Ingredients





Quantity for 4 people – 1 classic baking tray

For the dough:

  • 300 g of Manitoba flour + a little for the folds
  • 200 g of ’00 flour (which you can replace with white or all-Manitoba spelled)
  • 365 g of water at room temperature
  • 1 teaspoon of dry brewer’s yeast – 8 g of fresh brewer’s yeast (or 100 g of mother yeast doubling the leavening times)
  • 1/2 teaspoon sugar
  • 11 g of salt
  • extra virgin oil for seasoning

For the seasoning:

  • 500 g of mixed vegetables (courgettes, aubergines, peppers, potatoes, broccoli, pumpkin, cauliflower…)
  • 10 cherry tomatoes
  • extra virgin olive oil
  • thyme and basil or aromatic herbs of your choice
  • salt

Method

How to make focaccia with vegetables

First of all, prepare the dough and let it rise according to the procedure found in FOCACCIA

Just before the end of leavening, start washing the vegetables, cleaning them and cutting them into small pieces of approximately 1 cm. I advise you to cut them all the same to ensure uniform cooking.

You can cut the cherry tomatoes in half.

Then season all the vegetables together with a drizzle of oil and salt, mix well.

When the leavening has come to an end, turn the dough onto a floured work surface, make 2 folds on a lightly floured surface and roll out the focaccia in a well-greased baking tray, spreading it with your fingertips.

Finally, add all the vegetables to the surface of the focaccia, nestling the cherry tomatoes and making sure that the vegetables are not too close together.

Then let it rise in the pan for another 1 hour until the focaccia reaches the edge.

At this point add another drizzle of oil and if you like another pinch of salt.

Then cook in a static oven already hot at 200° for 10 minutes in the lower part of the oven, the one in contact, so that a nice crunchy crust forms immediately.

Then transfer to the central part and lower to 180° and leave to cook for another 15 minutes.

Be careful that it may take 5 – 6 minutes more depending on the vegetables chosen, always do the toothpick and taste test.

Finally, remove from the oven and leave to cool.

Excellent hot or cold, you can keep it for about 2 days, as long as once it has cooled, you seal it perfectly in cling film.

I love and adore this Fruit Cocktail cake. This is another one of those long ago recipes that we’ve been making in my family for as long as I can remember.

Made from scratch, the ingredients in our Fruit Cocktail cake are simple and the recipe itself is not fussy at all.

Serve warm, cold or at room temperature

I especially enjoy it warm. Then again, I also enjoy it room temp…and cold…and…oh darn it. I just love this cake any way you can give it to me. It is a very unique and moist flavor, unlike anything you’ve ever had!

The ingredients for the Fruit Cocktail cake you’ll need are:

  • Self rising flour
  • Vanilla
  • Sugar
  • Eggs
  • A can of fruit cocktail in heavy syrup.

Simple step by step instructions

  • Place eggs, sugar, flour, fruit cocktail (juice and all) and vanilla in a mixing bowl.
  • Mix on low speed until well blended. Scrape down sides and mix again for about another minute.

  • Spray a 9×13 inch pan with nonstick cooking spray and pour batter into pan.
  • Bake at 350 degrees for forty five minutes or until golden brown.

Instructions for the Fruit Cocktail Cake Topping

  • Place evaporated milk, pecans, butter, sugar, more vanilla, and sweetened flaked coconut in a medium to large sauce pot.
  • Stir.
  • Bring to a boil, while stirring, over medium heat.
  • Keep boiling for one to two minutes.

This icing will remain pretty runny, which will be great when you pour it over your hot cake and it soaks all in.

  • Take hot cake out of the oven.

Pour hot icing over hot cake, spreading as you pour.

TIP: Work fast now because this is going to immediately soak down into the cake and you don’t want coconut to be concentrated in one area and completely absent in the other. Spreading it as you pour it will help avoid this problem.

Ingredients

  • CAKE:
  • 2 cups self rising flour
  • 15 ounce fruit cocktail undrained
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 +1/2 cup sugar
  • SAUCE:
  • 1/2 cup butter or margarine
  • 1 +1/2 cups sweetened flaked coconut
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 cup evaporated milk
  • 1 cup chopped pecans

Instructions

  • Preheat oven to 350. Spray a 9×13 baking dish with cooking spray and set aside.

  • In a large mixing bowl, place all cake ingredients and beat at low speed until blended. Scrape down sides and beat again at low speed for one minute more. Pour into prepared pan.

  • Bake for 45 minutes, or until a toothpick inserted in center comes out clean.

  • While the cake is baking, combine all sauce ingredients in a medium sized saucepan. Place over medium heat and bring to a boil, stirring constantly. Once mixture is boiling, continue stirring and boil for 1-2 minutes. Pour over hot cake and quickly spread with a spatula for even coverage.

Notes

Please note that this recipe calls for self rising flour in order to rise.

Well, today I’ve gathered a collection of those things to me and I’m excited to share them with you. The neat thing is that most of my favorite things are under $20! All together, the prices range from super cheap and ridiculously practical to just one over the top spend that the whole family will love. 1. A little something sparkly!

I bought this ring a few weeks ago and have really enjoyed it. It looks so real! My mother in law loved it so much over Thanksgiving that I gave it to her and ordered me another one. 2. A great timesaver!

Electric Kettle- Once you have one of these you’ll never live without it. It brings water to a boil faster than the microwave and is a tremendous timesaver when it comes to preparing supper. Whenever I need to make rice, stew chicken, or make pasta, I get my water boiling in this first and then add it directly to the pot, cutting cooking time almost in half. 3. Something to help you get in the word!

Gel Highlighters – These are amazing but you have to see them to believe them. They essentially work like a very smooth clear gel crayon. It is the only highlighter I’ll use in my bible because they do not smear and there is no bleed through to the following page. 4. The Best Pen In The History Of Ever

Whenever I am studying my Bible, I always have a four color pen handy. With just the one pen I can circle, underline, highlight, and make notes, all in different colors to help make each action stand out. Having slightly arthritic hands, I really appreciate a Dr Grip pen, so when I found that they offered a four colored version, I was over the moon! 5. A Coffee Cup That Is Easy On The Hands

 

My Bevi stainless steel coffee cup  – Everyone needs a good coffee cup. I tend to use travel cups around the house whenever I’m working on my computer to help prevent spills. I came across this one a few months ago and immediately bought one for my mother, too. Next to my Yeti coffee mug, this is another favorite. It is smaller at the bottom which makes it really comfortable to hold and easy to sit into car cup holders. 6. The Big Splurge (that is absolutely worth it)

For years I’ve had readers ask me if I had an air fryer and for years I never understood why I needed one. Two months ago, I purchased a Ninja Foodi Grill, mainly for the purpose of having a great indoor grill. After much research, the reviews of it’s grilling abilities were amazing and I decided that it was the best option available to me.

When I purchased it, I considered the air fryer to be something I may give a try. Well, on day one the girls wanted to air fry some tater tots and let me tell you, that thing has paid for itself and then some. It is absolutely amazing. Tater Tots, air fried in about ten minutes, come out hot and crispy as if they just came from Sonic. We make vegetable egg rolls, spring rolls, pot stickers, tater tots, breaded chicken, and even veggies in the air fryer. The girls use it daily. We even take it with us when we travel and I’ve bragged so much on it that a few friends have bought their own as well. Last night, I got this text from my friend, Jyl (see left). So how is the grill? I have no idea. I’ve still not got around to using it – but I sure do love my air fryer! Click here.

7. A Purse Sized Treat!

8. The Face Cream I Can’t Live Without
 I’ve gone through three jars of Day + Night Miracle face cream this year. It has a light peppermint smell, is 100% natural, and is a calming formula that contains aloe vera juice, coconut, frankincense, and lavender. It isn’t greasy at all and soaks right up into your skin but leaves my face really well moisturized. I’m prone to breaking out with some creams and this one has kept my face calm, clear, and moisturized. I have psoriasis and have flare ups on my face from time to time. Aloe Vera juice applied directly has been a tremendous help and so I think having this as one of the ingredients is one of the reasons why I have not had a single psoriasis flare up on my face since I started using it. I bought this for Katy, who is just now getting to the age where she needs to carry a purse at times but doesn’t want anything big. It has plenty of room to hold her phone and a little cash. Since getting it for her, her best friend Sara Jane wanted one so I got her one as well. My 19 year old niece saw it and wanted one so I got her one. 11. A Dependable Watch You Can Actually See And Never Have To Take Off

I know smart watches are all the rage but when it comes to a watch, I prefer this one. It’s waterproof so I never take it off. The numbers are big enough for me to see without my glasses on. It has a day and date on the screen as well and a button to make it light up so I can see what time it is when I wake up in the middle of the night. I also have mine set to go off daily when I want to wake up and I set it to chime every hour on the hour to help me keep pace with the day (you don’t have to have the chime or alarm turned on).  Click here.
