Easy Fudge | 101 Cooking For Two by Gordon Ramsay

An excellent and easy fudge for the holiday season. Everybody will ask for the recipe.

While this recipe seems to be all over the internet, we first saw it when Rachael Ray was on Oprah, and Rachael Ray Throw a Holiday Party many years ago. So we frequently call it Rachael Ray’s 5 Minute Fudge

Since then, this easy fudge has been a Christmas tradition at our house. It’s been made for presents and cookie exchanges along with extra for the family.

We usually create Christmas Wreaths as gifts with it. But it is equally great standard fudge.

Pro Tips: Notes on 5 Minute Fudge

The Ingredients:

Originally this recipe calls for a bag each of chocolate chips and butterscotch chips. This is my preferred version, but you may use all chocolate if you wish.

Butterscotch chips seem to not melt as well as they did years ago. So if you go with butterscotch chips, at the end you will need to spend a few minutes smashing them to get the last few to combine.

In this recipe, quality matters so use chocolate and sweetened condensed milk that you trust.

Making a Fudge Wreath

You can make a fudge wreath by using a 9 inch round pan. Butter the pan will then place the can from the condensed milk in the center covered with plastic wrap.

Add the fudge. Decorate as you want. Let cool then remove from pan. You may need to set the pan in warm water to loosen the fudge.

Decorate as you wish. Some candied cherries in red and green are nice. I put some walnuts on top along with some red and green sprinkles.

The original recipe used low heat. Low on my stove is very low, so I used medium-low.

A non-stick pan is highly recommended.

Of course, you don’t have to make a wreath, a 9X9 pan works fine. I like to line my dish with crossing parchment paper but a good coat of butter will work. You might need to set the dish in hot water for a few minutes to remove the fudge.

Start with a medium non-stick saucepan over low or medium-low heat. I have both chocolate and butterscotch chips pictured but two bags of chocolate chips will be what most people will use.

Add two bags of chips and one 14 oz can of sweetened condensed milk to a non-stick pan,  Stir continuously until all is melted and mixed.

While the mix is melting, prepare a pan for the fudge. You may use a 9X9 square pan with some parchment paper.

When fudge is completely melted (about 5 minutes) remove from heat. If you used butterscotch chips, you may need to smash a few that did not melt completely. Add one teaspoon vanilla and mix. Add 1 cup of chopped walnuts. Other things can be substituted or added here.

Place into your prepared pan.

Allow to cool. Then cut into serving pieces.

Ingredients

  • 24 oz semi-sweet chocolate chips May substitute one bag of butterscotch chips for half the chips
  • 14 oz sweetened condensed milk
  • 1 teaspoon vanilla
  • 1 cup walnuts chopped

Pro Tips:

  1. Quality matters, use good ingredients.
  2. You can use 2 bags of chocolate chips or one bag each of chocolate and butterscotch.
  3. If using butterscotch chips, they don’t melt as well as chocolate and will need to be smashed some at the end.
  4. A nine-inch square pan lined with parchment paper or a well buttered.
  5. If using parchment paper. A few dots of butter helps hold it in place.
  6. Decorate of desired immediately after placing in pan.
  7. Cool before removing from pan. You may need to set the pan in hot water to loosen the fudge.

It’s such a simple candy and everyone just devours it. It’s super creamy with amazing flavor and hello, it’s also insanely pretty. Tiger Butter is an absolutely delicious, insanely easy type of Christmas candy! It requires just 3 ingredients and a few minutes to make. Tiger Butter is a soft chocolate candy with a smooth, rich peanut butter flavor. It has the consistency of fudge but is the size and shape of a bark candy.

Tiger Butter is SO easy to make! First, assemble your ingredients. You’ll need semi sweet chocolate chips, white chocolate chips and creamy peanut butter. I think chunky peanut butter would taste good in this recipe, but the swirls wouldn’t look nearly as pretty, so I use creamy peanut butter.

Melt the white chocolate chips in the microwave. You can also heat the peanut butter for 30 seconds. Combine the two ingredients and stir gently until smooth and well combined. Place a piece of parchment paper on a cookie sheet. Pour the peanut butter mixture onto the parchment paper. Use a rubber scraper to smooth the mixture out into a rectangle shape. It’s okay if it doesn’t reach the sides of the pan.

Heat the semi-sweet chocolate chips until melted and smooth. Spoon dollops of chocolate out in lines over the peanut butter mixture. Once all of the chocolate is transferred, use a sharp knife in long, smooth strokes to swirl the chocolate until your desired design is achieved. Sometimes I swirl it more, other times less, but it’s always fun! Let chocolate cool to set, then cut into 1.5″ squares.

Melting chocolate in the microwave is easy if you go slowly. Always use a glass or ceramic bowl and chocolate that’s not old. To melt 1 cup of chocolate chips I’d begin with 1 minute in the microwave. After the 1 minute, let chocolate sit for 2-3 minutes. Then, gently stir and see if chocolate begins to melt smooth. If it’s still really solid, add 20 seconds in the microwave, then let it sit again. Often chocolate looks like it’s not melted when it really is, and you don’t know for sure until you gently shake or stir it. If your chocolate melts but it’s too thick to work with, try adding 1/2 teaspoon of coconut oil or shortening, then letting it melt and stirring it in.

  • 1/2 cup creamy peanut butter
  • 1/2 cup semi-sweet chocolate chips

Directions for making Tiger Butter Christmas Candy

  1. Line a bakers quarter sheet (or a 9×13 glass pan) with parchment paper or foil.
  2. Put semi sweet chocolate chips in a small glass bowl. Microwave for 1 minute and stir gently until smooth. Set aside.
  3. Pour vanilla chips in a medium sized glass bowl. Microwave for 1 minute 30 seconds. Stir gently until smooth. Add peanut butter and stir until well combined and smooth.
  4. Pour vanilla-peanut butter mixture onto the prepared pan. Mixture won’t reach the edges of the pan and that’s OK. Once it’s settled, take the melted semi sweet chocolate and pour it onto the vanilla-peanut butter mixture in lines.
  5. Take a knife and run it the opposite direction of the chocolate lines you created, to achieve a swirl pattern. Run your knife through the mixture as much as you’d like, to create your desired swirl pattern.
  6. Let cool either on the countertop or in the fridge. Cut into small squares. Store in an airtight container.

What’s the best chocolate to use for making candy?

Use the absolute BEST chocolate you have access to! Especially for this recipe where there are only 3 ingredients, each one really counts. I used Guittard white chocolate chips and semi sweet chocolate chips for this recipe. I’ve also used Ghirardelli chocolate chips, but they’re harder to find.

Can you freeze Tiger Butter?

Yes, you can freeze Tiger Butter in an airtight container for up to 1 month. It’s best to stack layers with pieces of parchment paper in between so that the pieces stay pretty.
