Snowball Christmas Cookies

A holiday cookie platter just isn’t complete without Snowball Christmas Cookies.  These are buttery, coated in sugar and packed with pecans.  These will also melt in your mouth.

Snowball Christmas Cookies
 

Ingredients
  • 1 cup soft butter
  • ½ cup powdered sugar
  • ¼ teaspoon salt
  • 1½ teaspoon vanilla extract
  • 2¼ cups flour
  • 1 cup finely chopped pecan
  • 1 cup powdered sugar for dusting

Instructions
  1. Preheat oven to 350 degrees
  2. IN a mixer, beat butter and powdered sugar.
  3. On low, add salt, vanilla, flour and pecans.
  4. Roll into one small balls-I used a food scale and made each ⅝ ounces.
  5. Bake on parchment lined cookie sheets for 10 mins.
  6. Cool just a bit and then place a few at a time in a ziploc with the powdered sugar to coat them.
  7. Once cool, roll in the powdered sugar again!

Cranberry Cheesecake Bars

Luckily it is time for another month of Two Sweetie Pies!  Another month of 2 Sweetie Pies with That Skinny Chick Can Bake means another wonderful dessert! Always a success when you bake from Liz’s blog! Each month we bake up a recipe from each other and keep it a secret until reveal day! Super fun! Make sure you pop over to visit Liz and see which Hugs & Cookies recipe she chose this month.

This month I went with Liz’s Cranberry cheesecake bars….just like the Starbucks one but even better!  These would be perfect around Thanksgiving due to the cranberry sauce, of course!   The filling makes these little bars so pretty, too! I love the layers!

Cranberry Cheesecake Bars
 

Ingredients
Crust
  • 2 cups flour
  • 1½ cups quick oats
  • ¾ cups brown sugar
  • 1 cup butter, at room temperature
  • Cheesecake
  • 8 ounces cream cheese, at room temperature
  • 1 can (14 ounces) sweetened condensed milk
  • ¼ cup freshly squeezed lemon juice
  • 1 teaspoon vanilla
Cranberry filling
  • 1 T. brown sugar
  • 2 tablespoons cornstarch
  • 1 (16 ounces) can whole berry cranberry sauce

Instructions
  1. Preheat oven 350°.
  2. Line a 13 x 9 baking pan with non-stick foil.
  3. In a mixer on low, combine flour, oats, ¾ cup sugar and butter; mix until crumbly.
  4. Set aside 1½ cups crumbs for topping, and press the rest into the prepared pan.
  5. Bake 15 minutes.
  6. Cool completely.
Cheesecake
  1. Beat cream cheese fluffy.
  2. Add condensed milk, lemon juice and vanilla.
  3. Once smooth, spread over crust.
Cranberries
  1. Mix sugar, corn starch and cranberry sauce until smooth.
  2. Pour over the cream cheesecake layer.
  3. Sprinkle reserved crumb mixture over top.
  4. Bake 35-40 minutes.
  5. Cool, chill, cut.

GLAZED PUMPKIN COOKIES

These cookies are a “must-make” for the Holiday season. They are soft, moist and so yummy.

GLAZED PUMPKIN COOKIES

INGREDIENTS

  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup margarine or butter, softened
  • 1 1/2 cups sugar
  • 1 cup pumpkin
  • 1 egg
  • 1 tsp vanilla
  • nuts and/or chocolate chips (optional)

Preheat the oven to 350 degrees F.

In a medium sized bowl, take the first five ingredients (flour, soda, salt, cinnamon and nutmeg) and mix together thoroughly. Set aside.

In another bowl or stand mixer bowl, mix together the margarine, sugar, pumpkin, egg, vanilla and optional chocolate chips or nuts. The margarine may look lumpy and not blended well into the mixture. This is ok because when we add the flour mixture it will blend together just fine.

Add the flour mixture in 2 – 3 batches, mixing thoroughly each time.

Using a spoon or cookie drop, drop cookie batter on to a lightly greased cookie sheet. Place cookies at least 2 inches apart to allow for spreading during baking.

Bake for 15 minutes.

Place baked cookies onto a cooling rack and place the cooling rack on top of the cookie sheet. (See image below) This will help catch the glaze that falls off the cookies.

GLAZE INGREDIENTS

  • 2 cups (16oz) powdered sugar
  • 3 tbsp. milk (may end up using more, depending on consistency)
  • 1 tbsp. butter or margarine
  • 1 tsp vanilla

Mix all ingredients together in a small bowl. If you find the mixture to be too thick (shows up bright white on the cookies) add some more milk until it becomes more transparent on the cookies. It will dry a little whiter on the cookie.

Allow to dry. Grab a glass of milk and enjoy!! With the Holiday season approaching, this is the perfect treat for neighbor and teacher gifts. Here is a printable for you to attach to the gift. Just right click, save and print from your computer.
