Mama Reed's Fried Peach Pie Bars


There is such a treasure found in recipes that have been passed down through the generations. My great grandmother’s fried peach pies are the stuff of legend in my family and so when I was thinking over a new bar recipe for my third cookbook, Sweetness, it didn’t take long until I dreamed up the idea of mixing her bursting-with-flavor peach pie filling with a shortbread crust and a streusel topping.

As a result, I consider this recipe to be a collaborative effort between my great grandmother, Lela and myself. This simple bar as all of the flavors I love in Lela’s fried peach pies, and still brings to mind sweet memories of her. The fact that it happens to have a lot less fuss involved is just a double win!

Let’s dive on in and let me show you how to make these sweet babies!

The recipe and all of the ingredients and their amounts are in the printable recipe card at the bottom of this post. 

Making the crust: Place all crust ingredients in a medium mixing bowl and cut together with a fork or pastry cutter until well combined and form a crumbl dough. Press into bottom of prepared 9×13 dish. Bake until just lightly browned around the very edges, about 20-25 minutes.

Make the peach filling: Place all fruit filling incredients in a medium sized saucepan and cook over medium high heat, stirring often at the start, until it comes to a boil. Reduce heat to medium low and simmer, stirring every now and then and breaking up large pieces of the peaches, until thick and reduced by about half, 15-25 minutes.

It is vital that you use dried peaches in this in order to have the punch of flavor. If you want to use fresh or canned peaches, you’ll need to experiment. Try to get them thick like the dried ones are by cooking for a period of time. I’ve never made this with fresh, though, and I suggest dried because that is what my great grandmother used. In fact, she used to dry her fresh peaches on large pieces of tin in her front yard on hot summer days! 

Spread this mixture over prepared crust.

Make the streusel: Combine all streusel ingredients in a small mixing bowl and cut together well with a fork or pastry cutter until well mixed and crumbly. 

Sprinkle all over the top of peach mixture.

Return pan to oven and bake 15-20 minutes, or until top is lightly golden. Allow to cool before cutting (but they are wonderful warm!).

Lela’s Fried Peach Pie Bars

All the flavor of my great grandmother’s delicious Fried Peach Pies in a simple bar form!

Ingredients

For the crust

  • 2 cups all purpose flour
  • 1 cup (2 sticks) butter at room temp
  • 1/2 cup confectioner’s sugar

For the fruit filling

  • 6-7 ounces dried peaches not fresh or canned
  • 1 cup sugar
  • 1/4 cup (1/2 stick) Butter
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon

Streusel topping

  • 1/2 cup (1 stick) butter at room temp
  • 1 cup all purpose flour
  • 1/2 cup confectioner’s sugar

Instructions

  • Preheat oven to 350 and spray a 9×13 baking dish with cooking spray; set aside.

Note: This recipe/post/story was originally published in 2010. I’ve updated the photos and am sharing it again. My children are nearly grown now, one of them is, and I’m so glad I took the time to watch them grow!

Today’s introduction is gonna be on the short side but I know y’all will understand. My two kids are busy laughing and growing up in the other room so I’m anxious to get in there and laugh with them and maybe try to get them to stay kids a little bit longer. ~sighs~ Being a parent is such an odd experience. Some days seem to go on forever and then just when you least expect it they hit the fast forward button on you and threaten to leave you in the dust if you don’t hurry after them! They may be destined to outrun me in the long haul, but I sure can keep them my babies for a few more years. Alright, enough of my Mama ramblings, on to the ice cream…

I’ve never had honest to goodness fried ice cream, but my mother has and raves about it. Good news is, she raves about my unfried fried ice cream just as much! Although different (and definitely not fried) this is an easy way to prepare a yummy dessert with a delicious crunchy topping. I like to serve it topped with whipped cream, drizzled in honey, and with a little cherry for effect.

This is easy as pie to make and oh so good. I hope you get to try it soon. I served it to my Mother and Father in law on their last visit and my Mother in Law has been anxiously waiting on me to post this recipe. Here ya go, Linda!

No Fry Fried Ice Cream Ingredients

You’ll need: Cereal, Vanilla Ice Cream, Cinnamon, Butter, and a little Sugar.

What kind of cereal? I like to use one of those Honey Bunches of Oats but Cinnamon Toast Crunch also works really well. Don’t be afraid to experiment with different cereals and flavors here. Have a little faith in yourself and your own creativity. There is a great quote from a Winnie the Pooh story that reads “Promise me you’ll always remember: You’re braver than you believe, and stronger than you seem, and smarter than you think.” That applies double to you :).

P.S. Try to get the best quality vanilla ice cream you can find. 90% of them out there today aren’t that great. Edy’s is good, Kroger’s Private Selection is good, and we all love BlueBell. I’m sure there are other good ones out there but those are the three I can personally recommend.

Making Ice Cream Balls for No Fry Fried Ice Cream

Scoop out your ice cream and place it on waxed paper lined baking sheets. Place these scoops back into the freezer for about an hour, or until very hard.

Stir that up well.

Place your cereal in a gallon sized zipper bag and crush it. I just used my hands to crush this. You can use a glass or rolling pin if you like but my hands are the one kitchen tool I never have to look for so why bother using something else? Most days,  life is so much simpler than we would have ourselves believe.

Pour your butter blend into the bag with the crushed cereal.

Seal the bag and mix it up good with your hands.

Now pour your cereal out onto a cookie sheet. I line mine with aluminum foil to have easier cleanup. Place this in the oven at 350 just until toasted. This won’t take but five minutes or so. YOU HAVE TO KEEP AN EYE ON IT BECAUSE IT WILL BURN IF YOU DON’T

Now get your ice cream balls from the freezer. Using your hands, roll each one around while pressing into the cereal mixture.

Cover these and return to the freezer.

Top each serving with whipped cream, a cherry, and honey drizzled over.

Best if served same day as cereal won’t be as crunchy a day or two later.

Un-Fried, Fried Ice Cream

Servings: 10

Ingredients

  • Container Vanilla Ice cream I am using 48 oz size
  • 3 Cups Honey and Oats Cereal* or cereal of your choice
  • 3 Tablespoons butter
  • 3 Tablespoons sugar
  • 1 Tablespoons cinnamon

Instructions

  • Scoop frozen ice cream out onto waxed paper lined baking sheets and place in freezer for at least an hour, or until hardened.

  • During that time, place cereal in gallon zipper bag and crush. Melt butter in microwave and stir in sugar and cinnamon, pour into bag with cereal and seal. Knead with hands until well mixed. Pour out onto lined baking sheet and place in oven at 350 just until toasted, about five minutes. Keep close watch as cereal will burn easily.

  • Remove from oven and allow to cool. Roll hardened ice cream balls in mixture, pressing lightly as you do so. Place coated ice cream in 9×13 dish and return to freezer or serve immediately.

Notes

For serving, drizzle with honey and top with whipped cream and a cherry. Can also use corn flakes or cereal of your choice such as Golden Grahams, Cinnamon Toast Crunch, etc.

You can count the seeds in an apple, but you can’t count the apples in a seed.

Making fried rice is really simple and I love how I can adjust the recipe to suit our family’s tastes. We love more eggs and less soy sauce. It’s incredibly versatile- taste it and adjust as you’d like.

This is one of my favorite quick & easy dinners and the good news is- the rest of my family enjoys it too! It’s one of my “leftovers” dinners because I usually make it with chicken and rice leftover from another meal. The rice can even be stored in the freezer until you’re ready to use it! Just defrost it and it’s ready to go. A couple of the ingredients are flexible- I like it with more egg and less soy sauce. Taste it though and adjust to your family’s liking! I usually serve this with store bought egg rolls or pot stickers on the side.

What kind of rice to use for Fried Rice recipe?

I prefer making fried rice with regular long-grain rice. You can also use Jasmine rice or even brown rice, just make sure it’s cooked the day before you plan to make your fried rice. Just FYI too, I’ve used sushi rice, or short-grain rice (our popular brand is Calrose or Botan rice) to make fried rice. It tastes just as good, you just have to cook it quicker- over higher heat for less time, so it doesn’t turn soggy.

Fried Rice with Day-Old Rice

Fried Rice requires rice with a lower amount of moisture, so it’s best to use day-old rice (or 2-4 day old rice!) I often make a big batch of rice for dinner one night (to serve with Mongolian Beef or Easy Chicken Curry) and then freeze the rest in 6 cup increments, so it’s ready to be made into fried rice. Just thaw out frozen rice and use it to make fried rice cold- no need to reheat!

Fried Rice with Warm Rice

If you don’t have day old rice to use and you want to make fried rice, spread it out on a cookie sheet and bake it in a 250 degree oven for 10-15 minutes, cool it for 10 minutes and then place it in the freezer for 20 minutes. You can then use the cold rice in this fried rice recipe.

Ingredients needed to make Fried Rice:

Assemble the following ingredients together to prepare to make easy fried rice:

–3 TBSP butter

–1/2 cup diced onion

–3-4 eggs

–1 cup diced cooked chicken

–6 cups cooked, cold white rice

–1 12-oz bag frozen peas & carrot vegetable mix, cooked

–3-4 TBSP soy sauce

–1 TBSP sesame oil

Heat butter in a large skillet over medium high heat. Once butter is melted, add in onion and cook for 2-3 minutes, until translucent. Add in eggs, one at a time, stirring before adding another one.

Once egg is pretty much cooked, add in chicken and stir often for another 2-3 minutes. Add in rice and stir to combine. Add in vegetables. Cook, stirring often for another 5-6 minutes, until rice is hot. Add in soy sauce and stir to combine, cooking an additional 5 minutes.

 

Remove from heat. Drizzle sesame oil over rice and stir once more. Serve hot!

Time Saving Tips for Making Homemade Fried Rice

Here’s how you can make our recipe for fried rice even faster.

The trick for making fried rice even quicker is to have several steps going on at once. Here are a few ideas:

  1. Use pre-diced onions. You can purchased them in the produce section of most large grocery stores, or by the frozen vegetables. No need to thaw, just add them frozen directly to the hot butter.
  2. Get the frozen bag of peas & carrots that can steam directly in the bag. Microwave it while you’re cooking the onions.
  3. Use store-bought rotisserie chicken, diced into smaller pieces.

How healthy your fried rice is depends on what you put in it. Preparing your chicken fried rice with loads of vegetables and lean chicken makes it much healthier. If you want to make your Chicken Fried Rice healthier you can always decrease the amount of soy sauce you use, and increase the amount of veggies. The more veggies in it the better!

When you end up with extra rice in your rice cooker after a meal, you have several options to store it.
