With New Year’s Day coming up fast, I thought I’d share some of my family’s classic must have recipes for the big New Year’s Day meal!

First up is black eyed pea. These are a must for New Year’s Day on Southern tables. I make mine in the crock pot with a smoked turkey leg. This is a fuss free way to have perfectly cooked black eyed peas.

Popeye’s Meets Chick-fil-A’s Fried Chicken Sandwich – Available Any Day, and All the Time


In the spirit of full disclosure, I’ve never had a Popeye’s
fried chicken sandwich, but since I’m so familiar with their work, I thought I
could figured out a decent copycat version of their very hard to get sandwich
anyway. Which I sort of did, as far as the taste of the chicken goes, but texturally, I ended up with something much closer to Chick-fil-A, which by the
way, I’ve been to exactly once.

So, if you’re one of these people that enjoy Popeye’s and Chick-fil-A,
this is going to be like eating at both places at the same time. The secret
here, and there, is working in a little MSG into the marinade and breading. And
by little, I mean a lot. Monosodium Glutamate is famous for its ability to make
food taste better, which is certainly does, but it’s also what makes fast food
so highly addictive.

Personally, I’ve very sensitive to this aspect of MSG
consumption, and as soon as I finish eating fast food that’s laced with it, I’m
already intensely craving more, which is why I don’t eat too much of it any
more. It’s also why I don’t stock any MSG in my pantry. I don’t trust myself
with it, which is why the occasional packet of salad dressing mix works so well
for something like this.

As I mentioned in the video, you really want to do this with
a smaller, flatter breast than the one I used. The meat to crunchy coating
ratio should be more like 2 to 1, and not the 4 to 1 that I featured here. Which
reminds me, even though I only did two, the amounts below should be enough for four
fast-food-sized portions. Anyway, no matter how large your breasts, I really do
hope you give this a try soon. Enjoy!

For 4 Fried Chicken Sandwiches:

For the chicken and marinade:

1 cup buttermilk

2 teaspoons kosher salt

hot sauce to taste

1 tablespoon ranch dressing powder

4 boneless skinless chicken breasts, about 5-6 ounces each

For the breading:

1 1/3 cup all-purpose flour

2 tablespoons corn starch

1 tablespoon ranch dressing powder

1 1/2 teaspoon cayenne, for a spicy version

1/2 teaspoon freshly ground black pepper

2 teaspoons kosher salt

For the dip:

1 large egg, beaten

1/2 cup buttermilk

1/4 cup milk

For the rest:

canola oil for frying

4 soft hamburger buns, toasted with butter

dill pickle slices

6 tablespoons mayonnaise

We love popcorn! We have popcorn quite regularly at our house and I love that it’s actually a pretty healthy snack that all of my kids enjoy. Every once in a while, adding some extra sweet stuff in makes it an extra special treat. And for GAME DAY, adding colorful chocolate candies, in your team’s colors, is the perfect treat!

Everyone loves munching on this irresistible sweet & salty popcorn mix. I’ve been looking for the best game day recipes, and I have to say, this popcorn mix, with chocolate candies and you’ll be ready to go for game day.

Ingredients needed for Popcorn Snack Mix

This are the ingredients you’ll need to make game day popcorn mix:

  • Popcorn kernels (or microwave popcorn)
  • White chocolate bark/coating, broken into individual squares
  • Chocolate candies in your team’s colors
  • Canola, vegetable or coconut oil (omit oil if using microwave popcorn)
  • Butterscotch chips
  • Pretzels and/or bugle chips
  • Mini marshmallows
  • Salted cashews

How do you make Snack Mix?

This is how you make game day popcorn mix recipe:

To start, pop your popcorn. You can see the different ways to pop your popcorn below.

Remove unpopped kernels and pour popcorn into a very large bowl. Salt popcorn lightly if desired.

Microwave chocolate bark on high for 1 minute. Add in butterscotch chips and microwave an additional 1 minute. Let sit for 1 minute, then stir gently. Microwave in additional 15 second increments, letting mixture sit for 1 minute and stirring gently before adding additional time.

Pour chocolate over popcorn and stir thoroughly to coat, then spread it out on wax paper. Sprinkle on marshmallows and cashews immediately so that they stick to the popcorn before it cools.

Break large pieces up gently and transfer back to a large bowl. Add in pretzels and chocolate candies with the popcorn. Toss and serve.

Store in an airtight container on the countertop for up to a week. I loved serving these in cute football snack cups!

What is the best way to make popcorn?

You can make popcorn in any one of the following ways:

  • Air-popped: This is easiest if you have an air popper like this one. If you don’t have an air popper, you can use a paper lunch bag. All you have to do it place about 1/3 cup of popcorn kernels in a brown paper lunch bag and fold the top over 1-2 times. Place upright in the microwave and microwave for about 1.5-2.5 minutes – until the gap between pops is one second long.
  • Stove popped: Popcorn can easily be made on the stove and this is the method I prefer because I like the consistency/texture of the popcorn the best. Directions can be found earlier in this post!
  • Microwave: You can definitely use microwave popcorn in this popcorn cake recipe if you prefer. The recipe works a little better if you use a more natural popcorn that does not have a lot of salt or butter on it. The plainer the better!

how to make Game Day Popcorn Mix

What kind of popcorn do you use to make snack mix?

You can use microwave popcorn, air-popped popcorn, or you can use my favorite stove-popped popcorn that is made with coconut oil. I haven’t used microwave popcorn in quite a while. At first it was because of the fact that I kept reading things about how it was so bad for you, but then once I started making my own popcorn on the stove, I realized how much better fresh popcorn tastes! If you haven’t tried it yet, it’s so easy and it’s so much yummier too.

How do you make popcorn on the stove?

I used to just use a large stockpot to make popcorn on the stove (which works great!), but I recently got this popcorn maker and it makes the whole process even easier. The popcorn cooks perfectly every time. To make popcorn on the stove:

  1. Put 1-2 Tbsp of coconut oil in the stovetop popcorn maker or in your stockpot. If you are using a stockpot, make sure you have a lid!
  2. Turn the heat on medium high and add about 6-7 “test” kernels to the pot. Put the lid on and wait for the kernels to start popping.
  3. As soon as the test kernels start popping, you can add the rest of the popcorn kernels. 1/8 cup of popcorn kernels will yield about 4 cups of popped popcorn, so you will want about 1/4 cup of kernels to make 8 cups of popped popcorn. I usually do a little bit extra though, it doesn’t have to be exact!
  4. Replace the lid and either continuously stir the handle on the stovetop popcorn maker or periodically shake your stockpot to prevent the kernels from settling in one spot and burning. As soon as the popping starts to slow down significantly, remove the pan from heat. That’s it!
