Typical of Anglo-Saxon countries, the Banana Bread it is a soft and fragrant plumcake. A perfect banana bread for a tasty breakfast or snack zero waste.

Do you have overripe bananas at home and are you thinking of throwing them away? Stop! Try my banana bread recipe: it will amaze you.

I love this one anti-waste recipe and from food storage which can be prepared with a few common ingredients that we always have at home, recovering bananas, which often blacken all together before we can consume them all.

But I have to warn you, the procedure is unorthodox, born out of necessity, or rather, due to lack of time. In fact, to prepare the dough, I use a food processor, with which I blend the ingredients several times, which I add a little at a time.

The traditional banana bread recipe involves the separate preparation of some ingredients, then assembled in a bowl at the end. Even if it is not exactly the classic procedure, the result is truly appreciable, as is the saving in time, preparation and washing.

For this quick version of banana bread, I used my usual multifunction robot that you often glimpse in my live broadcasts and in my video recipes*.

The spicy touch of my banana bread: cinnamon

To make the dough even more special and fragrant, I added some ground cinnamon. A spice that, I don’t know about you, but immediately makes me feel comfortable and pampered. In fact, cinnamon, cinnamomum verum, is a small evergreen plant of the same family as laurel and its dried bark is part of the aromatic group of sweet and warming spices. Therefore perfect for intense and winter blends.

Regarding cinnamon, I’ll leave you with some purchasing advice to make your banana bread, also including cinnamon flowers, which look very similar to cloves and recall their scent.

Ingredients




Quantity for 6 people – one 22cm mould

  • 300 g of ’00 flour
  • 1 whole egg
  • 150g of granulated sugar
  • 110 g of cold butter (which you can replace with 80 ml of seed oil)
  • 1/2 sachet of baking powder
  • vanilla (1 sachet or 1 tablespoon of extract)
  • 1 pinch of salt
  • 300g of jam of your choice

Method

How to make crumbled jam

First of all, combine flour, sifted yeast, salt, sugar, vanilla, egg and cold butter in pieces or oil in a bowl.

Then crumble the mixture with your hands until you obtain many large crumbs.

Then line a cake pan with baking paper and divide the crumb mixture in half.

Place one part in the fridge (only if you made it with butter) add the other to the pan, compacting the bottom and edges very well, until you create a shell:how to make jam crumble

Finally add the jam previously mixed with a spoon and level well.

Then add the rest of the crumbled dough on top, crumbling a little more.

At this point, cook in a preheated static oven at 180° in the central part of the oven for approximately 30 minutes.

After the indicated time, remove from the oven and leave to rest in the pan for 10 minutes.

Then remove from the mold and leave to cool completely for at least 3 – 4 hours

There Sriracha mayo is a creamy and spicy sauce, perfect for adding a touch of heat to your sandwiches, burgers, salads and much more.

I really love it in sandwiches, like mine Banh mi of meat, but I advise you to combine the mayonnaise with Sriracha also with fish, it will surprise you! Or it is perfect to serve at the table combined with meatballs or nuggets, even vegetarian ones, like mine cannellini bean nuggets.

To make Sriracha mayonnaise… you need the right sauce!

Sriracha is a sauce based on red chili peppers, garlic, vinegar, sugar and salt of Thai origins but now widespread throughout the world. Her name actually comes from the coastal town of Si Racha, where she was born.

This spicy sauce is loved for its unique flavor, which combines the heat of chili peppers with the sweetness of sugar and the aromatic touch of garlic. It’s a versatile seasoning that pairs perfectly with a wide range of dishes, from Asian to Mexican and even Western meat and seafood dishes. I buy mine on Amazon, here*.

And with the addition of mayonnaise, Sriracha sauce becomes truly delicious.

Vegan and lactose-free Sriracha mayonnaise

If you have intolerance problems or want to make a vegan version of Sriracha mayonnaise, then you can replace traditional mayonnaise with a vegan mayonnaise, available in many shops.

Or you can easily prepare it at home using a vegetable drink (50 ml) emulsified with seed oil (150 ml) and apple cider vinegar (1 tablespoon). Once you have a creamy consistency you can add Sriracha sauce, salt and pepper according to your personal taste.

But let’s get to the classic mayonnaise recipe with the hot addition of our Sriracha sauce.
