Jello desserts have been around for decades and they’re still just as popular as back then because there’s always room for jello.

What are strawberry jello parfaits?

A parfait is a dessert consisting of layers of fresh fruit and other things. These layered jello cups combine layers of strawberry flavored jello and a homemade jello mousse. Set at an angle in the cup, these fancy jello desserts look like something you’d get from a restaurant, but thankfully they come from your own kitchen, so you can always go back and grab another.

-Jello: We need 3 packages of strawberry Jello (the 3 ounce sized boxes). We’ll also need the water the packages request as we will be making them according to package directions.

-Heavy Whipping Cream: We need 2 cups of cold heavy whipping cream (about 1 pint). The colder the better, as it stiffens up more quickly when it’s cold.

-Strawberries: We need 1 cup of fresh chopped strawberries to fold into the jello for a tasty treat.

-Garnishes: this is where you can get extra fancy. You can use additional whipped cream, fresh mint, or more strawberries for garnishes!

Set 8 cups in a muffin tin, diagonally, so that they are resting at an angle. Then set the pan and cups aside for later.

Wash and chop your strawberries into small pieces.

Prepare 2 boxes of the strawberry jello according to the package directions.

Add the chopped strawberries into the jello. Pour the jello into each glass, keeping the cups at an angle, then carefully transfer the muffin tray to the fridge. Let the jello chill for at least an hour to set.

Ingredients

  • 3 pkgs (3 oz. each) Strawberry Jello
  • 2 cups heavy whipping cream, cold
  • 1 cup strawberries

Optional Garnishes:

  • whipped cream
  • fresh mint
  • strawberries

Instructions

  • Prepare a muffin tin. Set 8 glasses on the diagonal in the cups. Set aside.

  • Chop the strawberries.

  • Prepare 2 boxes of the Jell-o according to package directions.

  • Add the chopped strawberries to Jell-o. Pour the mixture into each glass. Keeping the glasses in position, slowly lift the tray and transfer to the fridge. Chill for at least 1 hour to set.

  • Once the Jello has set, prepare the last box of Jello. Let the Jello cool while you whip the heavy cream until stiff peaks. 

  • Once the Jello has begun to thicken, Fold the Jello into the whipped cream. Pour the mixture evenly over the Jello layer in each cup.

  • Place in the fridge and allow to set completely, about 3 hours.

  • If desired, garnish with whipped cream, fresh mint and top with a strawberry half.

Yes, instead of making homemade whipped cream, you can use thawed cool whip for a similar (and easier) effect.

Can I make jello parfaits with raspberries?

Absolutely! Raspberries are another popular valentine fruit and you can easily swap out the fresh strawberries and strawberry jello for raspberry jello and fresh raspberries too. The parfaits should have more of a sour/tangy thing going on than with the strawberries, so it should be a great alternative for those wanting something not too sweet.

While I have not tried this exact recipe with sugar free jello, I can’t see any reason why it wouldn’t work out. Go ahead and try it out and let me know in the comments how good it tastes because I’m curious now too!

If you want to make this jello parfait dairy free then I recommend swapping out the heavy whipping cream for a dairy free whipped topping alternative. There are coconut milk whipped toppings in the freezer section of grocery stores that would work wonderfully with this particular recipe. Just thaw it and fold in the jello as you would for the homemade whipped cream and continue the recipe as normal. Double check ingredient labels on the jello just to be sure that they’re dairy free as well.

Making this jello poke cake is so easy to do, but looks so fancy that no one will ever guess how simple it is to make. Red and green jello make this cake perfect for Christmas, but you can use any colors you want and make this cake for any occasion!

WHAT IS A JELLO POKE CAKE?

A poke cake is a cake that is poked with the back end of a wooden spoon or tines of a fork before having jello or pudding poured and spread over the top. Topped off with whipped topping and other ingredients a poke cake is easy to assemble, moist, flavorful, and fun to both make and eat. This particular cake uses red and green jello which adds a lot of flavor and makes the cake very festive for Christmas!

Ingredients in Christmas Jello Poke Cake

White cake mix – Add the eggs, oil and water as directed on the box. Divide the batter between 2 round pans and bake according to box directions.

Boiling water – Used to dissolve and mix the Jello.

Red Jello – You will need one small box (4 ounces) of red Jello. You can use any red flavor you want – raspberry, cherry or strawberry.

Green jello – One small (4 ounce) box of lime jello. That’s the only green flavor I can usually find, although sometimes there are unique flavors like green apple that are available as well.

Cool Whip – Non-dairy whipped topping that is light and delicious and makes for the easiest topping ever! If you don’t like Cool Whip or can’t find it, you can make a sweetened whipped cream to use instead. I use a large 16 ounce container of Cool Whip, but if you don’t want the topping to be as thick, you don’t have to use it all!

How to make Christmas Jello Poke Cake

Make sure to use a non-stick baking spray and coat the cake pans well when you make your cakes. Make the cake mix as directed and bake in 2 round pans (8″ or 9″).

Once cakes are cooled, remove them from the pans they were baked in and completely wash and dry the pans before putting the cakes back into the pans. Pierce each cake with a large fork at 1/2 inch intervals.

Place the red and green jello mixes in separate bowls and add 1 cup boiling water to each flavor. Stir each for about 2 minutes or until jello is completely dissolved. Slowly pull the red gelatin over 1 cake layer and pour the green jello over the other cake. Refrigerate the cakes in the pans for at least 3 hours.

Fill a large bowl or your kitchen sink with a few inches of really warm water. Place the bottom of the cake pan in the warm water for about 10-20 seconds to loosen the cake from the pan and invert the cake onto a plate. Spread about 1 cup of the Cool Whip on top of one of the layers and then place the other one on top. Spread the remaining Cool Whip all over the top and sides of the layered cake.

Refrigerate for at least an hour before serving. (Can add some sprinkles or any type of decoration to the top).

How to make homemade whipped cream

Beat 2 cups of heavy cream with an electric mixer until stiff peaks form. This goes a lot faster if you use a metal bowl that has been placed in the freezer for at least 30-60 minutes before beating the cream. Add 1/2 cup powdered sugar and 1 tsp vanilla extract and mix for another minute before using.

HOW LONG IS A POKE CAKE GOOD FOR?

A poke cake lasts about 2 days covered in the fridge. For that reason, I recommend not making this cake more than a day in advance so that it’s still looking and tasting great when you want to serve it.

CAN I FREEZE A POKE CAKE?

Yes, poke cakes are great for freezing for later if you want to prep them in advance. I recommend waiting until after the pudding/jello has set before placing them in the freezer (well wrapped and covered of course). This will help to reduce time later because you just need to thaw and top with some whipped topping. (Don’t cover with topping before freezing the cakes.)

Poke cakes became more popular a few years back so if you haven’t tried one, consider this a sign from the universe! They are not only so easy to throw together, the colors and flavors just simply can’t be beat!

Jello poke cakes are made by first having a base cake, classically vanilla but chocolate could work well, too! Once the cake has cooled, holes are poked into the cake with a fork before pouring unset jello onto the cake. The jello then sets in the fridge within the cake prior to serving. This gives the cake nice bursts of flavor!

You can use any jello flavor you’d like, my personal favorite is raspberry, though.

What is in Raspberry Jello Poke Cake?

  • White Cake: This can be a from-scratch white cake, a boxed cake mix that you’ve made or even a totally store bought white cake! As long as you have your favorite white cake (baked and cooled!), you are golden!
  • Raspberry Jello: you’ll need a little 3 oz package. Feel free to use sugar free if you’d like. You will need to mix up the jello according to package directions, so you’ll also need water.
  • Whipped Topping: frozen whipped topping or fresh whipped cream will be perfect to top this cake!
  • Raspberries: for garnish and only if you really want to. 😉

How long does my Poke Cake need to set for?

Typically you’ll want to let your jello and cake set for a good 3-4 hours prior to serving. This is perfect if you want to quickly get making the cake out of the way before focusing on your meal. If you are in a time crunch though, you can pop it in the freezer for 30 minutes to help quickly set the Jello. Just make sure to set a timer, because we just want the jello to set, not freeze the whole cake!

Yes, yes, YES!! Have a favorite? Use it!! I am all about getting creative in the kitchen! I think using orange jello mix to make a creamsicle type cake would be ta-die-for. I’m also wanting to play around with a chocolate cake with raspberry Jello mix. Doesn’t that just sound incredible? This method can be used in endless variations!

Does Jello Poke cake need to be refrigerated?

Yes, this does need to be stored in the fridge. The jello and the whipped topping need to be stored in the refrigerator so they don’t spoil. Cover tightly with plastic wrap and store in the fridge for up to 4 days. You can freeze the cake in individual pieces, if desired.

  • 3 oz box raspberry jello mixed according to package directions
  • 8 oz frozen whipped topping

  • Bake the white cake mix according to package directions in a 9×13 pan. Allow the cake to cool compltely.

  • Using a fork, poke holes into the cake about 1/2 inch apart from each other, all over the cake.

  • Mix up the raspberry Jello according to package directions. Spoon the jello over the cake, allowing the raspberry jello to soak into the cake.

  • Refriegerate the cake or 3-4 hours so the jello sets up. Alternitively, place the cake in the freezer for 30 mintues to quickly set the jello.

  • Spread the whipped topping onto the top of the cake and then refrigerate until ready to serve.

Can you use real whipped cream instead of whipped topping?

If you can’t find Cool Whip, which is the brand name of whipped topping where you live or you prefer not to use it in recipes, you can use stabilized whipped cream instead. If you just use regular whipped cream, the consistency will be too light and the cream will not hold up very well after a while on the cake. It’s very simple to make your own stabilized whipped cream and it just takes a few minutes!

To make stabilized whipped cream, you will need the following ingredients:

  • 4 ounces of cream cheese (softened to room temperature)
  • 1/3 cup powdered sugar
  • 1 tsp vanilla
  • 1 cup heavy whipping cream.
  1. Beat the cream cheese with the powdered sugar and vanilla until soft and smooth.
  2. In a separate bowl, beat the whipping cream just until soft peaks form.
  3. Add the cream cheese mixture to the whipped cream and beat until stiff peaks are formed. Store in the refrigerator until ready to use.

A little tip for making whipped cream faster. Use a metal bowl for whipping the cream and place the bowl in the freezer for about 30 minutes before you make the whipped cream. This will significantly decrease the amount of time that you will need to beat the whipped cream – the process will go much faster!
