I chose the pistachio cream because it is the simplest thing, but if you want you can use pistachios reduced in cream or flour.

You can also change nuts and use almonds, hazelnuts or nuts.

Of course, every dried fruit has its own degree of sweetness, if you use a cream or a flour you must absolutely adjust the amount of sugar consequently: if you take a packaged cream it is much sweeter than a homemade pistachio cream, so the final flavor of your donut can change radically.

If you use dried fruit flour or cream, also the dose of liquids must change.

To obtain lactose-free pistachio donut, it is necessary that the pistachio cream does not contain it, or it is necessary to make a pistachio cream at home, simply by chopping the pistachios, previously toasted, with a fairly powerful mixer. Operate it intermittently to keep it from overheating until you get a smooth cream (it will take some patience!).

The milk you see me using in the recipe is lactose-free, alternatively you can use a vegetable drink you like. Be careful if you use drinks with a very present taste or sweets (such as almond drink) because they alter the flavor and sweetness of the dessert.

A neutral drink that does not affect the taste is the rice milk.

  • 320 gr of pearl barley
  • 600 grams of pumpkin pulp (net waste weight)
  • 1 liter of boiling water (or vegetable broth)
  • 1 cup full of dry white wine
  • 3 – 4 tablespoons of extra virgin olive oil (intense flavor)
  • 2 sprigs of rosemary
  • salt
  • 2 – 3 tablespoons of parmesan or parmesan (optional)

Method

How to make pumpkin barley

First of all, slice the pumpkin with all the peel and follow the steps to prepare the BAKED PUMPKIN

Finally, turn well and leave to simmer with the lid on for 10 – 12 minutes, adding water if you see it dry and turning from time to time.

Finally find out, evaluate the cooking, the time required depends a lot on the type of barley, remember that it must be soft to the bite, although al dente!

When cooked, add the salt, remove the sprigs of rosemary, stir over a low heat with a drizzle of oil and the Parmesan!
