While I might be biased toward this recipe, I think it’s simply the best French Bread recipe ever (and trust me, I’ve been looking!) When you figure out how to make French Bread from scratch, you’ll wonder why you hadn’t tried it sooner. With soft bread on the inside and a chewy outer crust, you have the perfect classic French Bread recipe for meeting all of your bread eating needs.

There are several steps in the recipe, but they’re quick and easy!

How to Make French Bread at Home

French breads are simple by nature, but until I found this recipe on a blog called Jamie Cooks It Up I had been looking for the perfect french bread recipe. Everything was off in one way or another and seemed to be more work than they were worth.

I recommend reading the instructions a few times before starting just because there are a lot of steps and it helps you to stay focused (especially the first time you make this recipe).

The recipe for this homemade french bread is vegan but the egg wash used to help get the crust a beautiful shade of brown is obviously not. You’ll need to use cooking spray or some other vegan alternative for the egg wash.

What to serve with French bread?

French bread is often used as a side dish besides a hearty soup, just cut a slice and lather on some spreadable butter and you have yourself a tasty treat. You can also use it for french bread pizza instead of pizza crusts, or turn the stale loaves into bread pudding. There are a lot of great options out there besides soup and sandwiches, but eating fresh and warm French bread straight out of the oven is a good enough reason for me!

Fabulous French Bread Ingredients

-1 TBSP shortening

-1 TBSP coarse salt {or 1/2 TBSP regular salt}

-2 TBSP sugar

-1 cup boiling water

-1 cup cold water

-1/3 cup warm water

-1 TBSP yeast

-5 – 6 cups white all purpose flour {I used bread flour}

-1 egg

Here’s how to make this French Bread recipe:

Dissolve Yeast

Place 1 cup of hot water in the microwave for 3 minutes to get it boiling.

In another container, dissolve the yeast into the warm water (not the boiled water!) Stir it around until it is all mixed.

Combine the salt, shortening, and sugar in the bottom of your stand mixer with a fork.  {I used my whisk attachment on high. It took about a minute and was perfect.}

Next, pour the boiling water over the shortening mixture. Mix slightly to combine.

After that, pour in the cold water and turn the mixer on low.

Then pour the warm water and yeast into the mixer bowl.

Begin to add the flour, one cup at a time, until the dough pulls away from the side of your mixer. Add the dough enhancer at this time, along with the flour. The dough should be balmy but not sticky.

Then let the dough mix on high for 8 minutes.

First Rise

Turn the mixer off and remove the dough hook. Let the dough rise in the mixer for about 20 minutes. {This step can actually be skipped if you are in a hurry, but I recommend it as it allows the dough the chance to rest and improves the flavor and texture.}

Separate the dough into two parts and place them on a large jelly roll pan sprayed with cooking spray. Let the dough sit for about 5 minutes. Letting it sit will make it MUCH easier to shape into loaves.

Spread the dough out with your hands. Stretch it slightly until you have an oval about 1″ in thickness. Roll the dough up into a log shape. Take the ends of the log and fold them into the middle, with the ends touching. Turn the loaf seam-side down onto a greased pan. I used my french bread pans, but you could also use a jelly roll pan. Repeat with remaining dough.

Using a sharp knife, quickly cut 3 diagonal slits into the top of each loaf.

In a small bowl, whisk the egg until frothy. Cover the loaves with egg wash, making sure to get it in each slit.

Second Rise

Place the loaves in a warm 170 degree oven and let them rise for about 15 minutes.

Turn the oven up to 400 degrees and then re-set your timer for 15 minutes. {Leave the loaves in while the oven increases in temperature.}

Turn the oven down to 350 degrees and turn the pan around in the oven. Bake for another 10-12 minutes, until the loaves are a nice golden brown. If you prefer crustier loaves, mist the outside with water a few times during the final 10 minutes of baking. Enjoy!

Yes, you can freeze your French Bread for up to 3 months if you keep them in an airtight container or keep them well wrapped. Just thaw them at room temperature for a few hours and pop them in the oven to warm up to help recreate the fresh from the oven feel you got when they were newly baked.

How Long Will French Bread Stay Fresh?

If left at room temperature and kept well covered and wrapped, your french bread can be expected to last up to 3 days. Just make sure to keep it on the counter/room temp or in the freezer because placing your bread in the fridge will cause it to lose moisture and dry out faster.

Homemade Cornbread is very simple to make and I love this recipe because it really is the perfect cornbread. Sometimes cornbread is really sweet and tastes more like cake, but this cornbread has a very subtle sweetness which just means you can add more honey on top, right? I’ve also had a lot of cornbread that is too dry – anyone else? This recipe is perfectly moist, but still a bit crumbly, just like cornbread should be.

Since my whole family loves honey on their cornbread, I like to poke holes in the cornbread right when it’s done baking. Mix some honey and butter together and drizzle that all over the top. Because of the fork holes, the honey butter will soak into the cornbread evenly and not just sit on the top. If you’ve never tried doing this, you’re missing out!

Flour – All purpose flour works great!

Sugar – Adds just the right amount of sweetness to the cornbread. Less than a cup for the whole recipe which makes a large batch (9X13).

Baking powder and salt- Don’t skip the baking powder and make sure you use the full amount! Make sure your baking powder is not old or expired because it won’t work as well.

Cornmeal – Can be found in the baking aisle near the flour. You can use either yellow or white cornmeal, but yellow cornmeal is a little bit sweeter and that’s what I prefer to use.

Eggs – This recipe uses 5 eggs!

Milk – I usually use regular 1% or 2% milk, but any type of milk should work fine. I’ve never tried using a dairy-free milk, but I would imagine it would work fine too!

Butter flavored Crisco – You can use regular shortening, but the butter flavored variety adds a bit of flavor and it’s what I prefer to use in most baking recipes that call for shortening.

Preheat oven to 350°.

In a large bowl, mix the flour, sugar, baking powder, salt and cornmeal together.

Add the eggs, milk and shortening and use an electric mixer to mix until combined. You’ll have to mix for a minute or two to break up the shortening. There will still be little lumps of shortening, but as soon as all the larger pieces are gone and the shortening is mostly incorporated, stop mixing. You don’t want to overmix the batter.

Pour into a well-greased 9X13 pan and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. The cornbread should be a light golden brown on top. Make sure not to overcook the cornbread or it can start to dry out.

As soon as the cornbread comes out of the oven, melt together 1/2 cup butter and 1/2 cup honey. This is easy to do in the microwave. Poke holes in the cornbread with a fork and then drizzle the honey butter mixture over the cornbread.

Cornbread pairs well with a lot of different meals, but we usually serve it with soup. You just can’t have taco soup  or chili without cornbread! Cornbread also pairs well with baked beans. It also works well as a side for barbecue! It goes perfectly with Grilled Spatchcock Chicken, BBQ Chicken…pretty much anything that goes on the grill!

Why did my cornbread not rise?

This recipe always rises perfectly, likely because it has a lot of baking powder in it! I’ve never used that much baking powder in a recipe before but it works! Just make sure that your baking powder is not expired. Also, make sure not to overmix the batter as this can cause the cornbread to fall as well.

Best Bread Pan?

I bake a lot of bread and the pans I prefer are either ceramic, glass or cast iron. These pans will bake bread more evenly and release the bread more easily after baking.  I don’t like using dark or nonstick pans because the bread cooks unevenly. It darkens on the outside before the bread is cooked on the inside, so the coloring is uneven. Read more about which bread pan is the best here!

How to make Homemade White Bread

If you’ve never made bread before, here is the basic formula for making your own at home. It really is an easy process and you’ll be thrilled with the results. Plus your entire house will smell like freshly baked bread which is amazing.

NOTE: The recipe I use to show the steps for making homemade bread is my EASY WHITE BREAD RECIPE.

Step 1: Assemble Bread Ingredients

You’ll need warm water, granulated sugar, instant OR active dry yeast, 1 egg, canola oil, salt and flour. That’s it!

Step 2: Dissolve the yeast and activate it by Proofing

This is a simple process that takes about 5 minutes. You can watch the video above to see what yeast looks like when it’s proofed. It’s possible to kill yeast if you use too hot of water, so aim for slightly warmer than luke-warm, or about 105°F. Combine warm water and the sugar, then stir to dissolve. Add in the yeast, give it a quick stir and then let it sit for 5 minutes. You’ll begin to see the yeast puff up until it covers the entire surface of the water.

Step 3: Add remaining ingredients and mix

Add the egg, the oil, salt and flour, then mix using an electric stand mixer until it’s well combined, about 2 minutes. You can mix by hand but it will take longer.

Trust me, taking an extra 5 minutes to let your mixer knead the bread is worth it! Going through the process of kneading bread dough is crucial for bread with great texture. Kneading dough allows gluten to form which enables dough to rise better, be lighter and fluffier. You can knead by hand or with a mixer. I use the dough hook on my mixer to knead bread dough. If you knead by hand, you’ll want to knead for 7-8 minutes, depending on how consistent you are.

Step 5: First Rise

Place your lovely smooth, elastic bread dough in an oiled bowl and cover it with plastic wrap or a clean towel. I think plastic wrap works better because it traps hot air inside and thus, my dough requires a shorter first rise. Be sure to spray the side of the plastic wrap that will touch the dough, so that it doesn’t stick.

If your house is cool, your bread will take longer to rise. In the wintertime when my house is cooler than normal, I like to turn the oven on for 2-3 minutes, then turn it off and let the bowl of dough rise in there. The oven traps the heat for a longtime and it’s the perfect atmosphere for rising dough.

This White Bread recipe only needs to rise for 15 minutes.

Step 6: Punch Dough and Shape it

Punching the dough down quickly releases any air pockets that have developed and helps your bread have a more consistent texture.

Take the dough and cut it evenly in two. If you want to be really precise you can always use a scale to make sure they’re even.

Shape each dough by rolling it gently into a ball and rolling it 2 or 3 times on the counter top so that the ball is more oblong. Tuck the ends underneath so that the loaf looks smooth.

Place in the pan. It doesn’t need to be touching the sides of the pan.

I like to brush an egg wash on the top of this bread to give it that smooth, shiny crust. It’s still soft and it ends up having incredible flavor. Just whisk together 1 whole egg and 1 TBSP water, then brush all over the outside of the dough, making sure to cover the entire surface of the dough.

Step 7: Second Rise

This White Bread only has a 10 minute second rise. I just place the pan on the stove near the oven while it preheats.

Step 8: Bake the Bread

You’re nearly there! This sandwich bread bakes for about 35 minutes. It bakes at a higher temp than other bread recipes- 425° F. Make sure your oven rack is on a lower setting so that the top doesn’t burn!  I use a digital cooking thermometer near the end of the baking time to make sure the bread is fully cooked. Fully cooked bread will be 190-200 degrees F. Bread recipes that include milk will need to cook until 200 degrees, but since this one doesn’t, I take it out once it reaches 190 degrees. The top will be golden brown.

My all-time favorite cooking thermometer is the Thermapen. It’s super fast and incredibly durable. Another great thermometer is the ThermoPop which is a more basic version that works just as well!

Step 9: Cool the Bread

Let the bread cool in the pan it cooked in so it can maintain it’s shape. Once it’s cooled you can transfer it to a cooling rack.

I prefer to cool it for at least 20 minutes. If you try and slice it while it’s too hot, the loaf will get smashed- it’s a soft bread!

Quick Breads 

How long does it take to bake quick bread?

A regular 8-9″ loaf pan of quick bread will typically bake in about 55-60 minutes. If you like using mini loaf pans, they take 35-40 minutes to bake. If you’d like to adapt these recipes for muffins instead, bake those for 18-20 minutes. Always check for doneness either by measuring the temperature of the bread with a meat thermometer- it should read 200 degrees F- or by inserting a toothpick in the center and having it come out clean.

Did your quick bread sink in the middle?

This happens to me occasionally too! Often it’s because I’ve over mixed the batter. Quick bread (referring to a bread recipe that doesn’t use yeast) does not like to be stirred too much, so try to just barely mix all the ingredients together. Another culprit could be overfilling the pan. The bread pan should be only half full each time. You can make 2 loaves of bread, or you can make 1 loaf of bread and 3 mini loaves… or 6 mini loaves. As always, make sure your baking soda isn’t too old- it should only be on your shelf for 6-9 months before purchasing new.

Can you freeze Quick Bread?

Yes! You will want to cool your quick bread completely before wrapping and freezing. I like to first wrap my bread tightly in plastic wrap, then place it in a freezer ziplock bag. If I’m freezing mini loaves, I can usually fit 4 or 5 in a gallon sized bag. Your bread loaves and can be thawed completely at room temperature.

Can you refreeze bread that has already been frozen?

While it is safe to freeze and re-thaw bread, we don’t recommend it because it will affect the texture of the bread. If you need to do it anyway, toasting the bread when you are finally ready to eat it will help.

HOMEMADE BUTTERMILK BREAD

Buttermilk Bread baked fresh in your kitchen with this easy recipe! Buttermilk Bread is soft and has incredible flavor. Simple bread recipe that everyone loves.

Ingredients

  • 1 1/2 cups buttermilk*
  • 2 TBSP melted butter
  • 2 TBSP sugar
  • 1 tsp salt
  • 3 1/2 cups all-purpose or bread flour
  • 1 TBSP yeast

Instructions

  • Combine buttermilk, butter, and sugar in a mixing bowl. In a separate bowl, combine dry ingredients, including yeast. Whisk dry ingredients together to combine, then add to buttermilk mixture in the mixing bowl. (I use a Kitchenaid Mixer.) Mix ingredients until well combined. I like about a quarter sized amount of dough to be sticking on the very bottom. If your dough looks a bit dry, add in another splash of buttermilk. Once you’ve achieved a good consistency, mix the dough on low for about 6-7 minutes. (Or knead by hand about 10 minutes.) Proper kneading is critical to great textured homemade bread!

  • Once dough is done kneading, cover and let rise in a warm place for about 1 hour; until dough has doubled in size.

  • Punch dough down and knead several times. Shape dough (I like to roll mine, then tuck the ends under) and place in a greased bread loaf pan. Place dough back in the warm spot and let it rise for another 30-45 minutes.

  • Preheat the oven to 350 degrees F. Bake dough for about 30-35 minutes- until top is golden brown. Let cool and slice.

  • *You can substitute regular milk + lemon juice for buttermilk, but you won’t quite get the full texture and flavor of this bread. So add buttermilk to the grocery list; you’ll love it!

Notes

Yes you can make this recipe in a bread machine! No changes needed either. Add the ingredients to your bread machine pan in the order listed above. Before you add in the yeast, make a small well in the flour and place it there. I used the “Basic White Bread” setting with a light crust. 

 Yeast Breads

If you have never baked homemade bread before, here are a few tips:

  • Remember to fully knead. Many of the recipes below knead for at least 7 minutes and it’s worth it! Kneading dough helps to develop the flavor and texture of the bread, so don’t skimp on kneading time.
  • Weather can affect your ingredients. If you live in a moist climate, chances are you’ll need at least the recommended amount of flour, maybe even 1/4 cup to 1/2 cup more. Bread dough should be sticky, but still manageable, especially after the first rise. While you’re kneading, the dough should come together and pull away from the sides of the bowl, leaving the bowl mostly clean. (I try not to add too much flour because your bread will be more dense.) When you pick the dough up, some will stick to your fingers. After the first rise, it will be easier to handle!
  • If your house is cool, your bread will take longer to rise. In the wintertime when my house is cooler than normal, I like to turn the oven on for 2-3 minutes, then turn it off and let the bowl of dough rise in there. The oven traps the heat for a longtime and it’s the perfect atmosphere for rising dough.
  • After the first rise, don’t overwork the dough. I usually knead and shape my dough in about 1 minute, then it’s back in the pan to rest, for the 2nd rise. I like to have the pan rise in the oven for this second rise so that I don’t have to worry about moving risen dough. When it’s fully risen, I just turn the oven on and set the timer to bake!
  • How can you tell if bread is fully baked? I like to use a food thermometer. Mine is digital, so it’s very easy to use. Fully cooked bread will be 190-200 degrees F. Bread recipes that include milk will need to cook until 200 degrees, but since this one doesn’t, I take it out once it reaches 190 degrees. The top will be golden brown.
  • Cool baked bread in the pan for 10-15 minutes, then overturn pan and turn loaf out onto a cooling rack or folded towel to finish cooling. If you leave the bread in the pan for much longer than that, you’ll steam it, which may result in soggy parts. No one likes soggy bread!

Muffins, Rolls, and Other Bread Recipes

Here are some tips on making the BEST muffins ever:

  • Do not over mix! Just like with bread, muffin batter should be stirred just to combine the ingredients. There’s no need to use an electric mixer of any sort, a mixing bowl and a rubber scraper work just fine!
  • You an use muffin liners for these recipes, or if you prefer not, be sure to spray your muffin tin with non-stick spray that includes flour. This spray is specifically for baked goods and works so well! Never have your baked muffins stick to the pan again!
  • A large ice cream scoop with a lever works perfectly for measuring out regular sized muffins like these! Want to use a mini muffin tin? No problem- the small scoop works perfect for those.
  • Want a more rounded muffin top? Increase the oven temperature by 50 degrees for the first 3-4 minutes, then decrease it as per the recipe’s instructions and bake for the remaining time.
