega).

Cook on low for 6 hours or until they are fall apart tender (it really depends on how thick the meat is). Don’t add any liquid.

Remove the meat from the crockpot and cover with foil to keep warm for a few minutes. There will be about a cup of broth in the bottom of the crockpot…thicken it and coat the meat with the “taco gravy”. Each boneless short rib makes one awesome taco!!

The leftovers (sliced on the bias) made fantastic grilled beef and cheese subs.

I’ve been making these beans for my family for 30+ years and they are always a hit. Now that we are empty nesters, I make a big pot of these and then freeze them in 2 cup containers for a quick and yummy side dish for any meal. 




I put the following ingredients (which are always in my pantry) into a large crockpot before I go to bed and let them cook on LOW all night.


2 cups DRY navy beans (do not soak)

6 cups water

1/2 cup dark brown sugar  (light brown sugar works well too)

3 teaspoons salt

1/2 teaspoon pepper

1 teaspoon dry mustard powder

3/4 cup sweet onion chopped small and sautéed

(1) 8 ounce can tomato sauce

small pinch of cayenne pepper

6 slices crisp cooked and drained bacon

Now, a word about the beans:  Over the years, I’ve tried every kind of DRY bean there is and they ALL work, however, the tiny little “navy beans” work the best and tolerate re-heating without going mushy. I highly recommend that you use navy beans. Make sure you rinse and sort the dry beans, but do NOT pre-soak them.

Put everything into a large crockpot and cover with 6 cups of water. Stir well and set on low for 12 hours. The last 3-4 hours, prop the lid of the slow cooker open (just a little) with a spoon, to thicken the sauce. 

Note about onions: When I decide to make these beans (and I’m out of fresh onions), I use a scant tablespoon of dehydrated onion flakes, they work well.
