Pan Asian Lettuce Wraps & Citizen Chef GIVEAWAY!

I love lettuce wraps. They are so fresh and crunchy, and the options are endless when it comes to choosing what ingredients you want to add in. I am still adjusting to my new full-time work schedule, so it has been important for me to find ways to cut down cooking time when I get home at night after a long day. At the same time, I don’t want to start eating a lot of unhealthy packaged foods to save time.

Ingredients
  • 4 organic, free-range chicken breast tenders
  • 2 tbsp canola oil
  • 1 cup chopped organic cucumber
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • ½ cup slivered almonds
  • 1 package Citizen Chef Pan Asian Orange simmer sauce
  • Iceberg lettuce
Instructions
  1. Heat oil in a large skillet over medium heat.
  2. Chop chicken breast tenders, carrots, and celery into small pieces, and add to the skillet. Simmer for 7 minutes.
  3. Add slivered almonds and simmer sauce. Stir well.
  4. Simmer for an additional 10 minutes.
  5. Add chopped cucumbers and stir well. Remove from heat.
  6. Rinse and peel lettuce apart, forming lettuce cups for the filling.
  7. Top the pieces of lettuce with the filling and serve immediately.

MINI WEDGE PARTY SALADS

I was inspired by this recipe, & whipped these up last weekend! I’m not sure why I’ve never thought of this before! We all know I’m a fan of spicing up boring ol’ salads, and this one can be done in pretty much any variation, as long as you have a good, crisp head of iceberg lettuce.

Mini Wedge Party Salads

Iceberg lettuce (cold, cut into wedges)

Top with:
(Anything!) Mine were topped with tomatoes, cucumbers, peppers, hard-boiled eggs, bacon, cheese, and homemade ranch dressing- and if you drizzle a little dressing first, it helps the toppings hang on.

Chill in the fridge until ready to serve.

Note: Have napkins on hand- they can be a little tipsy when you serve them, but this is a perfect way to bring something “healthier” to a party, or to entice your kids to eat their veggies!
