Hello friends! I hope you’re having a great summer so far. I have a few more summertime recipes I need to share before I start in on my fall lineup and this is one of them! Lemon Icebox Cake is creamy, dreamy, citrusy, and fresh. This cool dessert is perfect at the end of a hot summer day and a great weekend treat. I just love lemon desserts because they taste like sunshine and joy!

So if you need a little extra joy today, I hope you’ll print this one off to try. 

Lemon Icebox Cake

Ingredients

  • 8 oz pkg cream cheese
  • 3.4 ounce instant vanilla pudding
  • ¾ cup milk
  • Juice of 1 Lemon
  • zest of 1 lemon save a little to sprinkle on top
  • 1.5 cups whipped topping or homemade whipped cream
  • About 25 Vanilla Wafer Cookies

Instructions

  • To make cream cheese pudding mixture:

  • Place cream cheese in a mixing bowl and beat with an electric mixer until fluffy (a minute or so). Add in pudding mix, milk, lemon juice, and lemon zest and beat until well combined, about two minutes.

  • Add in 1/2 cup whipped topping and beat again until incorporated.

  • Place a layer of cookies in the bottom of a standard sized loaf pan (about ten or so).

  • Spread half of the cream cheese mixture on top of this and spread the remaining cream cheese mixture on top of the second layer of cookies.

  • Top with remaining whipped topping and sprinkle with lemon zest. Refrigerate for several hours or overnight to allow the cookies to soften. Enjoy!

What is an icebox pie?

An icebox pie is (as you could probably guess) a pie that is kept and stored in the freezer. Typically these pies are made with only a handful of ingredients usually including whipped topping as part of the pie base.

I really like freezer pies for a few reasons. First, if they are kept in the freezer, they can be made a head of time and will stay fresh for a couple weeks. Second, not much is more refreshing than a slice of freezer pie after being out in the sun all day long. (I know, it’s February. A girl can dream of sunshine though, right?)

In my opinion, this Lemon Cream Pie takes home the gold medal for both easy and delicious. That isn’t even the best news.. the flavor options are unlimited. Yes, you heard me right!

How can I change the flavor of my icebox pie?

In a lot of icebox pie recipes, frozen drink concentrate is used. For instance, frozen lemonade concentrate or orange juice concentrate. This recipe uses powdered drink mix (like crystal light). How many options did you debate between the last time you were at the grocery store?

The options are endless!

I am so excited to give this a try with raspberry or peach drink mixes!

How to make Icebox Lemon Pie

Making a freezer pie like this Icebox Lemon Pie is extremely easy. First thing you will do is stir an entire drink mix packet and can of sweetened condensed milk together. Like mentioned above, if lemonade isn’t your thing, you can substitute for any flavor of drink mix.

This is the large drink mix packet (the kind to make 2 quarts of lemonade) not the single serving packets.

Stir until completely combined. The mixture should not be gritty at all.

Next, fold in 4 oz of whipped topping. (pssst. that is 1/2 of a regular sized container!)

Once the mixture is completely combined, spread it in the bottom of a graham cracker pie crust. You can certainly make your own here, but I prefer to buy a store-bought one to keep this pie as simple and fast as possible.

Top the pie with the remains 4 oz of whipped topping and freeze for at least 2 hours before serving.

Can whipping cream substitute whipped topping?

Yes, you can use real whipped cream instead of the whipped topping. To make whipped cream, just whisk 1.5 cup heavy whipping cream + 1/2 tsp vanilla + 1/4 cup powdered sugar together vigorously for about 3-5 minutes, until stiff peaks form. It’s easiest if you use an electric stand mixer or handheld mixer. Then proceed with the recipe as directed.

–1 (14 oz) can sweetened condensed milk

–1 pkg powdered lemonade drink mix enough to make 2 quarts of lemonade

–8 oz cool whip thawed, divided
